The last one!!! I suppose it’s time to reveal the mystery: the recipes are for the 2010 Annual Weight Watchers Cookbook! So you see now why it’s not “my cookbook”
I hope you all will still want to buy it! These 26 recipes were way more work than I ever anticipated. They added another component of my nightly computer reporting (ingredients, instructions, nutritional analysis) and there was a certain stress to make sure they turned out OK, but I am still so glad I accepted the project.My lunch was really filling today (and probably because it was heavy on fat from the creamy soup/chicken salads/salmon/cookie) so I didn’t need a snack.
We started dinner prep around 6:30. The base of this dish is salmon (d’oh I shouldn’t have had it at lunch!) and the top is the mystery (although I gave you a big hint!).
On the side we cooked up a bunch of purple bean pods from the CSA. Yes, these were DARK PURPLE when we put them in the pot and the husband exclaimed mid-way through cooking “They turned green!!!” It was a magic trick.
I covered mine in a few dabs of Smart Balance and some Maille Mustard, the best mustard ever.
About 10 bites into our meal we decided it was missing a starch and I jumped up to toast a cheese bun that the husband made last night. Excellent! We each got a top half and a bottom half –

A little bit later I took a study break for some All Natural Strawberry ice cream. I am usually a chunky chocolatey toffee mix-in type, but for some reason I just LOVE this strawberry. It’s just like eating cream but only 120 or 130 kcal per half cup.
I got a good chunk of Micro studying finished today. T-24 hours until my double tests!!

i got these gorgeous purple peppers the other day, and barbequed them for supper. i was SO SAD when i went to flip them over and saw that they turned green. from now on, purple things will be consumed raw so they can retain their beautiful purpleyness.

Good luck studying for micro. I was a micro major in college but I’m not sure how much I’ve retained. Probably not much. I’m more of a genetics person now…human genetics, not micro!

Wow! Weight Watchers cookbook? That’s really cool. I did WW for a while and their cookbooks are usually very good. I’ll have to remember to pick it up when it comes out.
I never knew there were so many purple veggies until this years CSA. I had purple peppers, cauliflower, and beans this summer.

That is exciting news, Kath! Thanks for revealing your secret! Though I don’t follow ww anymore, I lost a significant amount of weight following their “core” plan. I still say to this day that even though I don’t diet, core changed my life. It really gave me a good start on what healthy foods are.

Just wanted to clarify: I didn’t design ALL the covers. Just the ones published by my employer (Wiley): , WW New Complete Cookbook, WW All Time Favorites, and WW in 20 Minutes (not out yet). 🙂
Too bad the book you worked on is by Oxmoor – I won’t be working on that one then. 🙁
