The snow day has come to a close 🙁
But I did get something fun in the mail from my mom!
I took my laptop up to my bed this afternoon to work. It keeps me warm, and our bedroom is so bright and sunny thanks to a western facing window. I got one of my projects tackled and our intermittent internet fixed by AT&T.
I didn’t really have much of an appetite this afternoon. I started to reach for a snack around 5:00 but then my dad called and we talked for a while and then it was time to make dinner!
Mulligatawny Soup with Chickpeas + Peanuts
The inspiration for this soup came from Body + Soul Magazine, but I can’t find that online! What’s with the magazines not putting their recipes online!
Here’s the gist of it:
- 1 tsp canola oil
- 2 cloves garlic
- Half a large sweet potato, cut into cubes
- 1 carrot, chopped
- Heaping half cup red lentils
- 1 can chickpeas, lightly drained
- ~2.5-3 cups veggie broth
- 1/2 tsp ea. cumin, curry powder, cayenne
- Pinch salt + pepper
- Juice of half a lemon
Sear potato, carrot and garlic in oil. When slightly tender, all everything else. Simmer till you feel like it! (At least 10-15 mins)
Top with some greek yogurt, red pepper flakes and peanuts (my new favorite soup topper)!
Serve with this!!!
Matt made this Sweet Potato Bread as an upgrade from his Potato Buns from last year. SO GOOD!!! Totally doughy and chewy. Kinda like Panera’s baguettes but with better flavor and a softer crumb. Matt also says to tell you all that due to the lower calorie-per-gram of potatoes compared to wheat flour, this bread is low in calories.
Add another hunk to this one – I had some straight out of the oven too!

After dinner he worked on his blog post (the bread) while I took over the kitchen. I was a whirring dervish and cleaned the dishes, the counters, the floors, the living room floor (vacuum), the powder bath mirror + floor. It was a little tough on a full stomach, but I’m sure my gastric juices are gushing now 🙂
All day today I’ve felt like I have class tomorrow and am very confused by the day!
I am now going to take a bath on this cold winter night and get in bed early. I feel like I might be coming down with a cold or something, so I want plenty of sleep. I’ve got an afternoon study + workout date with Victoria so I’ll have to be productive in the AM.

What a fabulous meal! The soup and bread both look delicious! I’m just wondering, is there a particular reason you use canola oil instead of extra virgin olive oil? I have heard mixed opinions about sauteing with olive oil being harmful, do you have a take on this?

Just wanted to let you know that you inspired me to try qunoa this week..I tried a recipe from Cooking Light (Roasted Vegetables and Quinoa, June 2008). They have the recipe online..it is a little labor intensive, but. so. good.

That book should be really helpful. I got the Spain one before I studied abroad. Of course, Spain is a very Western country, but still it was good to know about the different customs/attitudes I’d be encountering when I went over there.

I’ve heard mixed things too – that canola is better for cooking and olive for drizzling due to a higher smoke point. We usually use canola when we’re cooking things that you don’t taste the flavor (soups, sauces) and olive when we’re sauteeing veggies to eat plain, or obviously when we’re not cooking it for salad dressings and such.

Jess, extra-virgin olive oil has a lower smoke point than canola, so if you’re sautéing over a high heat, it has the potential to burn.
