The husband and I got a LOT done this morning – switch our phone service provider, changed the house air filter, called Sears re. our delivery compensation check, switched our direct deposit for the our gym payments, ordered a new City trashcan (our lid broke off), cleaned, organized, researched, exercised, cooked.
We headed to the gym around noon for a nice workout. I got in the sweaty 40 minutes on the Stepmill that I was craving, followed by 15 of lifting. The gym was PACKED with New Year’s motivated folks. I caught lots of people’s eye today. I always wonder if I have readers who go to my gym but are too shy to introduce themselves. I have to say though, I’d be pretty embarrassed to be seen in my worst state!
On our way home we stopped into Harris Teeter for a few ingredients for lunch. I was totally in the mood for a big restaurant-style hummus tasting plate with pita, so we replicated it at home.
We dipped an array of raw veggies into the hummus, including my favorite – pickles – along with carrots, celery and broccoli + cauliflower. We also had some apple slices –
The star, of course, was the hummus. This was by far the best hummus I’ve ever made!!! I used Barefoot Contessa’s recipe as a model and tweaked it a bit, mostly by cooking the garlic cloves so it wouldn’t be so harsh on the breath. I also added 2 tbsp more of the chickpea juice and it turned out SO creamy!! The lemon juice and extra tahini make this recipe. Interesting that there’s no olive oil in it (although I did use a tsp to saute the garlic before I put it in).

And my GOSH this homemade flatbread was A.mazing!!! The husband grilled it from some GH High Five Fiber dough that was leftover from the holiday abundance.
I ate my share of triangles – probably 10-15 of ’em and maybe the equivalent of 3 slices of bread?

The lunch was very filling and perfectly satisfying on the palate with all the flavor and texture contrast.
We’re going on an outing now to run some errands – library, post office, Lowes and Best Buy. Then it’s all relaxation for the evening 🙂 Dinner is still TBD but we have a good amount of fresh produce so I’m looking forward to it.

What a nice lunch and a great take on the BC recipe (which I commented previously is too garlicky, as is!). I sometimes roast the garlic, which is also delish.

That flatbread looks so good. I think the New Year’s resolution folks are so admirable, and I know everyone has to start sometime, but man, our gym was unbearable today. The weight room was so packed, I felt like I couldn’t execute a lot of what I was doing correctly.

In case you are curious, whether a hummus recipe uses tahini or olive oil depends on the region the recipe comes from. If it’s Middle Eastern in origin, it usually has tahini, whereas the Mediterranean version usually has olive oil instead.
