I had two of the yummy PB + Saltine sandwiches during the taste test portion. Perfect tide-me-over since my breakfast did not do a very good job this AM.
But then the real party started –
Kelsey wins lunch of the year!!!!
I was handed this huge bag of goodies when we arrived on campus –
With a welcome napkin and a little B+B promotion 😉
I unpacked a plate, a bag of tortilla chips, and a banana plus my insulated lunch box
I found silverware (including an African spoon!) wrapped neatly together
The star of the show was this AMAZING black bean dip!!!! I’ve said it before and please allow me to say it again – KLM is truly a master mixologist! The dip was made with a ton of things (tomato, olives, spices?) plus cheese, green pepper, hot sauce and avocado.
I ate it with my bag of chips as a scoop. Kelsey packed a LOT of chips though, so I only had about 75% of ‘em. This dip was AWESOME!!!
I also found a selection of yogurt + fruit + cereal
But I am saving these for a snack because the beans were very filling (and took me a while to eat, which was fun).
About half a cup each of pineapple, mango, TJ’s greek and Kashi Vive –
Lastly, the banana (hey, I didn’t have one today!) with my packed Clif Bar for Clinical. Not sure if I’ll need all of this, but I might just enjoy them all and then skip a dinner when I get home late if I’m not hungry. I love having all these fun choices!

Your friend’s dip looks fabulous and just inspired me to make something like that for tonight’s dinner. I have a bunch of random vegetables and beans left over ,and I was just going to put it in a warp. But making a dip out of it all will be perfect for eating while watching Lost.

so oils well that ends well. heh heh, couldn’t resist. Fun lunch! May I suggest, Newport, RI as summit spot? It’s right near Johnson and Wales, phenomonal culinary school and they have a reasonable priced conference center and Newport has awesome ambiance, restaurants etc. I’m here right now!

Thank you for sharing your insight and emotions as you work toward your goal of intuitive eating. It is a journey we are all on and is an individual path we customize to our unique lives and circumstances today and as they change. I have enjoyed a number of books but am fitting together pieces of each that resonated with me (I see you do this). Each day is different and I am learning a lot from each struggle but I can’t say it is always comfortable in regards to hunger or emotions that it brings up.
You mentioned that you were reading Betheny Frankel’s book Naturally thin. I had read it and felt that most people, unless they were as busy as she is, would have a challenge eating her diet and feeling satisfied. To eat what you want and sacrifice in other areas so it does not result in weight gain is a nice idea however if you don’t choose foods that are filling and satisfying then it is very uncomfortable. You wrote the article about being biologically programed to gain weight. I think many of us would gain some or lose some depending on where we were starting from. But this being said how can we be intuitive eaters like our ancestors were given our drastic change in environment, type of food, availability of food, mixed messages and emotions related to food in our society, and current political/economic environment. I don’t know if intuitive eating can exists in our current culture. When you went to Africa you probably didn’t see many overweight people and really saw a group of people who still do live with the hunter gatherer survival mindset where food holds no emotional burden as it does for Americans. Most people who are thin have intuitive cues they can hear but must make conscious choices to follow them as best they can which seems to be Betheny Frankel’s approach. Interesting topic and again I appreciate what a good example and honest approach that you share with us.
On last fun new product if you have not see in it are the minibix chocolate crisps that are fun as oatmeal/yogurt/ice cream toppings or as a quick snack.

Palm oil beats trans-fat, hands down. It’s a wee high in saturated fat, but that’s better than trans-fat. It’s got mono and poly unsaturated fat too.
But the problem is sustainability and the destruction its cause in Malaysia and Indonesia. So it’s not the ideal replacement.
But even the CRUDE oil folks said to eat palm oil over trans-fat, but ultimately even simpler products are best.
