Organic test went well!! Whew. 1 down, 3 to go.
After my test, I went to pick up our CSA delivery that the husband FORGOT on Wednesday. I arrived at the pick-up house (a fancy house about 15 minutes away in a country club) and knocked, rang the doorbell, knocked some more. No luck. She said she’d be home at 10:30 but evidently she was not. So I left empty handed. When I called her later on, she said she’d be home the whole time! I guess her house is so big she had trouble hearing me pounding on the door 🙁 Grrrrrrr – gas prices – rrrr!!!!
I decided to run some errands in the neighborhood while I was there and went to Lowes Foods for Chobani to pack in my lunches. Then Trader Joe’s for tubs of greek yogurt (which are $.50 cheaper than Chobani) to have when I eat lunch at home and a few more items for the week. I finally arrived home around 12:45 for lunch. Breakfast held me over well!
For lunch I put last night’s leftover tofu in whole wheat pitas I got at TJ’s. Each pita had 2 tofu squares, goat cheese, avocado, hot sauce and spinach.
On the side I had some crunch: TJ’s plantain chips and carrots.
I used to get plantain chips like these in bulk from EarthFare but haven’t had them in ages.They’re pretty tasty – a nice hard crunchy texture.
Lastly I had some of my newly purchased greek yogurt with jam and flax –

After lunch, I headed back to the CSA house (after calling to make sure the veggies were outside this time), found the veggies on the porch (one bag was molded grrrrrrrr!) and made my way back home. Then Karen stopped in with some yummy broccoli pesto (haven’t tried it yet) and we chatted for a while. Then the production crew came over from last weekend to do some voice recordings of me reading the blog. Just now I’m ready to do some studying before the weekend starts!
THANK YOU for all of your recommendations!! I ended up getting the movie Then She Found Me at the Red Box at Harris Teeter since it’s so much less $$ to get movies there than Blockbuster. Once I got home to read the comments, I wish I’d gone into BB to get one of your recommendations!!! Maybe next weekend 🙂

I just stumbled upon your site by chance… but I wanted to let you know that you’ve really inspired me! I love to exercise everyday like you do, and I enjoy eating healthy, but sometimes I find it difficult; I’m not always hungry during the day, so sometimes I forget to eat, and then end up eating a LOT at night. Do you have any suggestions for that? Anyway, I have no excuse anymore because you have SO many great tips on here! I will definitely continue to come back here, read, and be inspired!

I haven’t heard of that movie–be sure to report. OK, these are oldies but goodies, and you are young, so maybe you haven’t seen them!–MUST SEE Out of Africa and The English Patient. Sweeping, beautiful, romantic, tragic, and the music just takes you there. I could watch Out of Africa over and over again. Have a nice weekend!

Love your blog….I helped out with a Girls on the Run program 8 years ago in Indianapolis. I haven’t heard of it since but was excited to read about your group! Very cool.
Also, I love oatmeal with a spoonful of PB…my trick is to plop a few teaspoons into the bowl of hot oats and let it melt but don’t stir it. Then with each bite, I take a little bit of the melted PB..even better with a little drizzle of honey! It keeps me full for hours.

Plantain chips brings me back to spring break my junior year of college…went to Puerto Rico and the bars at the resort (including the swim up bar) all had plantain chips in little bowls to munch on…they were sooooo good! We brought bags home with us 🙂

I do all kinds of upper body lifting, so I couldn’t even begin to type it out. I try to hit each upper body muscle in each workout though: biceps, triceps, shoulders, deltoids, chest, back (I think that’s all?) I try to do free weights once a week and machines once a week. I hate weight lifting so I keep myself from getting bored (which happens VERY easily) by just telling myself I can do whatever I want. And I usually do 2 sets of 15 rather than 3 sets of ten. It’s easier on the brain 🙂

I don’t have any specific advice other than to plan ahead so you have snacks and healthy food ready when you need it during the day. If you have trouble remembering, try to eat at the same time each day. Thanks for reading!

I’m liking my classes a lot. It’s wonderful to finally be learning real nutrition (instead of just the periodic table or medical terminology). And I’m kind of liking organic chem so far too! It’s definitely the most tolerable chem class I’ve ever taken. We’ve been doing lots of case studies in my lifespan class and I LOVE those. Person has X and what dietary suggestions can you recommend and all. We just did one on pregnancy that was fun. Your classes sound like they’d be very cool as well!
