Why did I decide not to have coffee this morning!? Around 10:00 I started to get a headache and I’m pretty sure that’s why. Guf! First typhoid fever and now this!
Nevertheless, I was in the mood for exercise and traveled via bicycle to the gym and did a light 30 minutes on the ET before my ride home.
I cam home to find this da-licious box of chips on my doorstep!! I received these Food Should Taste Good chips to try for an article I’m writing on “Healthy Eating On The Go.” So of course I wanted to include them in lunch.
I decided on the sweet potato flavor, which did not disappoint! It was like a cross between a sweet potato chip and a tortilla chip. Totally delicious and addicting. You probably want to mentally double the portion here because I ate a number of them out of the bag!
For dipping: ‘Minter Cheese!
For the rest of lunch I made a semi-homemade soup.
I heated them all together in the microwave until hot. The cooked apple was amazing!
With a seltzer –
Kelsey hit the same deer carcas I did last night this morning on the way to class!! AHHH!

It’s getting warmer out there…

Those chips look yummy! I love that the sweet potato ones kind of look like the shape of a potato. Are they available in stores?

I found these chips last year at a Whole Foods and am happy that they’re spreading around and getting easier to find – CostCo even has the multigrain kind now! I’ve had MultiGrain, Chocolate (surprisingly good and an experiment of having them with chili was actually a good combo!) and Sweet Potato – all yummy!!

Delicious lunch and great article on Gather. I agree with quality over quantity when it comes to eating. Fresh, natural, and homemade are the way to go!

Coffee is such a hard thing to skip once you get hooked!! Ahh, I have tried for awhile not to rely on coffee. I have found that drinking tea several times a day helps but it is never the same without my coffee.
Maggie says
Your soup looks wonderful! I might make something like that for my own lunch 🙂
Sarah (lovINmytummy) says
Sandra Lee would be proud of that semi-homemade soup. Ugh, I can’t stand her. Just don’t start doing “tablescapes” and “cocktail time.”

So funny, my brother who lives in Charlotte called Tuesday to tell me a deer had run into the side of his truck on the interstate. What are the odds that it would be the same deer?!? Haha.

Hey Kath, I know you’re not a professional RD yet, but I wanted to get your advice on this. I’m wondering if I eat enough calories. I’m 5’9 and between 121-123 pounds, (I used to be 123-124 but seem to have dropped to 120-121 sometime around dec.). I have a small frame (obvi), I’m a runner and very active, I work out 6+ days a week for at least 45 minutes, typically burning 400-500 cal 5-6 of those days + 1 long run day(800+). Other than that I got to school and work at a desk in an office.
I generally intake about 1700 calories a day. Do you think this is enough for my body plus activity level? If not, what do you think I should be intaking and do you have any suggestions of where to add the calories? Right now I typically eat as follows: Three meals(all around 400c) , one morning prebk (100c) one afternoon (200c), one evening snack(150c). Thanks I really, really appreciate your input.

I absolutely love your web site! I just wanted to tell you that all three of my meals today came from your recipes, though slightly altered.
whipped banana oats with oatmeal, wheatberries, and almond butter
caper-bean salad melts
and homemade potato soup, super yummy on all three.
Meg says
Those chips look delicious! I can’t wait to hear about the other flavors!
Christy says
We have tried some of those chips too. My absolute favorite (so far) is MultiGrain. YUM! YUM! The Jalepeno is ok, but I wish the flavor was stronger. The Buffalo tasted good at first, but the aftertaste was awful. Something is just off with that one, and I REALLY wanted it to be good! I can’t wait to hear your review of all the flavors. 🙂
The Duo Dishes says
Lucky you! Those sweet potato chips look so good! And so does the soup. We just had kale for the first time and tried roasting it. So tasty.
Kath says

Kath,
Is chard a good kale substitution for chips?
Kath says
Dee ,
I’ve never tried chips with chard. I would think it would behave similarly, but I have no idea.
