Pistachio + Goat Cheese Smothered Chicken
with Low-Country Bulgur
This recipe was so simple, yet it was one of the best ways I’ve had chicken in ages!! I wish I could take the credit, but this one goes out to Robin Miller. She’s sure got the magic touch – I’ve liked tons of her recipes.
In true Robin Miller style, I cooked 4 chicken tenders (they were large) and am morphing the other two for a Mexican salad on Wednesday. (Too bad I couldn’t do the salad tonight for Cinco de Mayo!)
I pretty much followed her recipe to a T – coat chicken with honey mustard, smother with soft goat cheese, top with crushed nuts (these were a mix of pist. and almonds). Bake for 20 minutes covered, bake for another bit uncovered. Because my tenders were smaller, I only baked uncovered for about 4 more minutes. It was fabulous!!
For the bulgur, I defrosted and sauteed some frozen okra with about a cup of chopped fresh bell pepper. I added a dash of Worcestershire sauce, fresh oregano and cider vinegar, then tossed with the cooked bulgur.
It was a little bland, so I garnished with cilantro and brought out the hot sauce!

Disappointing “Scones”
I took a stab at scones today. As I think I’ve said before, I’m very picky about my scones. I like them VERY dry and crumbly to the touch. Anything described as “moist” is not for me. I tried these plain scones from Vegan with a Vengeance and while they were delicious, they were NOT scones! They were like biscuit mini cakes!
I changed the recipe a bit – substituting whole wheat pastry flour for white and Smart Balance for oil. This batch made 4 scones, about 160 calories each.
I think the batter was the best part! I did my share of licking my fingers after patting it out 🙂

We went for a 30 minute walk after dinner and by 8:30 I was starving! Not sure why because my dinner should have been filling enough. So I split one of Meredith’s Watermelon cookies we brought back from the beach with the husband 😉 It was doughy and delicious!

Hey Kath, that chicken looks incredible! I’m working on a scones recipe as well. I always love scones when I have them but I always forget to get them, which is why I want to make them. I can understand being picky with scones, they need to have a certain texture for sure.

Kath stopped calorie counting, as did many others on this board. Some started to find it too restricting, and they wanted to try to not count calories because they feel like they are finally at a place where it is no longer necessary.

I usually only plan 1 week in advance, but sometimes 2. (Warning: Nerd Alert). I actually have a calendar in Google Calendar where I literally schedule meals. Every time I come across a recipe I’m craving, I assign it to a day in the coming week or two so I will remember it when it’s time to make the meal plan and grocery list. And nerdiest part is that the husband subscribed to the calendar so he can see what we’re having for dinner! I LOVE calenders, so this works for me 🙂

Nutr. yeast is very different from cheese. Cheese would make a much chunkier texture I think, and you’d have to use a lot more to melt in into a sauce. I’ve never really made a cheese sauce from real cheese, though, so I don’t know, but I’m sure that the NY queso is lower in calories and fat than a cheese sauce. Check out Wikipedia for more info on it.

Here’s the “announcement post.” I stopped counting because I have maintained my weight loss for a year and suddenly it clicked that I felt confident enough in my eating habits to wean myself from counting at each meal/day and allow the “squiggly line approach” to apply to my whole eating life. I do intend to keep a general ballpark in my head. I realize that some of you liked the calorie counts (because they were often eye opening!) and I will continue to post them for recipes I create (because I think it’s important to know the nutritional info per recipe when cooking so you can balance sides etc. around the main dish). Hope that at least will be helpful.
