Spring might not be here for a few more weeks, but today I am pretending it is April.
Not only is it a gorgeous day, but I walked to the bakery in SHORT SLEEVES!
Matt is on a field trip today, so I’m big boss for the day. It’s kind of scary to think that I’m running the biz by myself. But I’m not really alone – the crew is awesome!
I snacked on a slice of our brand new whole wheat Very Berry bread [cranberries, dried blueberries, golden raisins] and then had a sandwich for lunch at 1:30.
A killer Jenny-made pimento cheese with cucumber, tomato, lettuce and plum chutney on Cville Crunch.
It was incredible. My new favorite sandwich of ours!
Honest Tea on the side.
I have quite a bit of ordering to do, and then I am headed out into the sunshine! Dinner plans with Karen!

Cait @ Beyond Bananas says
It sure does feel like spring out! I have a feeling it won’t last up here in the north east though (annd… I’d be lying if I said I didn’t want a snow day or two as a teacher…)
Michelle (Better with Berries) says
Ohh that bread sounds so good with all of the berries mixed in! I am loving the mild winter this year – although I do wish we could have just one good snow!
Angela @ Eat Spin Run Repeat says
Enjoy that warmth! Oh to be able to go outside in short sleeves.. or without a jacket even!! Come onnnn spring!

Kerry @ Totes My Oats says
Gosh that sandwich looks like heaven! Sandwiches are my favorite lunch.
Jen says
It is spring there! Jenny knows her sandwiches well 🙂 Do you let staff eat for free or do they get a percentage off food there? When I worked in food service we were given a reduced price for certain items but not all free (understandably!)
KathEats says
They get a sandwich, coffee/tea, a sweet and a loaf of bread per shift. Since some of them work everyday, it’s a pretty sweet deal 🙂
Jen says
That is sweet! I’d work for the bread alone! 🙂
Erin says
Holy cow! A whole loaf in addition to free lunch every day?? That IS a sweet deal. I worked for a grocery chain (in Richmond) for 8 years through HS and college and we didn’t even get a discount.
Jane says
That sandwich looks amazing!
I also have a question about your GH pancake mix….can you tell me what needs to be added to make pancakes? My label wore off, so I have no idea what needs to go into the mix. I checked the GH website, but couldn’t find any instructions. Thanks so much! 🙂
Enjoy the beautiful weather!
KathEats says
Here it is digitally Jane. Sorry about that!

I was sunny here in Buffalo most of the day too. I considered taking the twins for a walk…..but when I went outside with my second-graders I realized it was just a bit too windy. Plus, now the sun is gone. Oh well, at least I got to enjoy it earlier!
Hannah @ eat, drink, and save money says
Hope you have fun being the boss!
The Mrs @ Success Along the Weigh says
Enjoy the beautiful day boss lady! 😉
Kristen @ Change of Pace says
This has been the most gorgeous day ever! Cooler weather but not too cold. Not a cloud in the sky. Delicious lunch as always!
Rachel says
I stalked our local GH and determined that they make Dakota tomorrow. I might have to swing by and give it a try.
Gina @ Running to the Kitchen says
I’m hoping these awesome spring like days make the trees pop a few weeks early up north. I love when the temps warm up but it doesn’t truly feel like spring until I see GREEN!
Christine @ Oatmeal Bowl says
OMG! That sandwich looks delicious. Having all that good bread around might be a problem for me if it was my bakery. lol.
Jamie @ Don't Forget the Cinnamon says

Lauren @ What Lauren Likes says
Short sleeves?! Woah I am jealous of that weather…and that sandwich 🙂
Chris says
Please please do tell how you make pimento cheese – I’ve only bought it packaged at Harris Teeter since I moved South but know there must be a secret Southern recipe.
KathEats says
I can’t share THIS recipe, but Kelsey’s Pimento Cheese is the one I use at home! It’s great and lower fat:

Jen says
Real southern pimento cheese includes Duke mayonnaise (the full fat kind) and sugar. My mom swears by this and her pimento cheese is well known round these parts. 🙂 Obviously it’s not something you’d eat every day, but it’s a nice treat.
Zoe @ loseweightandgainhealth says
That sandwich looks amazing. I have been looking for some pimento cheese here in England but haven’t ever seen it. I like sweet (plum chutney) with cheese too 🙂
Maria @ Sinfully Nutritious says
Oh my gosh that sandwich looks goooooood. Sandwiches may be on the dinner menu here tonight, inspired by you! Thanks Kath.
Susan H. @ The Food Allergy Chronicles says
Yummilicious sandwich!!! Love the sound of the berry bread too! Lots of running around for me today…started off in my long parka…moved to the short parka…then just a vest! Beautifully sunny and springlike today…even saw a convertable with the top down and I was driving with the window down to breath in all that springlike air…aaaaaaaahhhhh!

Plum chutney and pimento cheese?…only a boss would throw down such big players for a casual lunch adventure…deelish!
Emily @LivingLongfellow says
I’m not even sure how that weather is possible in January. We had some wacky weather today. Our school playground was covered in mud and water, in Minnesota! Isn’t it fun stepping in and running the show occasionally?

Your counter space looks a lot bigger than I thought it was–great for an array of products and such 🙂
