Morning all!!
Another early gym day in our house. We enjoyed a refreshing bike ride to and from the Y, with some ET (30 minutes) and upper body lifting and squats (15 minutes) in between.
The husband was craving Sunny Side Oats this morning, so I gave up my craving for peanut butter and granola plank to suit him.
We ended up with a fabulous combination! My portion:
- 1/3 cup oats, 1/3 cup 1%milk, 1/3 cup water
- 2 tbsp wheatberries
- 1/4 cup cottage cheese (I’ve never tried this before – it was awesome!)
- 1 egg, runny yolk
- 1/2 piece bacon, crumbled
- 1/2 oz goat cheese
- Basil from the garden for garnish
I loved the cottage cheese and will experiment with other ways to incorporate it. And of course goat cheese is good in anything!
Plus a cafe au lait on the side –
I have a presentation today in Nutr. in the Lifespan, then a lunch date with my friend Liz, then Foodservice class, then the next 24 hours are devoted to studying for my BACK-TO-BACK Micro tests tomorrow night! Almost halfway to the weekend!

Goat cheese rules! I’d like the breakfast, but I don’t like runny eggs, they almost have to be overcooked to eat!

I LOVE cottage cheese in my oats! Ricotta is great, too! I like adding it with figs, dates or berries. Definitely try it!

Hey Kath… I know you’re very busy, but I just wanted to run something by you… When you were losing weight, did it happen really slowly? I’m doing CK and working out almost every day, but I’ve only been losing a pound or less every week. Oh wow, Kath, that breakfast looks AMAZING! Goat cheese, eggs, and bacon over oats and wheatberries are such a winning combo! That looks like something out of a magazine! YUM I am going to have to try that…I always think of oats as something to put fruit and nuts in…but the savory combo takes it to a whole ‘nother level!

Hard to tell if they really keep me full longer. I’d say yesterday’s mostly-carb pumpkin oats held me longer because of the sheer volume. I think volume is really key for me, fiber + fat second, and protein third. But this combo certainly doesn’t disappoint.

I lost an average of half a pound a week, so I’d say you’re right on track. A slower weight loss means you have less of a negative energy balance and you will probably feel better in general throughout and won’t feel as hungry. IMO, half a pound a week is perfect. I don’t see how anyone with a normal BMI could ever lose 2 pounds a week.

I stirred in the cottage cheese at the end of cooking. It helped slightly cool down the oats to keep me from sweating through breakfast too. I don’t think I’d add it at the beginning of cooking. Not sure if the oats would properly thicken and all.

Yep, I was also wondering about the cottage cheese. Did you cook it with the oats? Stir it in after the oats were cooked? Or is it just on top of the oats before the egg?

I use cottage cheese on my oats every morning, basically just plop a 2tbsp ‘ball’ of cottage cheese on top of my bowl of oats, and then sprinkle/drizzle on the rest of the toppings (usually some runny peanut/almond butter and berries)

Lately I’ve been using non-fat cottage cheese as my morning oats topper. I love how its a bit salty with my typically sweet oats and gives it some more protein!
