Not your average burger & fries
Then again, neither is this: Banana Hot Dogs + Fries.
I made my way to the gym at 11:30 for an hour of cardio + abs. I did a circuit today with 15 minutes on my bike to get there, 20 on the Stepmill, 20 on the ET, 10 abs, 15 bike. Since I did the stairs yesterday and am planning the ET at Winthrop tomorrow, I didn’t want to do too much of any one thing. I am dreading biking to the gym less and less since my “Life’s About The Journey” post.
Once home and showered, I was starving for lunch! I had the end piece of this mini loaf while I waited for lunch to cook.
My burger was a portobella mushroom, brushed with olive oil and baked for 10 minutes. Then topped with a little sharp cheddar and place on a bread bun with ketchup, mustard and pickle.
And on the side – kale chips!! I planned this lunch into my grocery list this week.
Plus a bowl of strawberries on the side –
I am SO full now!!! I guess the kale is more filling that it appears as airy crisps.
Kath’s Mid-Winter “I’m Freezing All The Time” Warm-Up Routine
After an hour of desk work, I am normally frozen top to bottom. Here’s my newest 10 minute routine that warms me up:
- Put a cup of water in the microwave on high for 3 minutes to be ready when you’re done. Set out teabag to flavor it.
- Add another layer to your 3 layers to equal 4. I like my heavy Davidson Lacrosse sweatshirt.
- Put on gloves (I put on my computer gloves)
- Do 5 minutes of housework to increase your heart rate. I like vacuuming. Sweeping and mopping are also good, as is anything that involves moving!
- Resume desk work with hot tea in hands.
We’re having some new friends over for a casual dinner tonight so we can give them some Great Harvest bread. I’m making Butternut + Lentil Soup from a mix I got as a gift 🙂
I feel like I haven’t seen the husband in ages!!! I have a very faint memory from the middle of the night when I said “Did your alarm go off?” in confusion, and his car is gone, which means he was running late. I hope he didn’t sleep through his alarm!

Your lunch looks soo good!! Those strawberries look so sweet!!!

Did you cook the kale? Or was it raw?
Your lunches are very inspiring… now I know what I’m having for dinner. Thanks!

You lunch looks heavenly! The kale chips sound look interesting.
Love your warmup workout. I do almost the same thing at work while I microwave water for tea except I do wall push ups or squats instead of housework.
linds says
Kath, can you use any kind of kale to make those kale chips? I think I’ve heard that one type is better than others?? They look so tasty, and I love your “cheeseburger and fries” lunch.
megan says
Sadly, I’ve never learned to like kale chips. 🙁 I’ve tried a few times and I’m just not a fan. I do like kale in soup though! It’s chewier than spinach, which I don’t like cooked at all.

Inspired by Jenna over at EatLiveRun, I’ve been drinking a TON of hot water with lemon. So good when I’m sick of tea!
Danielle says
Oh my goodness I’m always so cold when I’m at my desk, whether at work or at home. My hands are usually icicles when I get up.
That lunch looks great and very filling!

is that the new big mac?
Jen says
Loving the lunch!!! 🙂 🙂
Mel says
Love the healthy burger and fries… more places should adopt the Kath style lunch!
Rachel says
Love those kale chips! I’ve been experimenting with kale lately and you’ve certainly been an inspiration. I love how “volumetric” it is, especially when you bake it like that. It’d be fun to compare that with the nutritional profile of the same volume of potato chips!
allijag says
That bowl of strawberries belonogs in a magazine! So pretty!
Thanks for the warm up tips!
brandi says
Nice lunch – those strawberries look so good!
I got a really good bunch of them this week – they’re all super ripe and juicy 🙂

Great burger and fries 🙂 I just read that post with the Banana hot dog and fries and laughed out loud at some of your crazy comments. The Internet is a crazy place, no?
Thanks for the tip on how to warm back up! I am definitely FREEZING when I do homework and a lot of times that can lead to mindless munching. I like your plan much better!!

When I saw the title of this post I did a double-take! You made the mushroom burger look so easy that I’m going to try it next week. How hot was the oven?
Heather McD (Heather Eats Almond Butter) says
Now, that’s my kind of burger and fries. Lunch looked so good, and what a beautiful presentation. I was never into kale much until I tried Kale Chips. So good…especially with ketchup!
Thanks for the warm-up tips. I’m always cold!

Kath,
I have to say once again it is very uplifting reading your blog and knowing that is is possible to eat healhfully. I read the book Intuitive Eating previously and I have tried to read it again recently, but I can’t seem to get through it. However, I think the 10 points they have are good and I am planning on keeping those in mind when I eat. I also just oredered Fit From Within and I am very excited to receive that, because I think it will give me more insight on how to continue to eat healthy and intuitively. Also, I notice you enjoy wine, my husband and I do too, on average how many times a week would you say you drink and how much? I think that is one area where I struggle because we are fairly social people.
Thanks!
Kath says
linds ,
I think the kale with the curly edges does the best. Better than the kind that is flatter. We only have one kind in our grocery stores here, so that makes it easy.
Lisa ,
375* for the chips. Had I just done the shroom, I would have used 400*.
Meredith
Anthropologie this weekend.
Katie ,
Good for your for working on intuitive eating 🙂 I have to say, I am torn on the subject of alcohol. I do love wine, and drinking, and being social with a big wine glass or a pint of beer, and I would never give it up entirely for its enjoyment and wonderful taste, but my body does NOT like alcohol. Not only do I get hung over (and black out) very, very easily (sometimes I can feel just 1 glass the next day), but my weight doesn’t like alcohol either. I tend to retain water when I drink and nearly ALL of my pig-out sessions are correlated with alcohol. I’d say I drink once a week (usually on the weekend) and have 1-2 drinks. But that’s just an average. If I’m on vacation it’s usually once a day (just 1 drink, or sometimes much more). It just depends! But I was always most successful with my weight loss when I went through a week AND a weekend without alcohol or a party.

Portobella…cheddar…yum! Your warm up plan sounds like a sure thing! Have you heard of rice packs/flax packs? They are essential to my warm up routine.

My husband has the best technique for warming me up- boil water and fill up your Nalgene (or other water bottle), hold for hours or put near your feet. It stays warm for hours! 🙂

Kath! I awarded you my Holy Yum! award for all your wonderful oat creations. I stole a pic of your pumpkin oats to display with the award on my blog. Hope that is OK! Feel free to display the award on your blog or let everybody know that you received it. Thanks for so many wonderful oatmeal recipes!

Your mushroom burger and “fries” look awesome. Thanks for the tips about keeping warm. I need to get some fingerless gloves. I am always freezing in my house.
Nicole says
Loooooooove that meal!!

Kath:
If I cooked the Kale Chips with just spray butter or pam, and not olive oil, do you think they would still crisp? I’m definitely not a great cook, and have no idea if that would make a difference or not!
Jasmine (Sweet and Fit) says
I Love that lunch! kale chip?? who whoulda thunk..
Missy (Missy Maintains) says
Thanks for reminding me about portabello burgers! I am getting some this weekend! I’m getting a little tired of my usual Morningstar Farms burgers so this will be a great substitute!!
Tina says
YUM! Kath, come over and make me dinner, please? 😉
Kath says
Jennifer ,
What on earth are you talking about…
Meg ,
Definitely. I don’t always use olive oil. Cooking spray will keep them from sticking to the pan but you shouldn’t have any trouble with crisp.
Kath
Kersten says
Kale chips scare me a bit…a dehydrated green veggie that is like a chip?! Thanks for sharing them; I’ve got more confidence to try them out now.
Question on the BarneyButter: do you find the quality/taste varies from jar to jar?
Kath says
Kersten ,
I’m only on my second jar and both have tasted the same.
