Somehow I managed to sleep waaaay too late today! Do you want to know my hypothesis? We set the coffee timer last night (which we don’t normally do) because we made overnight oats, which are ready in an instant. The coffee usually takes 5-7 minutes to brew. The timer was set for 7:45. So I think I subconsciously made myself sleep past the timer. It wouldn’t have been fun to get down there before it went off.
But as a result, I’m now running late on my day!
The overnight oats were pumpkin style and made with a new muesli by Ambrosial
The Mix
Last Night
- 1/3 cup Ambrosial muesli
- 1 tbsp oat bran (to fill in the gaps – liked it!)
- 1 tbsp flax
- 1/3 cup milk
- 2 tbsp yogurt (all I had left)
- 1/2 cup pumpkin
- Pinch salt, splash vanilla, sprinkle cinnamon ( <– important for overnight oats too!)
- Half banana
AM Toppings
- Ambrosial granola
- TJ’s SB drizzle
The programmed coffee seemed to get stronger as it sat on the hot plate! This guy was STRONG!
I must pause to tell you about these Ambrosial products, newly available at OpenSky.
They are the kings of CHEWY. If Galaxy Granola is all about the crunch, then Ambrosial is all about the chew. I am a Queen of Chew!
The chewiness is due to not having any added FAT or SUGAR. And the dried fruit makes them extra chewy – the company says these are 1/3 fruit + seeds. On the left is the granola, on the right is the muesli, which was great for overnight oats! Mixins already involved and no sugar to make it too sweet.

There’s a third to the 3-pack package – Orange, Apricot, Cran, which I have yet to open.
Hi Matt!
Since I’ve already exercised my jaw today, I’m planning to balance it out with a BodyPump class. Sadly it’s raining and I will have to drive there, I think. Otherwise, time to get some bonus posts written!
Tina @ Faith Fitness Fun says
I wish I had slept in today. I wanted to but my husband’s alarm woke me up and I figured I might as well be productive. I didn’t even end up being that productive. Unless you count finishing up a Facebook page for the blog productive. 😉
Anna @ Newlywed, Newly Veg says
Ha– that LOOKS like strong coffee!
I love your bowl!
Halley (Blunder Construction) says
I was slow on the up-start this morning too. Oh well!I really love the pic of your breakfast & the tree. Your living room furniture is a great contrast against all the crazy colors on the tree!
chelsey @ clean eating chelsey says
Yum those look great – are they just wheat free or gluten free as well?
Kath says
Sadly I don’t think they are technically gluten free
Hariclia Anastasia says
Dear Chelsey, all Ambrosial Granola products are wheat-free and all our ingredients are gluten-free by nature. The reason we do not claim gluten-free status is due to the fact that our organic oats, while certified organic (chemical- and GMO-free), are not certified gluten-free. That means there is higher possibility for those oats to carry some glutenin particles due to cross-contamination from other grains during processing. Indeed, measurement of glutenin particles in food is very useful indicator for those suffering from celiac disease. I hope this helps!
Jessica @ How Sweet It Is says
It’s raining here too. Pouring!
Sarena (The Non-Dairy Queen) says
I hate running late! I am oddly on time and calm today…it makes me crazy when things are this calm. Kinda like I am waiting for something to happen.
Angela @ Eat Spin Run Repeat says
Yummmm I love chewiness over crunchiness too so this sounds like it would be great!! I really could have used some extra sleep this morning but unfortunately the gym and work were calling my name. Have a great morning!
Camille says
I just can’t sleep in anymore. I don’t think it’s possible!
I love the photo of Matt in the background 🙂
Allison K says
Every time I see a shot of your Christmas Tree it makes me anxious to get ours up!
Julie @ Honey B. Nutrition says
Looks good. I love muesli, I try to get people to eat that instead of cereal – less processing! Mm coffee… I think we are all having a rough slow start today!
Sarah (Running to Slow Things Down) says
Eating in front of the Christmas tree. I *love* that! 😀
I love a good muesli. Especially with hot milk and sliced bananas. 😀
Natalia - a side of simple says
I think my entire Christmas wish list consists of Open Sky products 🙂
Stacy @ Every Little Thing says
I need to get back on the granola train. Might be my next order from OpenSky!
Amanda (Eating Up) says
I should figure out how to set my coffeepot…I’m sure it’s not hard at all!
Cathy B. @ Bright Bakes says
wow, that some good-lookin granola! (nutrionals and taste-wise) maybe I’ll have to splurge a bit and give myself an early christmas present…. 🙂
love,
cathy b.
Lisa Fine - lisasfoods says
I love muesli. I often make a big jar of it to have available anytime, and I find it works great as an oatmeal too, just by adding some liquid and other fun mix-ins.
Fuzz says
I think I’m going to try overnight oats for the first time tonight. That looks so delicious!
Gabrielle @ Weightless says
Sleeping in sounds lovely. Wish I could do it more often, subconciously or conciously. Somewhere along the way, I think my brain shut off my sleeping-in function. 🙁
Balanced Healthy Life says
I overslept as well and am running late too!!! Don’t you love these days? : )
Balanced Healthy Life says
I overslept as well this morning and am running late! : )
Jil @ Big City, Lil Kitchen says
those sound fabulous!! i love the chew!
Heather (Heather's Dish) says
i think it must be everyone…i overslept and had no time for breakfast at home! leftover green beans it is for this girl’s breakfast 🙂
Nicole says
I overslept this morning as well 🙁 Thought I wanted to get up at 5 am, I guess when I didn’t even hear my alarm and slept until 7 am my body was telling me I desperately needed more sleep!
Allie says
That looks like some STRONG coffee! When I over sleep I just accept it and figure that my body probably needed the extra zzz’s :p
Paige(Running Around Normal) says
oh man..to sleep past 7:45 would be a dream! I don’t think I’ve slept past 7:30 in a long while. 7:30 is my natural wakeup time. 5:30 is my alarm wakeup time!
Lauren at KeepItSweet says
i really wish my gym had Body Pump – i’d love to try it!
Felicia (a taste of health with balance) says
I love chewyness! love that bowl the oats are in too 🙂
Kori says
I completed the OpenSky survey the other day and received my 30% coupon. Soooo I ordered the 3 Ambrosial granola bags a few days ago. I cannot wait to try them!! Thank you!! Have a great [rainy] day!!!
Caitlyn (A Spoonful of Life) says
Body Pump is on my list of gym classes to try. So is zumba :/ That’s going to be embarassing for me!
Enjoy sleeping in while you can. I don’t think my body would allow me to sleep that late. It’s been programmed to get up at o-dark-thirty!
Sarah says
This is funny to say but everytime you eat out of that triangular bowl, it reminds me of my boyfriends cup he had to use for baseball 😉 strange to think about I guess. Have a great day despite a little drizzle!
Christin@purplebirdblog says
I love coffee that’s been sitting in the pot for a while… that sludginess makes it perfect!
Kathleen says
I love apricot granola, its harder to find in my normal stores, good to know about this option. BTW, your “Hi Matt” photo really made me laugh. Super cute!
Amy K. @ onehealthypeanut says
I missed my bus this morning, twice! Its just that kinda day. That coffee looks super strong! Thats how I like it 🙂
Dorry says
I fell in love with muesli while traveling through Europe – I love the dried fruit bits.
Shannon @ A Better Me says
I was dragging this morning too (it’s raining here also). I’ve never tried a BodyPump class. I’ve thought about it but never seem to make it 😉 Have a great day!
Namaste Gurl says
I slept in today, too– and had oats, non- overnight style however. Great minds think alike!
Elina (Russian Bites) says
I set my alarm for 7:30 every morning and it’s a miracle when I get up before like 8:20… and I really SHOULD be at work by 9. I’m always crazy rushed in the am but it evens out by the end 🙂 Oh how I wish I was a morning person…..
Kate says
6:45 is my idea of sleeping in… which is not so great when you have class at 7 🙂
Vanessa says
What’s to do on a rainy day in C’Ville?!
Carolyn @ Lovin' Losing says
I am not much of a morning person so I tend to sleep ’til around 7, getting to work by 8:30 or 8:45. Today I had an orthopaedist appointment, though, so I was up a bit earlier than usual.
Lisa says
I’ve been craving muesli for a while, now. I’ll have to check this one out!
Melissa @ I Never Imagined says
Your oatmeal today looks amaaaazing!
(I say this every day… I have oatmeal envy)
NC says
The oatmeal looks amazing , Kath , my husband I are planning a trip to the wine county in dec ,I know you and Matt had been there , any pointers on what I should see or where I should go . I am looking at visiting a bunch of wineries by ourselves versus the wine tours that are offered . I am not sure which is a good option .. any thoughts? . I was looking to get more info from you , but could not find your email to send a mail 🙁 .
Kath says
Are you going to Napa or Sonoma (or both?)
If Sonoma, I’d highly recommend the Russian River – particularly West Side Road – wines. I just LOVE them all!

Strong coffee + chewy granola = perfection. Does a girl need anything more in this life (at least before 9 am?) I think not.
deborah says
I love overnight oatmeal, yet yours looks 100 times better than mine. Hm. I can see I’ll need to borrow some moves.
We love Cville and visit every August. I love the Children’s Museum, the gelato place, the Twisted Branch, the big chalboard, and the tiny carousel.
What are your favorite restaurants there?
Best,
Debroah
Kath says
Check the Cville page!
Mauimandy@Thegrainsofparadise says
I just love museli! I ate it almost daily in Australia with thick Greek yogurt and honey. I think it gets overlooked a bit in the U.S. unfortunately. Thanks for sharing:)
Maddie (Healthy Maddie) says
I have yet to try muesli but it looks great! Sometimes it’s nice to sleep in a little!
Stephanie Hunsaker says
I just wanted to tell you how much I LOVE your site. I check it for breakfast, lunch, and dinner (I live in Vegas so I can always see what you eat while I’m making ours). My husband thinks I’m a bit obsessed. When he sees me on the computer he says, “So what’s Kath eating today?” :). Anyway, I truly feel like finding your site online was a direct answer to a prayer and it has helped me so much. I’m excited to shop OpenSky and good luck with your new business. I’ve always had a Great Harvest down the street from me (here and in Idaho where I grew up) and I love it!
Kath says
Thanks Stephanie! Fun 🙂

I’ve never been a big coffee drinker, but recently I’ve been needing coffee sooooo much!! That coffee looks amazing haha….so do those overnight oats 🙂
Hannah says
I love how you open my eyes to new flavour combinations via new products (I focus on flavours not products because, well, I’m in Australia!)
Mary @ Bites and Bliss says
Love granola without all the added oils and sugar! Glad the commercial stuff’s finally catching on and making granola HEALTHY again and not glorified candy.
Katie F says
Are you switching amount of weight for each track? That should help fill the time. Also after the back track, I start putting some of my weight away. Since there’s time I go ahead and make use of it so I can get out of there quicker.
Kath says
Yeah, but it doesn’t take me that long!
Meredith (Pursuing Balance) says
pretty placemats!
J3nn (Jenn's Menu and Lifestyle Blog) says
I just bought some Galaxy granola last week and I think it’s the best granola I’ve ever had. I like how granola is going the oil and sugar-free routes; canola oil is bad, bad, bad!
Kelsey says
Looooove the tree!!
Lorin says
Do you think a healthy cereal is better than a healthy granola? Because it seems like most granola has a lot of added sugar to it and is more calorie dense. I was curious as to what your opinion of granola vs. cereal would be..
Kath says
It all depends on nutritionals, ingredient list and portion size.
