As is only natural for a new mom, I got really behind on my work last week. I had BERF and Real Health posts to write and some KERF business to catch up on. Sundays are usually our day to spend around the house, doing laundry and things, to prepare for the upcoming week and have some family time. Today while Matt worked on a few of his Sunday bakery things [inventory + ingredient ordering] with the baby napping against his chest, I was able to get a few hours worth of my work done. Feels so good to be caught up and ahead so I can spend this week focused on Mazen – especially now that I’ve noticed he is interested in toys!
{Laundry folding + baby playing multitasking!}
The morning began with some good late sleeping and hearty French toast! Topped with seared pears and apples, granola and Nutty Butter.
Sarah brought me two of her latest flavors as a birthday gift – Pumpkin Spice and Cranberry Shortbread. I don’t know what about this made it shortbread, but I loved the taste/texture.
After M’s morning snack, we all went to the gym together for the first time! Karen met us there for some babywearing fun while Matt and I both worked up an efficient sweat. I did 26 minutes on the elliptical and some good weight lifting. I can’t wait to get back to my Pump Challenge class. I’m trying to challenge myself on my own, but it’s just not quite the same!
I can tell a storm is looming and we’re not even in the direct path. I hope those of you who are stay very safe.
After our workouts, Matt made us salads while I fed the babe
Greens, red pepper hummus, carrots, egg, bread cubes, olive oil, avocado, leftover pizza, bleu cheese. All-in-one lunch!
TWO little monkeys sitting in a tree!
We actually made two dinners tonight – tacos for today and baked potato soup for tomorrow! Stocking up.
Our tacos featured some grass-fed beef I bought at the farmer’s market plus greens, green pepper + carrots cooked, pickled jalapenos, salsa, greek yogurt and lots ‘O cheese.
I bought some Garden of Eatin taco shells and wasn’t all that happy – how are you supposed to fit ingredients in here without it breaking!?!?
Taco salad on the bottom because my other shell broke.
A while after dinner, I ended the night with a little mug of vanilla bean ice cream. Gotta use it up before it’s too cold to think about anything frozen! [Except for the birthday cupcakes and slice of Larbs’ birthday cake in my freezer. I’m saving those for a special occasion!]
Brittany says
Sarah’s new Nutty Butter flavors look delish. I want to try the Pumpkin Pie. 🙂
And it looks like Mazen is getting bigger by the minute. I still need to meet him!!
Hope you are well.

I love those days when you can get a lot done.
Do you usually have to-do lists going, either on paper or on your computer or phone?
I used to write lists down, but use the Reminders app on my iPhone, which works great!
KathEats says
Yep in google tasks!
Katie @ Peace Love & Oats says
When I get shells like that I just break them in half and scoop the ingredients on top! Haha messy but it works!
Erica { EricaDHouse.com } says
I think you just gave me the perfect excuse to eat as much ice cream as possible this week before the temperature drops again!
Parita @ myinnershakti says
I have that issue every time I eat tacos at home. I just break the shells in half from the get go and create mini tostadas. Much easier to eat!
Allie@LiveLaughEat says
You’re starting him on laundry folding early!
Laura @ Sprint 2 the Table says
I love Sarah’s butters! I need to put an order in for these… that cranberry shortbread is calling my name! I bet it would be incredible with an english muffin and some lemon curd…
Susan H. @ The Food Allergy Chronicles says
Looks like you had a very productive day…stay safe in the storm!
Jeri says
I haven’t had Sweet Karen’s nachos in so long because of a night class. I might change Taco Tuesday to Friday untilthe end of the month. Or December. I do miss them.
Jana @ Newly Wife Healthy Life says
I would have to say that baby playing is the only thing that makes laundry folding a little more enjoyable.. 🙂 I am not a momma yet, but I sure do know how nice it feels to get all caught up on house work and actual work! Complete bliss!
Cyn says
I haven’t tried Sarah’s butters yet…what did you think of the pumpkin pie?
KathEats says
LIke it… Especially if you like nutmeg!
deva at deva by definition says
It sounds like you had a good and productive weekend. Sundays are my housework days, too – I am always catching up laundry on those days.
Mom says
So glad Maze is getting into toys. Love toys!
Nancy says
If you warm the shells in the oven, they will still be cripsy but warm enough to pull apart a bit more to fill witout breaking. You little Mazen is getting cuter and cuter!
KathEats says
We did heat them 🙁
Carly @ Snack Therapy says
I hate breaking taco shells! So annoying. But your dinner looks amazing nonetheless.
Amy @ Eat Workout Succeed says
Kath, i think it’s great you get all your work done and are getting back into fitness… i’m not sure what happened to me when i had Rowan last year – i just couldn’t get anything done! I think i am only just getting myself back together LOL!
I am going to have to steal your taco meal idea, my mouth actually watered!
Motherhood really suits you, i’m glad it is all going well for you x
Marilu from Kalamazoo says
I have not yet found a taco shell that is made so you can get ingredients in there! I’ll watch the comments to see if anyone has a brand recommendation. I just buy tortilla chips and make salads. Or soft tortillas for soft tacos. Maze is very cute!
Ali @ Peaches and Football says
I don’t have good luck with hard shell tacos. They ALWAYS fall apart on me! I’ve switched to a small handful of tortilla chips instead. Works great – we have tacos on the menu for this week too. Can’t wait; one of my favorite foods.
JennieM says
Just a suggestion….When you heat the shells up, so you link them together? You insert one end of a taco shell into the end of the next and so on, they prop themselves open. Say you do 4 shells, you form a taco shell square….Hard to describe, but as they heat up they stay open and wide.
KathEats says
Brilliant!
Lauren says
Does Sarah sells these butters because if not, she needs to! What a gift this girl has!
KathEats says
She does!
Sarah @ Family. Food. Fiesta. says
That Pumpkin Pie/spice butter looks amazing! I just bought some pumpkin butter from Trader Joe’s and it’s really good. Does your friend Sarah sell hers? In regards to hard taco shells, we make our own by getting a corn tortilla and just frying it a little and then flipping it and folding it over. We haven’t found store-bought shells that are good.
Kristen @ Change of Pace says
Crunchy tacos are my favorite and it really is hard to find a good taco shell. Headed over to Sarah’s site to check out those nut butters. YUM!
Dr. Mark says
I love when families work out together. Your baby will grow up with exercise being a normal part of life, something that is becoming more rare with every generation. Bravo to you 🙂
Kelsey says
Congrats on getting all caught up on your work! I think that’s one of the best feelings to have as you head into a Monday morning!
Averie @ Averie Cooks says
Glad you’re feeling caught up and that you were able to go to the gym together. Now that’s a nice bonus when the stars align like that to work out together!
Annette @FitnessPerks says
Yay for a fun workout!
I too love multi-tasking. I think I am pretty good at it 😉
katherine says
what is Mazen playing in? It looks awesome for my little man!
KathEats says
It’s the Chicco Travel Activity Mat, but I’m not crazy about it. The design is not very good so it doesn’t stand up very well. I just ordered a Skip Hop one that’s a real playmat
Angela @ Happy Fit Mama says
It never fails for hard shell tacos to break on me. There’s just too much good stuff to go in. Mine always end up being a taco salad instead.
kim@hungryhealthygirl says
All of your eats look delicious, as usual! I made two dinners last night too. Chicken enchiladas for dinner and a pumpkin chili for tonight.
Fran@BCDC says
That’s quite a combo salad for lunch…looks tasty!
Morgan says
Hard tacos are such a tricky thing! I can never fit in enough ingredients before it breaks. That’s why I stick to the soft ones. Pliable and just as yummy.
Christina @ The Beautiful Balance says
YUM, pumpkin pie nutty butter! Sounds amazing. I gave up on hard tacos shells a long time ago. If I’m in the mood for them I normally just break them up and make a taco salad.
Sarah @ The Smart Kitchen says
Hahahaha the only thing that makes it shortbread is that it kind of reminded me of a Girl Scout Trefoil Cookie…and Nutty Butters have to have delicious treats for names. 🙂
Jenica says
Hope you’re staying safe and dry today! Nice that you are able to still work out regularly!
Michelle (Peachy Palate) says
Fantastic French toast combo and another awesome looking salad!!! Nothing better then ticking things off your to do list to start the week afresh!!
Claire says
That Pumpkin Spice and Cranberry Shortbread looks amazing!
Sara says
Do you freeze cakes/cupcakes with the frosting and everything? Does it taste the same when you thaw it out?
KathEats says
Yes. My mom taught me the trick is to unwrap them frozen or the frosting sticks to the foil. They don’t taste AS good, but they still taste very good!
love Cher @ Weddicted says
That nut butter looks good!!
Katie says
You need this! http://m.buy.com/product/details/232239989?listingID=221828539 I found mine on amazon, but I guess they don’t carry it anymore. 🙁 I use the TJ yellow corn tortillas and no oil (oil makes them slip off in my experience) and they turn out great!
KathEats says
Ahhh that’s cool!!
Carrie @ The Cook's Palette says
I have the same issue with those taco shells. I like to use the small soft tortilla ones, then stick them in a warm skillet for a while, then flip. It gives them a little bit of a satisfying crunch and you can fit many more toppings in. 🙂 Glad you were able to get caught up on some work!
Ellen @ Wannabe Health Nut says
Ohh I didn’t know that Garden of Eatin’ did taco shells. Although, yes, those are quite skinny, ha! Looks like a yummy taco bowl though. I’m hunkered down here in NYC and now I can’t stop thinking about Mexican food. Thanks a lot. 😉
Cait says
Mazen just gets cuter by the day! 🙂
Ashley M. [at] (never home)maker says
Hahah. Aw. You are so making me miss the younger days. They are tough, too. But I’d give anything to multitask with the play/laundry thing. My house is an official disaster. And now we’re getting the storm!!! <3
Nicole says
You’re so blessed to be able to work out again! I am so ready to jump back into it all but my body is not…boo! I guess it’s time to practice patience, no rush, right? Your workouts are making me a bit jealous, though!
Have a great week!
KathEats says
Aw, hope you feel better soon!
the 3volution of j3nn says
Every salad should include leftover pizza. 🙂 I would have broken the taco shells into chips and converted to nachos at that point.
Molly says
more like THREE little monkeys 🙂
KathEats says
Haha
Mary Catherine says
This is my favorite way to eat a taco salad:
http://www.amazon.com/gp/aw/d/B00004R90Y/ref=mp_s_a_1?pi=SL75&qid=1351558790&sr=8-1
I like to use a large Ezekiel tortilla which makes a perfect crunchy shell.
lindsay @ Fuel My Famil says
I usually stick to homemade soft tortillas or taco salad with crunched up hard shells because my shells inevitably break every single time and it frustrates the heck out of me!
Jess says
I love those smiles from Maze!
Holly says
Colour me confused, Kath, but what does the title of this post mean? You don’t talk about anything even vaguely mustard-related.
KathEats says
Just that I was catching up on work all day and mustard is “catch up’s” sidekick
Nancy says
I see Mazen with Monkey, but how are the bears doing? Do they like their new brother? Would love a post on that topic!
KathEats says
They are away at boarding school actually. We were a little concerned with all the chewing snd spit up hurting their fur.
Emily @ www.main-eats.com says
Cute title!!! I love how you are able to prepare so much ahead of time and are able to keep on top of everything!
Verenique B says
wow those nutty butters your friend made look amazing!! can i come try some?? 😉
also love all the cute pottery mugs you have!! where do you get them from??
