We had such a great week at the beach. I’m sad it’s over, but I’m always a little happy to get back to normal life. (Although, I do wish normal life had waves and a breeze like Bald Head!)
We continued to have fabulous weather, and spent a ton of time at the beach and the pool.
Mazen made friends with other boys on the beach, and he loved playing with Uncle Matt in the “wabes.”
Also, here is proof that I did swim in the ocean a few times 🙂 Mazen loved going in with Grammie and me and pretending that he was a sea turtle.
When we weren’t swimming, or rolling around in the sand, we might have been seen drinking an afternoon beer;
snoozing on the lovely porch,
or reading.
I finished two books during the trip and can’t recommend either enough! Her Nowhere is about a woman who is working on an organic farm in Sweden, and throughout the course of the book, you learn why she is there. It was beautifully written. One True Loves is about a woman whose husband supposedly dies in a helicopter crash. A few years later, she falls in love, and is engaged to be married when her husband returns – having been stranded on an island the whole time. (This isn’t a spoiler – it’s in the description). The story is about who she decides to spend the rest of her life with, and I LOVED it! It also has great writing and a good storyline.
On the meal front, here were some breakfasts.
For lunch, I often ate a ton of chips. I don’t know what it is about me and chips at the beach!! Obsessed! I also had this spinach, pepper and cheese quesadilla.
And, leftovers from our low country boil.
The low country boil was the meal that I was in charge of on Friday night. Wish we had had a bigger pot!
We had a cheese platter before dinner, during cocktail hour.
And then we feasted on shrimp, corn, potatoes and keilbasa sausage. I have added green beans the last few times I’ve made this, and they are the perfect, finger-friendly vegetable to complete the meal!
Larbs and Matt were in charge of Mexican night with chips and guac, followed by a yummy, layered Mexican casserole.
We went to the club on our final night and I had these Mojito Tacos!
It was freezing inside, so M wore this grown-up sweater. How cute is he?!
In the evenings, we ate Mom’s berry English trifle.
And ice cream with sprinkles.
And played hilarious games of Head’s Up!
Until next time!

That looks like such a pretty, relaxing place!
The guacamole is SO GREEN — was it full of jalepenos, or super dark green avocado, or what?? It looks delicious!
KathEats says
I think just super ripe avocados! I also usually add greek yogurt to mine, so it might look extra green compared to my usual 🙂

Kath, have you ever thought about moving to the beach? You spend a lot of time there and really seem to enjoy the lifestyle. As someone who lives near the beach year-round, I could see you loving it!
KathEats says
Yes, Matt and I originally wanted to move to Charleston! I would love to live there, if only a longer time during the summer. But Charlottesville has my roots now.

Do you mind sharing your recipe/method for the low country boil? It looks so delicious but so easy too!
KathEats says
Here’s the recipe – this one serves 4ish, so double or triple as needed. And add green beans with corn for modern version!

I’m with you and chips on the beach…don’t know what it is that makes that such a winning combo
Having spent a lot of time in Maui, the Kitch”n Cook’d potato chips are the hands down all time fav..but you can only buy them in Maui 🙁

I used to be able to not find my favorite chips (Cape Cod Sweet and Spicy Jalapeno) in my town in Virginia, so I used that as an excuse to basically just eat that the entire time I was at the beach (with some shrimp thrown in for good measure). I recently found them in a grocery store here, but I’m going to pretend they are beach only!
Btw, my childhood vacations with my mom were at Bald Head, so seeing your pictures always brings that back and I love your BHI posts.

Brigetta Schwaiger (the author of Her Nowhere) is my cousin! I agree it is an amazing book!!!!!! Thank you for supporting her … She worked so hard on it and published independently.

PS. I bought one true loves for my kindle and I can’t put it down. I read about 5-20 minutes every night before bed and this one is keeping me up! We are even reading it for my summer book club (which mostly means wine and snacks and occasional book discussion). Thanks for the rec!
