I’m sensing a trend with my posts – breakfast happens. Lunch happens. Naptime happens and I post. Dinners go missing!
Here is last night’s dinner via Instagram:
It was a remake of my first ever week of Cook Smarts and remains one of my favorites. Way back from 2013!!! These black bean + quinoa burgers are so easy to throw together. Tasty and healthy too!
Breakfast this morning was another stab at steel cut oats in the rice cooker. Lurrrve my rice cooker aka my everything cooker. I also made the quinoa for the burgers in it! Very hands off. Anyways, I received an email from Jenna, who is a PhD, RD helping to spread the word about the wonderful properties of oats. Check out this “Oats My Gosh” infographic she shared! Lots of oatmeal love. Jenna and I got to talking about steel cut oats over email, and she shared her perfect ratios for the rice cooker: 1 cup steel cut oats to 2.5 cups water. That’s what I set up last night!
The result was a perfectly cooked bowl of steel cut oats. HOWEVER, I realized my problem: I like my oats really porridgey! There are those who like oats very chunky (Anne P I’m looking at you!) but I like mine really creamy, so I think I’m going to try 1 cup of oats to THREE cups of water next time. Emily is the only one who has ever made them perfectly for me!
But topped with sunbutter and blueberry syrup, they were still quite yummy : )

My healthy obsession this week has been soccer. I’ve guest played in 2 games, and literally wore out my feet last night. We lost our team game, but the game I guest played in was a good one! I sort of scored a goal. Sort of because I was the last person to touch the ball a foot from the goal before someone on their team accidentally tapped it in! I’ll take it 😉
Lunch today was leftovers from our burgers last night. I sliced a burger in half and layered it with manchego cheese, pickles, avocado, ketchup, hot sauce and greens. Sweet potato fries on top!
If you’re wondering: yes it was extremely messy to eat!

I always do a 4:1 water to oats ratio with the steel cut, then add extra milk after they are finished cooking….

I’m so happy with your new (old) posting style. It’s why I originally started following your blog. I do miss Mazen pictures on days he isn’t featured????????. He is so adorable I can’t help but smile and be happy when I see him. He reminds me of my youngest who is 6 now. It goes fast. Everyone told me that & I never realized it until one day in suddenly had no babies, toddlers or preschoolers in the house!!

If you like the way Emily made steel cut oats for you, her recipe says she uses 3/4 cup oats and 3 cups liquid 🙂

I’m going to try that magic formula for perfect rice cooker steel cut oats. I love steel cut oats but I don’t make them nearly as often as I’d like because I just don’t want to stand there and cook them!

I once made the most perfect steel cut rice cooker oats but I can’t remember the ratio! I’ll have to try the 3 cups to 1 cup next. I also wonder if soaking over night opposed to making right away makes a difference??

Can’t you just add a little more oats/water and microwave? Is that heresy? It’s what I do to get the perfect consistency for my toddler to pick up in chunks.:)

<3 creamy, loose, porridge-y steel-cut oats! I make them in the slow cooker overnight with a kind of bain-marie (water bath) arrangement. 1 cup oats + 2 cups almond milk + 1 cup water = smooth, soft oats. Mix it up in a bowl with cinnamon, grated apple or mashed banana, and a little brown sugar. Set the bowl in the slow cooker, and fill the cooker with water almost to the rim of the bowl. Don't put the bowl underwater! Cook on low overnight and enjoy a delicious breakfast.

I’m the same way, I do 5:1 water:oats ratio when I make overnight steel cut oats on the stove and that’s about perfect for me after I add it a banana in the morning to thicken it up a bit. 🙂 I’ve made them in the rice cooker but don’t remember the ratios, I do remember I usually had to add back in a bit more water when I reheated.

If you want oats in general to be more creamy or “porridgey”, I really recommend swapping out some/all of the water for milk. I make steel cut or whole oat groat porridge by:
1. bringing the oats to a boil just covered in water the night before, turning the stove off and letting them stand overnight with the lid on;
2. tipping off any excess water in the morning, adding milk (roughly 100ml per serve) and then cooking them for another 5-10 minutes until they’re really creamy.
I make rolled oat porridge using *only* whole fat milk (no water at all) and letting the oats soak overnight in the fridge (i.e. 40gm oats to roughly 200ml milk). Works perfectly – amazingly creamy!
I often read that the Scots traditionally made porridge using only water… and then served it with a bowl of double cream to dip each spoonful into 🙂

I’m loving this style of blog posts lately! I love my rice cooker! It was your review that pushed me to buy one.
Have you tried brown rice for breakfast, instead of oats? I never thought I would like it but wow, it’s delicious!! The texture is very sticky and goes well with the sticky nut butter. It’s super easy too, if you use leftover rice.
