I didn’t get to meet with Mary this morning (her poor toe needs a boot) but I did get a lot done, including an annoying oil change, a project deliverable and a Gather article on sardines!
Which prompted my lunch craving:
Sardine + Avocado Salad
The Mix:
- 1 can dill + mustard sardines
- 1 extra squirt mustard
- 1/2 a giant carrot
- 1/4 a giant bell pepper
- 1 chopped huge pickle
- 1 tbsp capers
- 2 tbsp chopped cilantro
- 1 tbsp chopped jar jalapenos
- 1/3 of an avocado, mashed and mixed
The avocado definitely made the salad 🙂
I ate it with some Old London Whole Wheat Melba Toasts (a sample sent a while back)
And a delicious peach
Supppper filling!
But I still found myself reaching for a little dark chocolate to finish off the meal. I got this Bliss bar at BlogHer and my is the chocolate rich and delicious.
I found a postcard from my mom, who is in Vermont, to the Bears in the mailbox!

How cute is this? Mine would say “Please let me rest! You’ve worn me out!”

I’ve got back-to-back calls to do. See y’all for dinner – Matt’s cooking again!!! This time it involves dough!!
Pam says
LOL I think there are oatmeal vending machines in my dreams.
Hallie (Healthy Twists) says
HA that vending machine is awesome. When I was in Spain, they had beer in vending machines. That cracked me up, for some reason!
I’m going to be a sad panda when avocados go out of season…they are so delicious and healthy!
Cynthia (It all changes) says
My oatmeal vending machine would be the same as yours. It is my go to breakfast. Lately I’ve been eating it with bluberries, greek yogurt and a bit o’ honey. I love my purple mess.
I’m almost tempted to try your lunch except for the sardines. Something about that little fish…I just can’t.
Hannah Hawley says
Ooh! Where in Vermont? That is where I live 🙂
jess says
I need to go back to oatmeal – it’s more of a winter treat for me!
Your lunch sounds good – I’ve only had cooked sardines at a restaurant. Maybe I’ll try these for something different!
Becci says
Your salad looks great, but I don’t think I could do the sardines! Any suggestions for a substitution?!?
Kristi says
Kath, I’ve been reading your blog for about a year or longer…I have seen the bears lots but finally have to ask – what is the back story on these crazy bears?
Just curious 🙂
Christie @ Quit Your Diet says
Lunch looks great!
That little oatmeal vending machine is so cute!
Emily says
Thanks for posting that NPR article (and your Breathe article). I keep reading about raw food diets and their health benefits, but I’ve never seen any science to support their claims. There are some veggies that I only like cooked, and its good to know that I’m still getting nutrition.
Nice machine, by the way. You should name it, Jetson’s style.
Anne P says
ha! you totally need one of those oatmeal vending machines!! 🙂
snacksgiving says
I love that oatmeal vending machine..I think I too should scout for one considering how my life depends on it ..lol.
BTW, I would really like it if you could visit my blog and/or give me some comments.

KT says
OMG! I though my mom was the only one who wrote postcards to my stuffed animals! Thank God I’m not the only one!
Meg says
Oh my, that avocado salad looks delish. Only one thing…totally block out your address on that postcard girl! No one reads my blog and I’m always freaked out about things like this–even if it’s just people sending more junk mail.
Love the blog though!! 🙂
Meg C. says
you forgot to blur out your address!
ps i looove natalie dee. i don’t know how she comes up with a creative cartoon every day!
Kath says
AHHHH!!! Totally forgot my address was on the card!!! Please erase it from your memory!!!
Kath
Amanda (My Summerizations) says
haha only 35 cents for oatmeal?! what a steal!
Bree says
Ha, I didn’t even notice the address was there when I looked at a bit ago, I forgot our parents were in VT. Hopefully they are still here today (I live in northern VT) because it is such a beautiful VT summer day (finally)!
Megan (The Runner's Kitchen) says
I love avocado – so creamy and delish. I’d take it over mayo almost any day!
Krissy (Single Serving) says
I just bought a bag of the Bliss dark chocolate squares and I didn’t like it as much as the dark Dove Promises. Weird.
Denise says
wow .. that salad looks amazing! i have still not aquired the taste for sardine though …
Michelle Hisae says
I recently purchased a tin of sardines, inspired by you, and it looks like I’m pairing it with avocado. Or do you have any better recipes you suggest?
Allison K says
I just saw your tweet about wiper blades….if you tell the oil change ppl that you dont want them, and then go to the auto supply store and get them yourself, it’s cheaper. 🙂
Aaron@CrossBorderCravings says
Mmm… that salad looks amazing!
Red Head, Yellow Dog says
that salad looks delish! I need to just bite the bullet and fork over the moola for some avocados. They’re too good to not have regularly!!!
Have you seen those new chocolate bars made for women? very strange.
Heather @ Health, Happiness, and Hope says
You know I’ve never tried sardines before, but that salad sure looks fabulous! I love the mix of veggies!
Haha, that cartoon is hilarious. So cute!
courtney says
Thanks for both of the articles! I appreciate your take on healthy eating (and I think I am going to forward it to my bf so he will stop giving me grief for buying Fudgsicles ;)) and the npr article was great info! Keep up the good work, Kath!
HeatherBakes says
Love that cartoon! I WISH they had oatmeal vending machines… not a bad idea.
I need to just man up and try sardines one of these days.

Lauren says
Man, I wish I could bring myself to try sardines, they are so good for you! I eat a LOT of crazy stuff, and if someone prepared them for me I would definitely not turn them down, but I can’t seem to buy them! Maybe this post will be my motivation :]
Shannon (The Daily Balance) says
how awesome would an oatmeal vending machine be?! SERIOUSLY! 25 cents per topping 😉
Mary says
yum. I love avocado. Interesting article….lots of people still think that ordering fat-free dressing is a good thing!
gretchen says
I thought the way you mentioned that the melba toasts were a free sample from a while ago was just perfect — reminds people that it was free, without taking over the whole post with product disclaimers. If you’re trying to strike a balance, I endorse this particular model!
Andee (Runtolive) says
Love the salad idea, I might try it with tuna instead
Jen Papaya (PapayaFish.com!) says
oh.my.goodness. I LOVE that cartoon! where can I get one of these oatmeal vending machines??

K says
I’m a big veggie lover so thanks for the vitamin link! Enjoy dinner tonight 🙂
Stephanie says
Where is the article on sardines? Do you have to be a member of gather?
lynn (The Actors Diet) says
i absolutely adore sardines and avocado – but that’s a combo you’ll rarely see in a restaurant!
Justy2003 says
Awe, I saw the card earlier and wanted to read the note to the bears but didn’t have time (was busy at work!) and now it’s gone 🙁 But probably a good call to take it away because of the address!
Tracy says
I’m a follower of KERF, just not a commenter. I feel as though you are a friend – I know you so well. I just have to give you a recommendation to help you with curdling soy milk in coffee. A simple tool called an “Aerolatte steam-free milk frother” from Bed Bath and Beyond works wonders. It costs $19.99 but of course you can use a coupon. I pour soy milk in the bottom of my mug, microwave it for 15 seconds (or not), then froth it. Add coffee and you have a delicious, non-curdled hot coffee with soy milk.
Rebecca says
Haha I wish there were oatmeal vending machines! I’d buy one! I also want a peach really bad now!!
Courtney Worthington says
Hey Kath!
I’m camera shopping right now, I was wondering if you could tell me what kind of camera you use?!
Thanks sooo much!
Courtney
ashley @ Mom of 3 Gets Healthy says

Heather says
I love Natalie Dee! That is soo adorable.

Hannah,
I don’t even know!? Wherever Vermont College is!
Becci ,
Tuna! Salmon! Beans!
Kristi ,
I just answered this in the post with the bears on the stairs if you can look on that one please.
Michelle ,
I always mix them with carrots and peppers and mustard. A little curry powder would be good too! Red curry even better.
Allison K,
That would have been another trip and I am lazy But would have been smarter, I agree.
Stephanie ,
Nope but I haven’t posted it yet!
Tracy,
Interesting tip, but I will probably just use real milk in my coffee come wintertime again. I only have this problem when we’re out of cow’s milk.
Courtney ,
Check the FAQ page!
Kath
Lele says
Oooh, I want to try that salad! I feel like the creaminess of the avocado is probably perfect with the zippiness (is that a word?) of the sardines.
Alicia says
Kristi-
She answered the question about the bears in the comments section, not in the post itself. I couldn’t find the answer either until I looked there.
Alicia says
OMG, I want one!!! Can you imagine if you could have oatmeal dispensed from a machine where you could choose like 5 toppings and whatever kind of milk you wanted?!
Caroline says
Sardines are one of those foods that I never got a chance to try before I became a vegetarian. what do you think? Am I missing out?
LOVE the cartoon–mine would be well-used too!
Gena (Choosing Raw) says
You know I love this salad 😀
Abby says
While trying a mini square of the chocolate meltaway a couple months ago, I decided thatt the Hershey Bliss chocolates were probably the most appropriately named food ever. So good, and I’m not even a chocolate person.
Now avocado? That’s a daily habit.
