I had a great time in school this morning!
The kiddos in Mrs. Hanson’s first grade class were lots of fun.
Today’s lesson was all about soup recipes! We learned about the parts of a recipe and a little about how to create one. They are making a soup recipe collection cookbook!
The kids had a few minutes to peruse the classroom collection of cookbooks
Hello to everyone in Mrs Hanson’s class!!
[They read the blog on occasion!]
And then we built a recipe for Chicken Noodle Soup using Mrs. Hanson’s template and cards
The lesson ended with a little dancing and freestyle writing – recipe writing was encouraged!
Oh, and can’t forget to mention the fun fresh fruit snack they were munching on when I arrived! So happy to see Virginia also has fresh fruit + veggie programs. Being back in the school brought back all the memories of my dietetic internship at Salisbury Schools last winter!
When I left school, it was snowing!!
I drove home and had a quick snack – two dates dipped in PB (my new favorite snack!) before I headed downtown to noontime BodyPump. No biking today – the car was already warm and the snow was wet!
BodyPump was great, and I ended my workout with 26 minutes on the Stairmaster.
Lunch was fast and furious!
Lucky for me, Matt had hard-boiled some eggins while I was gone and we turned them into egg salad.
The egg salad was made with 3 hard-boiled eggs, 1 tbsp mayo, chopped pepper, 1 huge tbsp dijon mustard and smoked paprika (!!)
Served over romaine, sprouts and topped with smoked cheddar. Also some Cherry Balsamic was involved!
Deliciousness on the side:
Moose water
Thumbnail biscotti for dessert!
After disabling ALL programs on my computer – including uninstalling and reinstalling a few – I think the problem might be with my wireless adapter. I finally plugged in the hard wire (and now have a wire going across my living room) and the problem seems to be fixed for the moment. [My internet has been going in and out intermittently for days and my computer seems to be the only one affected.] Hoping Matt knows how to order a new wireless card – not sure I can handle these internet cords in the living space! Better Homes & Gardens would not approve!
Afternoon work beckons – lots of bakery stuff to do!
Valerie @ City|Life|Eats says
That egg salad looks scrumptious!
Averie (LoveVeggiesAndYoga) says
fresh fruit + veggie programs = that’s wonderful!! I think that is SUCH an awesome thing!
Sorry about your continued internet drama. I find that sometimes different computers pick up the signals differently so even tho Matt’s computer may not be affected, yours could be, and vice versa. We have gone thru sooooo many wireless routers and various adapters b/c it seems they will work for awhile, then just go on the fritz! For a hundred bucks getting a new linksys box is always what I end up doing. Sucks, but it’s true.
Hope yours gets fixed soon…and in the meantime, the egg salad looks awesome 🙂
Melissa @ HerGreenLife says
Mmm, smoked paprika! Such a great way to add flavor to recipes. I’m planning to use some in a black bean soup (speaking of soup recipes!) tonight.
Johanna B says
Love seeing fresh fruit being served to children in school. They didn’t do that back in the day.
Holly @ Couch Potato Athlete says
Too bad about the computer — similar thing happened to us — we had a hard wire going from the kitchen (where my PC is) all the way down to the basement — the wireless just would not work. No idea what Jason did but it worked and now I have no more cords! I feel your pain.
The recipe making stuff in that school is beyond cute!!!
Kate says
Have you tried reinstalling or enabling the wireless driver?
KathEats says
I have not tried reinstalling it…could you tell briefly how to do that? I’m pretty savvy – just have to know where to look
Jessica @ How Sweet It Is says
Love that take on egg salad!
Evan Thomas says
I wish my school were that cool. All I remember is reading The Cat In The Hat over and over.
Flourchild says
How fun for the kids, Im sure they really enjoyed you!
Marie@feedingfive says
I’ve taught nutrition classes at my kids school and it is always so fun to hear what the kids have to say about food & health. I do a processed food demonstration starting out with Oats!!!, then instant flavored oats, then cold cereal (w/ oats as an ingredient), granola bars and ending with oatmeal cookies. I discuss whole foods and altering them to make a processed food. I make sure to let them know that not all processed foods are bad, just stay closer to the whole food for the most part. I teach them to read food labels and I always have so much fun with the kids. They always amaze me.
KathEats says
Sounds like a cool lesson!
Estela @ Weekly Bite says
Talking to kids about nutrition is one of my favorite things to do. So glad you enjoyed yourself 🙂
Good luck with your computer. Wish I could help, but I’m clueless when it comes to that stuff.
Stacey says
Aww, it looks like so much fun to go back into a school and teach the kids stuff.
J3nn (Jenn's Menu and Lifestyle Blog) says
I have a whole bag of smoked paprika that I have yet to use!
Wish we made soup recipes in school. 🙂
Christie {Nourishing Eats} says
I think it is so funny that you like smoked paprika so much. I don’t like it at all. I need to send you my leftover bottle I have from Penzy’s.
Annette @ enjoyyourhealthylife says
How great that you get to go show kiddos how to make tasty and healthy soups! How did you get roped into that? 😉 Internet woes are THE worse….esp when your life revolves around it. ha!
KathEats says
Mrs. Hansen is my friend Simmons
Christine says
As a teacher I love the idea of combining literacy with recipes. Some kids may think reading and writing is boring, but everyone loves to eat! I will forever remember making “apple pizzas” in second grade and then recreating it with my mom at home 🙂
Amy @ What Jew Wanna Eat says
What a fun day- I wish I was in that class! And now I have a huge craving for egg salad. I hate mayo (almost as much as you hate onions) so I used Greek yogurt instead.
Heather says
Love the creativity in the classroom!
I haven’t had egg salad in a long time – maybe lunch tomorrow.
Good luck with your work!
Christine says
That’s such a clever way of teaching a recipe! I love it! I know some people way past 1st grade who could use a lesson like that……
😉
Jess (Sweet Potato) says
How fun that you got to hang out at school! I’m so inspired by the fact that 1st graders are learning how to read recipes! Awesome!
Sarena (The Non-Dairy Queen) says
Sounds like a fun afternoon! I think it is great to get kids thinking about this kind of stuff! My kinds love cooking with me, well mostly the youngest one. He actually checks cookbooks out of the school library and reads them. I love it. Have a great afternoon Kath!
Anne @ Baking Me says
What a great classroom project! I think it is essential for kids to learn how to read recipes and cook 🙂
Kierstan @ Life {and running} in Iowa says
More schools need to start incorporating programs like that!
Mom says
I have to say that those first graders must be pretty good readers. Those cookbooks look hard. What a fun visit and what a fun class!
Camille says
What an awesome salad! Yum!
Marisa @ Loser for Life says

I LOVE egg salad!!! Yours looks so good and zesty!
What a fun morning!
Denise @ Do you have that in my size??? says
We used to have lots of problems with internet flakiness until we got our Airport Extreme router – we never have issues anymore. All of our home computers (2 laptops, 1 desktop, and an iPad) are all Apple products, though, so I’m not sure if that contributes to our great experience.
Christine (The Raw Project) says
Sounds like a great class, how fun! Beautiful snow pics and the salad looks great. Sorry about the wireless frustrations, http://gwx.prideindustries.com/pmas/maybe try reinstalling the wireless driver if you’re still having issues.
Courtney @ The Granola Chronicles says
What a great activity for kids. I hope they learned a lot about creating recipes & using REAL food! 🙂
jessa says
Grrr…computer/internet problems can be so aggrevating! One thing that interrupts my wireless internet at home: running the microwave. The microwave runs at about the same wavelength as our wireless internet does, and the signals totally interfere! I’m always a little creeped out by that: I know microwaves are harmless, but if it knocks out my wireless, then what else does it do?
Michelle @ Turning Over a New Leaf says
I spy Addy’s Cookbook!!! I LOVE the American Girl cookbooks! I still use the Kirsten cookbook to make St. Lucia Buns every single year! LOVE IT!
Samantha says
Tell me there were onions in the soup!?!?!?
KathEats says
Actually no! Celery, carrots, chicken, noodles.
Samantha says
Oh so wrong;)
Emily @ Savory and Savage says
Egg salad is one of my lunch time favorites.
Doing the class with the kiddos looked like tons of fun 🙂

Hi Kath! I’m a longtime reader but somehow don’t think I’ve ever commented?!
I used to love egg salad, but at some point decided that I just REALLY do not like mayo- any tips for a mayo-less egg salad?
KathEats says
Thanks for commenting!
The best replacement in the world is greek yogurt!
KathEats says
Or just lots of mustard
lynn @ the actor's diet says
mmmm egg salad! my aunt makes the best one but you wouldn’t approve (it has grated onion)
KathEats says
Definitely not 🙂
Ashley says
Aww, I bet it’s SO rewarding to talk to kids about nutrition. I would love to do that!
Liz @ Tip Top Shape says
That’s so great that schools are serving healthier options. I remember when i was little they didn’t have a ton of healthy options. Not that I really cared! haha I bet my parents did, though.

Parita @ myinnershakti says
It’s so great to hear about kids eating (and enjoying) veggies! How fun that you got to spend time cooking with them. And internet problems are so frustrating. One trick my bf taught me is to type your issue into Google and add forum at the end. Reading forums has helped me solve many a computer problems! 🙂
Cati @ crave and create says
I do hope you read Stone Soup, too–love that children’s book! You may want to try resetting the wireless router or just check with the router company’s tech support–there may be an IP address conflict that needs to be resolved.
KathEats says
we actually already tried replacing the router – no luck 🙁
Chelsea says
Mmmm..egg salad, I should add that to one of my lunch menus this week.

I love the class plan you did with the children!! So great — love the idea of creating the recipe and then them making up their own. I would love to do something similar with the kids I work with. The last time I visited them, I read to them my book, Soup Day (about making soup!), and we made collage soups together. 🙂

wow Kath! I’m so happy you went to a school to help the students learn about healthy meals and cooking! It’s so important for kids to learn about healthy eating at a young age so that they can develop habits for a healthy lifestyle early on. thanks for helping out!

Erin @ Big Girl Feats says
I love, love, love that the teacher encourages recipe writing and they have good foods in their school. So encouraging! I think one of the best things we could teach students (and I speak as an educator working in schools) is good nutrition and healthy cooking skills at a young age.
