Lots of fun snacks at work today!! Occasionally I have a bite of a treat that someone brought in without sharing with you guys. I had to share these beautiful jam-filled cookies I sampled after lunch. They tasted like a delicious pop-tart!
So glad I skipped my workout today. STILL ran out of time, but made excellent progress on my closet!!
I had a half a banana topped with CVSB for snack. I loved eating the banana cold, as it had been in my fridge. It was so refreshing!!
Got a chip on your shoulder!?
How about a mountain of them!?!
While I packed, Matt put together a quick dinner. I told him to "do something with the kale. Chips would be preferred." He made kale chips!!! And very proudly came up to me in my closet and said "We EACH get a whole pan of ’em!!" It was a MOUNTAIN of kale!!
Plus Food Should Taste Good Sweet Potato chips on the side for dipping into…..
Sardine + Tuna Salad!
Mixed with cucumber, carrot, jalapeno, pepper, mustard and mayo.
It was an awesome dinner! I shared my last bit with Matt – too much to eat!
We also sampled a mead he made a long time ago. We agreed it tasted like flat Mountain Dew with vodka in it 😉 But I still drank half my glass! It actually went well with the dinner.
His sardines turned into a mixing bowl salad with a huuuge pile of kale!
Crunch!!
Look at this hilarious bear photo from College Humor!
And speaking of bears….read this hilarious, actual, SERIOUS conversation between my husband and my mother that occurred this afternoon regarding our 3 bears who are visiting with their grandmother:
[Me = Matt]
Running late, per usual. See ya tom!

That IS a mound of Kale! Wow! Looks good and healthy. I used to eat a ton of Kale growing up and being Portuguese, I thought it was a Portuguese food because my mom made it ALL the time. I have yet to make my own Kale chips.

Also that cookie looks fantastic. Nice and doughy and soft!
Wei-Wei says
Woah, AWESOME DINNER! Chips make me happy 😀 But would you believe I’ve never had kale before, let alone kale CHIPS? There is such a thing as Chinese kale, though. I don’t think it’ll work with chips 🙁 But have you tried spinach chips? Apparently they’re awesome too 😀
Wei-Wei
Kath says
I didn’t know spinach chips worked!! Have you tried them?

That conversation made me laugh! I saw an event at the zoo that Matt might want to suggest to your mom–a teddy bear check-up! He may already have had one, since he just got back from camp and all. 🙂

Marissa says
Aww, so cute! I love baby bears. And that’s a mound of kale! That reminds me, I need to go to Walmart and pick up some kale for my bunny rabbit… he’s not eating much lately and kale’s his favorite.
Mom says
Shannon,
The bears did have checkups, but we’ll keep this in mind for next year. The Bearatrician charged a chunk! This will save on checkups and help us put more money in their college fund. Thanks!
Kelly says
Hilarious Kath! It just so happens that Brad and I have the same conversation about our dog – usually about what he did during the day while we were gone or about how he’s going to Harvard some day b/c he’s so smart.
You can do the same when you get a dog! 😉 The fun part about a dog is that they’ll actually look at you like the understand what you’re saying when you ask them about their day. 🙂
Melissa @ HerGreenLife says
I finally made the kale chips a few weeks ago after reading about them here and at The Front Burner. Yum! After my first attempt, I attended a talk by Colin Beavan (aka No Impact Man), who was visiting St. Louis, and Whole Foods was there serving samples of kale chips. The women serving them had to explain the concept to most people, but I was already in the know, thanks to KERF 🙂
Callie says
Haha. The bears always make me laugh. 🙂
I’m thinking of having kale chips for dinner. They look so good!
Rachelle says
I really wish I could actually eat any kind of fish. I choked on a fish bone as a small kid, and it must have been really traumatic b/c I can’t stand fish smell or fish taste. Wish I could get over that. How does the kale taste??
We’ve fermented mead too, I can’t say I’ve ever been too fond of any that we’ve made. Tastes to “menthol-y” to me, but my hubby likes it ok (and holy man, is it loaded at 14% alcohol!).
Mastering Public Health says
I had a fish bone, from a fillet/patty, lodged in my throat as a teenager. It was a nightmare. Traumatic, indeed. Friends laugh, but I avoid all fish!
Rachelle says
I wouldn’t laugh, I know exactly what you mean!!!
Paige (Running Around Normal) says
Love kale chips, but haven’t had them in a minute!
omg that convo…..LOL wow!
