My afternoon was not all that unlike a toddlers’…
Snacktime… [Oh’s, milk, PB]
Naptime…
Playtime at yoga!
I ruffled the bedcovers a bit when I took a 20 minute power nap this afternoon and didn’t bother to remake the bed neatly. And hilariously, the boy who never made his bed in college just yelled this down the basement stairs:
“Why is the bed all unmade!?”
He was clearly disturbed. He even makes the bed when I travel now! Says it’s more comfy to get in at night : )
Karen came over tonight and we had a ‘fancy’ weeknight dinner to celebrate.
Grilled asparagus and 3 huge pork chops that our friend Pig Guy gave us.
Matt grilled them up in a pineapple jam glaze. Seriously, the best pork I’ve ever tasted.
And we had herby brown rice on the side.
‘Twas a filling meal (and I only ate about 1/3 of my pork – lots of leftovers!)
Reading time!!
Katie @ Peace Love & Oats says
that dinner looks delicious! And I think we should all live like toddlers a little more often, they know how to do it right.
kathleen @ the daily crumb says
that pork chop does look delicious! mmmm and the rice. glad playtime was fun this afternoon 🙂
Lori says
Dinner looks wonderful! Can you share the recipe?
KathEats says
It was literally just pork rubbed in a pineapple jam and grilled!
Madison @ Peanut Butter Lover says
Hmm… Those pork chops look delicious! I’ve been trying to convince my family that pork chops don’t always have to mean Shake N’ Bake. Now I just have to show them these lovely pictures and I’ve got my ammo ready to go 😀
Kaila @healthyhelperblog! says
Mmm I am craving some simple brown rice now! Haven’t had a nice rice dish in forever! I always kind of forget about it as an option for a side!
jassy says
looks enticing…i love brown rice…it’s healthier than white rice
mary @ minutespermile says
Was just talking about how I want to eat more pork! My boyfriend is in Vietnam at present where apparently pork dumplings are all the rage. Definitely a meat I don’t think about enough.
Kerry @ Totes My Oats says
Yum! That dinner looks awesome.
Julie H. of Spinach and Sprinkles says
I feel like I struggle to eat meat to get in the protein — I just don’t want meat at night but that is the only meal I have the time to cook it/eat it since it’s the only meal I get to get at home.
It looks delicious though! I don’t think I’d have a problem with those pork chops with that glaze! Mmmm!
Averie @ Averie Cooks says
Giving any meal a “best of” or “best ever” is high praise. That pineapple jam glaze sounds heavenly!
Laura Ann says
I tried PB in my cereal after seeing it in one of your photos, but it seemed kinda strange.. as much as I LOVE PB, I just couldn’t get into it. 🙂 Do you mix it around in the milk?
KathEats says
It is kind of strange. I don’t really mix it… Just blob it around
Kati Mora, MS, RD, Kellogg's FiberPlus(R) Wellness Advocate says
Looks like a great day – toddler-like or otherwise. And your cereal looks so cute in a mug! I love doing the same – makes for a great snack now and then.
Mary Legare Whaley says
Haha! The bed-making situation is hilarious. And THAT is why I make my bed every. Single. Day. It really does feel so better (and cleaner…) to get into a bed with the sheets all crisp and folded over. I could never hop into a disheveled bed. Ew. If unmade beds were awesome, every hotel would just toss the pillows and comforter aside. Instead, they pile on like 15 throw pillows (which I, of course, throw). =)
Cait's Plate says
Can’t beat an afternoon doing like toddlers do – they’ve got it pretty good 🙂
j3nn says
Dinner looks great!! Home-cooking is the best.
Dustin does the same thing with the bed now; never used to make it, now he does it all the time!! 🙂
Amanda @ Veggies n Dogs says
My favorite meals are when they consist of a single protein, carbohydrate and a vegetable on the side. Makes it feel so wholesome!
Catalina @ Cake with Love says
we had pork chops for dinner too, you look much better since they are grilled, it is too cold in NJ to grill outside, at least is cold for me, so we just fried them by they were a little tough! 🙁 and I lobe PB and cereal somehow I forgot about this combo for sometime it is time to bring it back!
Tiffany says
What are you guys celebrating anything particular or just Celebrating a happy Tuesday and a baby on the way 🙂
KathEats says
Just a Tuesday
Grace @ Grace Dishes says
I love sweet and savory dishes! Pineapple with pork sounds divine 🙂
Katie @ Creature of Habit says
Haha I totally know what he means about the made bed being more comfortable to get into at night.
Molly @ RDexposed says
Toddler experience would be complete if one of the bears joined you for the nap!
Allison k says
It is more comfy to get in a made bed! I hate feeling rumpled sheets on my feet and legs!
Chelsea @ Designs on Dinner says
I have found jam/preserves/marmalade, etc. to be one of the easiest, and tastiest, ways to prepare meat! Your dinner looks delicious. And I had to laugh at the bed-making dilemma–I hate climbing into an unmade bed, but my husband thinks it’s more comfortable. Hopefully, he’ll adopt Matt’s way of thinking someday!
Khushboo says
I have to make the bed every day- otherwise getting in at night isn’t half as enjoyable!
Michelle (Peachy Palate) says
Brown rice and asparagus, yum! That is a whopper of a pork chop, another gorgeous looking plate of food as always Kath!
Erin says
Funny. My dad hates it when my mom makes the bed. If he goes to go to bed before she does and he sees that the bed is all made up, he’ll ask her to go in there and “fix the bed” for him.
Brittany @ Itty Bits of Balance says
Haha, my boyfriend Will NEVER makes his bed. I hope that this is some form of foreshadowing 😉
Cait @ Beyond Bananas says
That pineapple glaze sounds good! I am not a fan of pork, but I bet it would also work well with chicken!
Susan @ Lawrence 785 says
Ha ha, I’ve heard people say they can only be bothered to make their bed before they get in it! I’m a morning bed-maker though. Still working on the training-the-sweetheart-to-do-the-same part………
Shana says
It really DOES feel better to get in an already made bed at night. I just feel dirty if it isn’t!
seana says
Is your baking pan from Williams-Sonoma? It looks just like the ones I have. I love them.
KathEats says
Yup. I don’t love them though… They get so strained!
seana says
I don’t mind the staining so much. However, I don’t put the actual stuff on it when I bake cookies. I just cover it with a Silpat sheet so nothing from the pan comes off. I even use the Silpat for making things like pepperoni bread. It’s so easy to clean. But, I hear ya’ with the staining part. I like the way they heat evenly.
Susan H. @ The Food Allergy Chronicles says
Plum and Fig jams work well too! Those pork chops are huuuge! The asparagus looks sooo good too!
Jodi @ Jodi, Fat or Not says
I have asparagus in my fridge that are begging to be eaten…will be roasting them tonight!
Hope @ With A Side Of Hope says
I’ve never had pork chops before. They look tasty though! I love roasted asparagus. 🙂
Katie says
Was the jam from GH? I used the Stonewall Kitchen Peach Amaretto Jam and Maple Maine Champagne Mustard mixed with some maple syrup and pineapple juice to glaze a Trader Joe’s ham, delicious! It’s nice to have a friend like Pig Guy, my dad was a Pig Guy so we always had pork in our freezer and beef that and chicken that we got from friends. How nice to be able to get together with Karen during the week. I think a toddler’s life is pretty ideal, we should all be allowed to follow their daily schedules.
Fran@ Broken Cookies Don't Count says
I always forget about roasting asparagus. Need to do that again, soon.
Angel7 says
I love grilled asparagus, and especially when it has a little char on it!

That meal looks SO delicious! I’ve been meaning to buy pork chops for weeks. Where did you get the pineapple jam? Or did you make it??
KathEats says
A blog reader gifted it to me
IRISMES says
I’ve been looking for simple recipes to make some chops my Dad gifted us this weekend and this might be it. I’ve always made them with apricot jam, a dry rub or apples but I have a few pineapples at hand so this gave me the brilliant idea to mix the two. Now I’m off to see how I execute this 🙂
Shelly says
Those pork chops look awesome. I’ve never tried jam as a glaze. I will now!
