If you’re looking for something unique to bring to a holiday gathering this year, consider a Blue Apron box for inspiration! Especially if you have family in town over the holidays, all the more reason to cook up a recipe together. I enjoy Blue Apron the most when I divide and conquer a recipe or two with friends.
While most Blue Apron recipes are intended to be served as gourmet dinners for two people or family-style for four, many of the recipes also make great appetizers (the empanadas!) or side dishes. This year they are offering special Thanksgiving Side Kits just for this purpose! I don’t know about you, but the last place I want to go during Thanksgiving week is the grocery store – skip the long lines and let your ingredients come to you.

This latest Blue Apron dish – Spiced Cauliflower & Jasmine Rice with Poblano Pepper & Cilantro-Yogurt Sauce – was one of my all-time favorites! And as a vegetarian dish, I thought it would make an excellent addition to any holiday table.
The ingredients were all so GREEN! (So fresh and so green, yo.)
Check out this beauty of a cauliflower.
This recipe was simple to make, yet full of flavor. The cauliflower was cooked once in a skillet, then tossed in rice flour and a spice blend, and returned to the skillet for a second session to crisp it up.
Boy, did that sweet chili sauce make the recipe! That’s an ingredient I would not otherwise have had on hand, and I want to hunt some more down!
The spiced vegetables were served with crunchy roasted cashews, nutty jasmine rice, and a cool cilantro-yogurt sauce that I could not get enough of.
This dish was great as a light dinner (and even better for lunch the next day!), but as a side dish at this year’s Friendsgiving I know it will be a hit as well.

How gourmet! This is the first year we’re celebrating thanksgiving with both sides of the immediate family in our new home. We’ll be responsible for cooking. Blue apron seems like a great idea!

I’m curious what you mean about “gourmet meal for two or family style meal for four”. We have used BA in the past and we just get a double portion for our family of 5. It’s the same food, how you serve it (plated or family style) is up to you- or did I miss something? If there is a different family option I’d love to hear about it! Thanks!

They offer two types of box plan: the 2-Person Plan (2 or 3 recipes, 2 servings) and Family Plan (2, 3, or 4 recipes each with 4 servings). The price ranges from $54 to $139.

Blue Apron is such a great date night idea! Would be fun to do this with my man. My favorite holiday dish to make is carmelized squash and brussel sprouts!

But how do I know which sides they are offering?

It’s the meal plan for the week of Nov 20th – the dishes that week are particularly Thanksgiving friendly.
