I went to dinner tonight with my two best friends from high school. One, who I haven’t seen in 2.5 years (!!!) just returned from the Peace Corps in Niger and the other was one of my bridesmaids and I sure wish we lived closer together! She has a really cute 16 month old. Makes me want to have kids (well, sort of!)
I surprisingly didn’t get hungry all afternoon but I did have a cup of tea at 4:30. I started to get really hungry for dinner around 6 and luckily we were already on the way. We went to a pizza place in Chapel Hill, The Loop, where I split a 8″ thin crust pizza with my friend (I had 1/3 – two tiny slices). I was planning to get salmon on my salad but the pizza looked and smelled good and I was craving some. I could’ve eaten the whole thing myself!
I also a walnut gorgonzola salad topped with roma tomatoes, sun-dried tomatoes, walnuts, gorgonzola, romaine and really good croutons, which I pushed all to the side but ended up munching on about 1/4 a cup at the end of the meal!
This meal didn’t really fill me up, but my hunger was gone for the time being. I guess I missed a big helping of veggies (lettuce doesn’t count!) I’m pretty hungry right now and no wonder – I’m 250 calories under my NET. Total Dinner Calories: ~442.
I’m not sure what to do, as it’s 9:30 and I’m pretty tired and have to get up early tomorrow. I might just have a glass of milk – my quick fix for late-night, late-minute, pre-bedtime hunger. But my parents’ kitchen is scary after dark!!
Total Sunday Calories: 1387. OK now I know I need a snack. Add 150 or so to that! I’m off to have some milk and maybe a piece of fruit.

I’ve got a 5.5 hour drive starting at 7 a.m. tomorrow! I’m having oatmeal for breakfast and have a DELICIOUS brown bag lunch packed for our car ride. Tomorrow afternoon we’re going shopping, then I hope to get in 30 minutes of walking, then we’re going out to dinner. I hope to report in tomorrow night, pretty late. Perhaps after lunch, depending on if we have time.
Off for milk + bed!

Great job tonight with dinner – I have such a hard time with pizza! It's a TOTAL weakness of mine.
Also, have a great time on your road trip! I hope you can stand the weather up north – I live in DC, but spend holidays and such down in Salisbury, NC (my boy's family lives there) and I am always loving the blue sky and mild temperatures! It's always so hard to come back to the cold. Luckily the weather is not supposed to be too bad this week!

Hi Kath! I just read through your blog since I haven't been on a computer since last Friday (it's been nice!) anyway, your dinner the other night (the stuffed pork) is exactly what I made last night for my husband and I. The stuffed pork with spinach and goat cheese, cream cheese with a lemon dijon glaze….did you get this recipe from Giada? If not, they you should check her out and Ellie Krieger, both on the food network. They made some realyl great and healthy dishes. I have never been disappointed in any of their recipes! Again, have a good trip!

The stuffed pork tenderloin was our own concoction. We've been doing the bleu cheese, dates, and pecans for awhile (it's amazing). But since we had several people coming over for dinner, we thought we'd need to do another tenderloin, and we wanted to do a different flavor.
My mom had been hounding me to stuff it with sun-dried tomato pesto, which I wasn't that crazy about because pesto can be so strong. So we tried to think of a way to have a milder flavor and making a goat cheese based stuffing. I actually envisioned it as goat cheese with pieces of spinach and sun dried tomato suspended in it, but I ended up making too much spinach. This made it almost unbearably leafy tasting (like taking a bite out of grass clippings) so we added some hot sauce and that seemed to perk it up.
Unfortunately, I probably won't try this specific recipe again because the stuffing was way too runny and dripped everywhere on the grill. I'm amazed at how much remained in the food though. Next time it'll be goat-cheese lightly flavored with those other ingredients. But everybody is REQUIRED to try the cheese n' dates stuffing – it's incredible.
