These healthy coconut chocolate truffles are a quick, healthy, and scrumptious portable snack. Mazen, Thomas, and I have been gobbling them up!
I started to name them protein balls, because they do have some protein powder in them, but the texture is more of a chocolate ganache than a protein bar, so I decided to call them truffles instead. The only sweetness comes from dates, which are the base of the recipes, so they can be your everyday real food truffles : ) And don’t they look oh so pretty rolled in chia and coconut?
Add pitted dates to your food processor and blend until a pea-like consistency is formed. It doesn’t take too long. Then toss in the nuts and keep blending.
Put the remaining ingredients into the date and nut mixture, and blend until a sticky ball is formed. Depending on the consistency and type of protein powder you have, you might need to use a little more or less milk. Don’t worry if you add a little too much milk, you can always add more dry ingredients (like oats) to absorb the liquid.
Once you’ve reached the desired consistency where it’s pliable but not too liquid-like, remove the mixture and form into one inch sized balls. You should get about 15 balls out of the recipe.
Pour a combination of chia seeds and coconut flakes onto a plate and roll them around until they’re fully coated. Store them in the fridge, and they should last up to a week. Warning: you will get chia seeds in your teeth when you eat these!

I’m going to make these and store them in the freezer for when baby comes. I can snack on them then! Thanks for the recipe.

How long till baby comes?! Congtatulations! I hope you’d still be craving them because I hear pregnancy can do funny things to taste buds.

I think you’re on the wrong blog, Linda, wth…

I think she’s responding to Kelli’s comment (directly above hers).

I made a bunch of snack balls back in August when I was pregnant and froze them for late night nursing sessions. These were the best ones I made. I just made another double batch. One fore me and one for a new mother down the street. Hope she likes them as much as I do.

these remind me of Larabars! Just prettier (and so much cheaper because made at home)

Looks delicious! I bet using coconut milk in this would be super good!
Katie says
Those look and sound SO delicious! I love a simple and delicious treat!

These look so good! We have peanut and tree nut allergies here – do you think sunflower seeds would work as a substitute for the nuts? Also, is the protein powder necessary, or can that be omitted? Thanks!
KathEats says
It would change the taste and texture a bit but I think it would be easy enough to adjust the oats and sunflowers to get the right texture.
Justine Platt says
I made these using sunflower seeds instead of the nuts as my daughter goes to a nut-free school. They are a huge hit and super delicious! We didn’t make any other adjustments other than omitting the chia seeds on the outside.
KathEats says
Yay thanks for the feedback!! I might make them with sunflowers for school too! Hope you are well : )

Let’s brain-storm some more nut-free lunch ideas sometime. Your post came at the perfect time when we were needing some new ideas. We’re trying all sorts of new foods over here if you’d like to join in the fun! 🙂

I love chocolate and coconut and these are so beautifully presented and I bet they’re delicious! I was curious about the nutritional information so I plugged the recipe into a calorie counting website and it comes out to 180 calories per ball, 10 g of fat and 11 g of sugar. I think I’ll save these for special treats only.

Thanks for figuring it out! I was reading the comments hoping that someone had done this.
ALK says
Is that a Cuisinart food processor?? I’ve been waiting FOR-EV-ER for my blade to come back after their recall!
KathEats says
Yes. Were they all on recall? Mine is pretty old
ALK says
Not all of them! The s-shaped blade on some models had rivets that were cracking with some folks being injured. Our s-shaped blade had cracked at all 4 rivets. Luckily no injuries for us! Here’s the link to cuisinarts page:https://www.cnet.com/how-to/cuisinart-recall-how-to-return-your-food-processor/
