We realized we have the following in our fridge last night: a leftover tortilla going on a week and a half, a bagel going on a week, 2 potato buns, 3/4 of a loaf of bread. And I’m going in vacation in 2 days! So bread was required as the main part of breakfast this morning.
I decided on a PB&J Banana Roll-up and some yogurt with granola.
Plus hot tea. This breakfast was actually a little too much this morning since I wasn’t really that hungry.
I’m trying to get to the gym sooner rather than later today because I might hit the mall a little later. I have about 10 coupons and a few gift cards that have been patiently waiting all summer for me to have time for a mall trip. It’s quite gloomy out there today – I hope the sun comes out soon!

You commented yesterday on the dinner post about Ocrakoke Is. in the Outer Banks. There’s not much there, a lot of little shops which are really cute and a lot of desserted beaches (you can drive on them, so hopefully you have a 4×4!). I’ve never stayed there, but we make day trips everytime we go and always eat at a place called Howard’s Pub. You’ll pass it on the right on the one road into town. The food is mostly typical bar food, but its tasty! The atmosphere is great, and they have a really big beer selection. I’d reccomend the Conch fritters-so good! I also always see people riding around on those little scooters. I’ve always wanted to do that, but never have. Have a great vacation!

Hi Kath, I usually freeze most of my bread products, from tortillas to sliced bread. It fairs really well, especially if you usually toast bread.

I always freeze my bread too cause I HATE wasting food, and most of the time, my grocery store does a buy one get one free type of deal. i just pull out what i need and either give it an hour to freeze on its own or thaw it in the microwave.

I’ve been reading your blog for a while, but I’ve never commented. I woke-up this morning feeling very thankful for my healthy body and I just wanted to let you know. People like you and Kristen at Eat Like Me have taught me so much over the past year. I really had no idea what I was doing to myself every time I took the easy way out and ordered a big greasy pizza. Every time I ate the fast food because I was too tired to cook. And, sadly, every time I fed it to my children. I didn’t understand the correlation between my fatigue and the foods I was eating. I wasn’t even necessarily overweight, but I controlled my weight with prepackaged this and artificially sweetened that. Thanks to people like you who are willing to share their knowledge, and yes, their struggles, I have overcome a lifetime of bad habits. Now I am strong and healthy. And, so are my children. Oh, I love sales! I’m trying to decided if I want to go school clothes shopping or not this year. I really don’t need anything and my closet is overflowing as it is. But it’s still super fun to buy new things- have fun!

Jenny, great story…it must be very rewarding for you…also for Kath and EGN and everyone (I lovingly call ourselves the “peanut gallery”) for sharing their tips as well as their ups ‘n downs. I find I learn equally from peoples’ struggles as their triumphs.
And yes as EGN, I freeze my bread products, especially those that have no preservatives, as they can get green and fuzzy in no time flat- even in the fridge!!
