Per usual, I asked Matt what he wanted for breakfast. I have a hard time deciding and his vote is always the tie-breaker. Plus I’m always up first to get started!
His request: “Basic KERF oatmeal. No pumpkin.”
Ha! I asked if we could compromise with cottage cheese – freshly purchased!
I snuck pumpkin into mine anyways with a crumbled pumpkin muffin from the bakery.
Since we opened in June, I haven’t brought much home other than the occasional loaf of whole wheat for sandwiches and random things like granolas. I eat enough sweets nibbles while I’m at work as it is! But yesterday, Matt brought home some leftovers. I had no choice but to dig in!
Pieces were missing already. I have no willpower around wholesome sweets like this!
The other 1/4 of the muffin top went into my oats
Cottage cheese blueberry oats with chia seeds, banana and pumpkin muffin on top. I always stir in the cottage cheese near the end of cooking.
Note how the Barney Butter melted in – this is how you get drippy nut butters if they aren’t at room temp. Rest your spoon in the hot oats and then lift it back out and swirl
Earl Gray on the side!
Today is 100% home improvement. Or rather, dis-provement. Goodwilling, art off the walls, packing breakables. 1 week to go!
Molly @ RDexposed says
No pumpkin?? What does he mean no pumpkin?! Has he come down with something?
KathEats says
He doesn’t like it!
Molly @ RDexposed says
Fall must seem like a long season for him then! HA
Khushboo says
I’m just like that around wholesome baked goods. Ive started to stick a majority of it in the freezer almost immediately. Fortunately baked goods defrost fabulously!
Sweet and Savvy says
I love the idea of a crumbled muffin on top!
The drippy, smooth nut butter on top looks delicious! I love it when things like that get all melty:)
Brittany @ Itty Bits of Balance says
Haha I can’t believe Matt doesn’t like pumpkin– ESPECIALLY living with someone who sneaks it into recipes all day long 😉
Ally (Girl V Food) says
I opened my first can of pumpkin yesterday and it’s already half gone. Oh, fall. I love you.
Liz says
Have fun with your day of ‘dis-improvement’! I’ll be moving next month, so I’m thinking a moving series is needed? 😉
Heather @ Get Healthy with Heather says
My husband doesn’t like pumpkin either! I find that to be pure craziness.
Drippy pb is the best :). Hope all the house stuff goes well!
Cait's Plate says
I do the exact same with nut butters if they’re not at room temperature. The melty nut butter is key to a good bowl of oats in my opinion 🙂
Good luck with all the packing and organizing! Can’t believe you move so soon, that’s so exciting!!
B & B says
What type of cottage cheese do you purchase?
I usually buy 1% Nordion Cottage Cheese that has xantham gum and a few other ingredients. There is a brand with just milk and salt but it’s really dry and not the same.
KathEats says
Whole Foods organic
Lynda @ Healthy Hoboken Girl says
Kath, have you checked out the you tube video WholeFoods Parking Lot. It’s hilarious!! Another reason bike riding is the way to go!!!!! In between home stuff watch it!! Have a great day!!

I haven’t thought of putting cottage cheese in my oats before, is the texture like that of cottage cheese when cooked?
KathEats says
It’s like oatmeal with a cheesy taste
JenATX says
with blue berries? hm that sounds a little strange to me but i guess i’d have to try it
Jil @ Big City, Lil' Kitchen says

Cara says
Good luck with the packing!
Sally Anne @ PaleoRunnerGirl says
Wow, I need to begin the Goodwilling process as well! It always feel very good to “simplify” before each life transition! Just think, this will probably be your last move for a GOOD LONG TIME! YAY!
Angela @ Eat Spin Run Repeat says
No pumpkin for Matt means more pumpkin for you then! Fall must be a pretty dreary season for non-pumpkin lovers… it’s about the only thing I look forward to post-summer… well, that and butternut squash and Brussels sprouts!
Annette @ EnjoyYourHealthyLife says
i <3 pumpkin!! I am sad he doesn't! But your bowl looks awesome!

Mmm…that pumpkin muffin looks tasty. After reading all your posts incorporating pumpkin, I went out to get some of the canned stuff to use in my oatmeal this morning. Both stores I went to were completely out! Next time I see some, I’m buying stocking up.

Kristina says
PUMPKIN!!! We have our first fall-ish day here and all I want to do is curl up in a blanket, read a book and make/eat something with pumpkin…
faith says
I am in need of some good will! Keep me in mind as you start the sift ‘n sort! I will even be happy to come do some sorting and delivering of leftover goods to the thrift store. 🙂
KathEats says
Come over!! I have tons of stuff!
Chelsea @ One Healthy Munchkin says
He doesn’t like pumpkin?! But what about pumpkin pie at Thanksgiving? That’s like Christmas without gingerbread. Or Halloween without candy! 😛
Sarah says
Were moving in a week too. Already recycled, goodwilled, and 1/2 price booked boxes and boxes of stuff.
Jennifer says
Good luck today! I hope it goes smoothly. 🙂
Katie @ Peace Love and Oats says
That looks so delicious! and I’ve heard of cottage cheese in oats, but this just seems so odd to me! How much do you add to a normal serving of oats? And do you use less milk? I’m fascinated and confused at the same time…
KathEats says
You make oats as you normally would and just stir in a 1/3 cup at the end (maybe start with less to see how you like it).
Katie @ Peace Love and Oats says
Thanks!! I love cottage cheese so I can’t wait to try this! I’m also going to try your idea of an egg on top of a salad for my lunch!
Anja says
I have to admit I have been eagerly waiting for CVille Clusters to appear again on OpenSky and now I have just found out that OpenSky does not deliver to Europe… Sucks! You always make it sound sooo good! I wanna taste it!!!
Well, I love your blog and you inspired me into investing some more time and thoughts into my muesli. Putting nut butter into one’s muesli is the best idea ever! I have bought chia seeds now and I love them. They are a little like flax seed but not really.
A muffin in my muesli one day will probably bring me to muesli heaven.
Perhaps I’ll make it to CVille one day 🙂 Enjoy your Sunday!
Ashley @ Coffee Cake and Cardio says
yummy yummy! I love that Matt asked for Classic KERF oatmeal!! Too cute!
Jackie @ That Deep Breath says

Anna says
Great drippy nut butter tip! It’s going to make the nut butter part of my morning so much easier 🙂
P.S. I’ve been following you for months (and other food bloggers for years)… and I finally got up the guts to start up a blog of my own. I’d be honored if you’d check it out 🙂

I can’t believe it’s only a week away…wow, you are knee deep in project pack, donate, declutter. I just went thru this…we moved into our current place about 6 weeks ago. And I have moved about 10 times in the past 10 years. Not all by choice, some by circumstance, and each time I donate more and more and more to Goodwill, Salv Army, etc.
Good for you for packing LESS and giving away more. I always say at the other end when I am unpacking, or carrying in the boxes, why didn’t I donate even MORE! 🙂
J3nn (Jenn's Menu and Lifestyle Blog) says
Muffin atop oatmeal sounds sooo good. Like a doughy cake.
Kristen Waby says
Good luck with the packing and all. It’s such a shame that with 2 days off, you’ll have to spend most of it packing!
Alaina says
I am totally the same way around muffins! The tops are always sprouting holes. 😉
Mai says
I have a question. Do you mix the nut butter in the oats or do you have a spoonful in the middle to get one scrumptious bite?
KathEats says
I leave it on top – a little in every bite!

Cottage cheese and oats?!? I may have found a new favorite oatmeal mix in 🙂
