Wild Mushroom Soup, Garnished with Walnuts
This recipe looks fancy but it was so easy. We invented it ourselves tonight 🙂 The husband took the initiative to add 100 calories worth of butter, which I thought was rather pointless because I couldn’t even taste it. Oh well. The navy beans are also optional, but we added them for more protein and fiber (and because we needed to get rid of them!)
Wild Mushroom Soup:
- 1 pound assorted mushrooms (cremini, button, oyster, skitaki)
- 1 large carrot, chopped
- 1 large stalk celery, chopped
- 2-3 cloves garlic, minced or pressed
- 1 can Campbell’s Cream of Mushroom Soup, Low-Sodium
- 14 oz can beef broth, low-sodium
- 1/2 cup navy beans
- Butter (optional)
- Chopped walnuts for garnish
Cook chopped mushrooms, garlic and veggies in a large dutch oven until tender. You can cook it in butter for extra flavor, but it’s not necessary. Add broth and cream of mushroom. Simmer for 10-15 minutes. Puree with a stick blender, leaving some chunks. Or puree 3/4 of soup in food processor or stand blender. Garnish with walnuts.
Makes 2 servings. ~326 calories per serving when using 1 tbsp butter. 250 calories without butter!
It was fantastic and VERY filling!!!!!!! I loved the crunch of the walnuts.
Snacks
This afternoon I snacked on a new kind of raw fruit/nut bar: Think Organic. It was a lot like the LaraBar I had yesterday – actually almost exactly the same but a little smaller and a little less calories. I didn’t think it would tide my hunger very well, but I ate at 3:30 and still wasn’t hungry for dinner at 6 when I got home!
And I had a few Kashi crackers when I was packing my lunch, which, by the way, is going to be AWESOME tomorrow!

And yes, it is possible to have just a half cup of ice cream and stop. Edy’s Slow-churned Egg Nog and Fiber One….
Gosh that stuff is amazing. Just like real egg nog!!! Who needs the drink when you can chew it for 1/4 the calories!?

– 566 from workout and walk
= net of 1152.

i don't know what the formatting issues were… but the blog looked GREAT as usual. just out of curiosity, why do you avoid diet soda? for me its always been something that satisfies me when i need a little taste in my mouth but don't need a snack! also, how do you feel about frozen yogurt? particularly those that are fat/sugar free and seem to be VERY low in calories?

I do drink diet soda and eat frozen yogurt and low-fat ice cream, but I just don't have them often. One of my nutritional goals is to put things in my body that my great grandmother would have recognized as food. I try to avoid anything processed to the point that it's not all-natural. Diet Coke (which I love to refer to as "Diet Acid Water") just isn't something I want swimming through my veins, but since it's FDA approved and there are really no major negative side effects (unlike Trans-fats and possibly HFCS) I don't have a problem drinking it every now and then.
As for frozen yogurt, I don't really even eat sweetened regular yogurt, so it's basically the same principle. When they come out with frozen PLAIN yogurt -I'll eat it!!! The manufacturers either add in tons of artificial sweeteners or tons of sugar – both of which I'd rather not have too often. I was pretty impressed with my Edy's Egg Nog ice cream ingredient list:
INGREDIENTS: milk, skim milk, cream, corn syrup, sugar, egg yolks, whey protein, tapioca maltodextrin, natural flavor, nutmeg, cellulose gum, annatto color, mono and diglycerides, turmeric color, guar gum, carrageenan, dextrose, vitamin A palmitate.
With Milk as the first ingredient, and many of the additives recognized, there are a lot worse low-fat ice creams out there. But still, I don't want to be eating this every single day.
So to answer your question, I do drink/eat these, but I try to have them maybe once a week at most.

Also diet soda isn't great for your teeth – drink some water afterwards to get the acid off.

Oh my! Have you ever TRIED frozen plain yogurt?
It. Is. Amazing. I'm not even kidding you. It can be hard to find – I don't think it's really on the east coast yet at all… I went to college at USC (in Los Angeles), so it was all over the place there. Pinkberry (which you probably have heard of? but maybe not) is kind of like it – but I don't think thatt's really yogurt (there was some controversy a while back about what they were putting in it) – it's just meant to have the same taste. However, there are frozen plain yogurts that have the same benefits as plain yogurt, i.e. the live/active cultures, etc. Sometimes it's hard to find (compared with the fakey-Pinkberry-types), but it exists!
I've only found two places in D.C. (where I live now) that have it – one is a tea shop and the other is a smoothie place. It just hasn't spread very far from the west coast yet. I think it became really popular originally as a Korean specialty food and it took off from there.
In any case, if you ever see it anywhere (in your travels, etc.), TRY IT. You scoff at the thought – but it's delicious! I swear!

I bought it at the Washington Airport, but I've seen them in my grocery store. Check the healthier grocery stores in your area – or ask if they will start carrying the brand.

too bad you don't live in tampa!!! we have a little yogurt shop that has fat free plain frozen yogurt and then you pick from a variety of chopped fruit toppings like mango, kiwi, berries…(i usually get mine with chopped banana and a sprinkle of dark chocolate chips). SO GOOD!!!!!! if you have an ice cream maker it is easy to make though!!

I know I’m commenting literally years late on this post – but I don’t know if you’ve heard of Local Yogurt in Durham – it’s a fairly new shop but they have plain frozen yogurt. I know you’re from Hillsborough so you maybe could try it out when you’re that way 🙂
