I was on cardboard duty this afternoon. Boy have there been tons and tons and tons of boxes and cardboard pieces that came with our equipment. I feel the opposite of green with so much packaging, but I suppose there is nothing I can do other than recycle it.
I finally headed home at 5:30, and FINALLY got in the shower! I was not expecting to be gone that long!!
Karen, bless her heart, has been helping us this week by doing dishes. Despite her fatigue from 5 out of 6 chemo treatments, she’s washed about 100 sheet pans! I think she’s more excited about the bakery finally coming to fruitiation than we are
She also baked some cornbread and sent us home with a slab!
So that’s what we had for dinner!
We were joined by the three honey bears!
Karen likes her cornbread savory so we had to add back some sweet! Between the Thistle, Wildflower + Clover, we love the Thistle the best. It’s got the most robust HONEY flavor. The Clover is slightly spicy bitter and the Wildflower is sweet but subtle.
Can’t forget the butter!
The main course was a soupy mixture of our leftover Baked Potato Soup plus leftover rice plus 2 handfuls of spinach plus smoked paprika plus half a slab of tempeh plus an egg on top!
The cornbread was better 😉
We’re settling down with Million Dollar Baby for some evening entertainment.
We THINK we made our deadline – which means a June 3 opening – but we
are not 100%, absolutely positive – haven’t heard the final word!!
Stacy @ Every Little Thing says
Wow June 3 is so soon! I’m sure everything will be ready to go. And her cornbread looks great! I love cornbread.
Amanda (The Nutritionist Reviews) says
Haha for a second I thought that you only had cornbread for dinner…but that sounded good to me!
Heather says
Ahh June 3rd!! So exciting- I’m so glad to see all of this coming together for you guys!
sarah says
Good luck. For Charlottesville sake, I hope June 3 is a go! In know I’d be happy if you were opening up in my backyard. But I’d have to buy stretch pants.
Tori (Fresh Fruition) says
Honey bears never fail to make me smile! 🙂
Angie @ Musings of a Violet Monkey says
Yum. Even the so-so soupy mixture looks good to me right now. I’m starving! I’m currently waiting on my dinner to be “delivered”… (Chipotle take-out, acquired by the lovely boyfriend). Sometimes, it’s just a take-out night. And tonight was that night. 😉
Hope you made the deadline! Good luck!!

shannon says
I’m from MA and live in ME we love “yankee cornbread” which has sugar in it. My grandfather is from OK and he would not be happy when we made cornbread with sugar, calling us “yankees”. LOL!!! The southerns love it without sugar! Us northeners love it with.

Simply Life says
so exciting that you’re getting so close!
Cara says
Isn’t that the day after your anniversary? I think I remember us having the same wedding date, but I may be wrong. At any rate; very exciting!
KathEats says
Yes yes!
lani says

Congrats, guys!!
KathEats says
Aiken, South Carolina! She doesn’t love sweets though
staceyhealthylife says
Mmmm the cornbread looks like the best part, and some amazing cornbread.
Emma (Namaste Everyday) says
i love cornbread! Would Karen be willing to share the recipe?
KathEats says
I dont’ think she has the energy to type it up right now. Maybe if she makes it again sometime
Elena @ GagaForGrapefruit says
loveee cornbread!
Averie (LoveVeggiesAndYoga) says
packaging, boxes, moving in/moving out…yes, so much waste, so dirty, so not green, but unavoidable. I need to wash my hands just looking at all those boxes..hah!
Cornbread + red napkins + square shape = very geometric, cool, high contrast image. love the photos!
Jenny @ Fitness Health and Food says
oh my goodness! Congratulations on the tentative opening date, so exciting! 🙂
That cornbread is like food porn for me 🙂 honey and butter mmmmmm…
McKayla @ Green Groats says
Mmm. My favorite kind of dinner – everything all mixed together!
The cornbread looks amazing as well! Honey + butter + cornbread, what a perfect combo.
Karen says
The cornbread is made from the recipe on the back of a package of Martha White Cornmeal (plain, white, and enriched.) Did you and Matt think it’s as good as the ones made from mixes???
KathEats says
Oh good – there you are!!!
I did think it was good – but not as good at Trader Joe’s!
r8chel says
Yum — that cornbread looks delicious. I like cornbread with either butter or honey, but it’s also good with maple syrup!
Meagan says
That’s so soon!!
Liv @ The Salty n' Sweet says
I love cornbread with sugar!! I guess it’s a northern thing, but savory cornbread tastes odd to me. But Karen’s are so beautiful! The crust looks amazing, but whenever I make cornbread, it always ends up more yellow than her version.
kaila @ healthy helper! says
Okay well I am totally making cornbread tomorrow after seeing that slab! Looks amazing.
Holly @ The Runny Egg says
That is so exciting — only a few more weeks!
I love cornbread — and Jason just walked behind me and said “now that looks good!”
Justeen @ Blissful Baking says
Mmm honey is my FAV sweetener ever!! It looks delish drizzled on the cornbread!
Katie says
I am such a Ding Dong! I thought you were opening today for some reason! Sorry!
I am so excited for your projected opening date!!!
Bless Karen’s heart for sure, she is an amazing and strong woman!!!!!!
The Teenage Taste says
That cornbread looks delicious and the presentation looks absolutely fabulous! The dripping honey is absolutely droolworthy!
Mary Frances says
I’m like you, I only feel relieved when I hear it is 100 percent for sure and get that final word; however, sending positive vibes your way and I somehow have a good feeling about it for you.
Wow, you go Karen–I’ve been thinking about you. Glad to hear you are feeling up to washing all those pans and corn bread too. One thing I always do when I wash my sheet pans is to put them back in the oven to dry–then they never rust; but from the picture I saw on a previous post, those big sheet pans look like aluminum so no worries about rust. Is that correct?
Katie @ Nourishing Flourishing says
Karen sounds like a saint 🙂 Best of luck on your deadline!
Angel7 says
Back when I was in college and lived near a Great Harvest Bread Company, I used to get their cornbread, and I loved it!

Christine says
Less than a month!
Laura @ Sprint 2 the Table says
Do you ever put your cornbread in milk with butter and eat it with a spoon? Mom used to do that in coffee mug and heat it for a minute when I was a kid. It was the best treat!
MonsteRawr says
And they’re not even the kind of boxes that you can pretend are spaceships! Fail.
Khushboo says
3 weeks to go! I’ll be counting down witch ya because my bday is June 4th 🙂
Annette @ EnjoyYourHealthyLife says
mmm I LOVE honey 🙂 Yah for June 3rd<—-2 days before my husband's b-day!
Ashley says
Lately, I am completely obsessed with honey + corn flour. We used to have cornbread for dinner nights when I was a kid [of course with some breakfast sausage too!]. SO GOOD.

I’ve only just begun to like cornbread, so I think that looks amazing!

J3nn (Jenn's Menu and Lifestyle Blog) says
I don’t know if I’ve ever had savory cornbread. It looks yummy, though.
Here’s to hoping for a June 3rd opening — the day before Dustin’s birthday! 🙂
Cara @ EAT. PRAY. RUN. says
I love that you added an egg to your ‘stew’…I often forget about how much awesome flavor and texture an egg can add to so many dishes!

I love cornbread, sweet and savory. Thanks for reminding me to make some.
And that stew with the egg on top looks delicious!
Jumanah says
The cornbread looks so good! Hope everything will work out and you open on June 3rd!!!
Victoria says
Million Dollar Baby is good but it totally wasn’t the film we were expecting when I rented it with a friend. Hope it didn’t take you by surprise in the same way (don’t want to say more for fear of revealing the plot!).
Sarah@The Flying ONION says
June 3rd! That’s so soon! You guys must be thrilled. 😀
I absolutely love cornbread with honey! I always make my cornbread a little on the savory side, just because I love the way a drizzle of sweet honey on top really pops out and excites everything. 😀
Kristine says
bummer, I wish I could take those cardboard boxes off your hands! I am moving and need all the boxes I can get! 🙂
Hannah says
Oh, you must try and track down some Leatherwood Honey! It has the most unique, fascinating, delicious flavour – surely amazing with cornbread 🙂
Chelsea @ One Healthy Munchkin says
I love cornbread, but I’ve always eaten in savory. I can imagine that it must taste amazing with honey though!
I’m crossing my fingers for you that you’ll be able to open on June 3rd. It’s so soon!!
Jenn says
Cornbread is my favorite thing! About the boxes, at least the store is in great location to McIntire Recycling 🙂
Melissa says
Wow, June 3! Awesome! If you are open, I will be driving through the area on the 3rd and the 5th on my way to and from my half marathon. I want to stop by for some KERF-style GH!!! 😀
