A year of delicious meals

Avocado Rice Bowls with Steelhead Trout
The recipe I’m showcasing today is one of my favorites!
As you know, I’ve been loving grain and rice bowls lately. Trout is one of my very favorite fish. Steelhead trout is very similar to salmon, and you can easily swap that in instead. The avocado with furikake (a sesame seed + nori blend) and the a spicy sauce of mayo and sambal oelek (a type of Indonesian chile paste) round out the dish. I highly recommend you make this recipe at home!!

How to make these avocado rice bowls:
Step 1: Cook the rice
The mirin that gets stirred in at the end makes the flavor so so good!! I love sticky sushi rice.
Step 2: Cook the trout
As I mentioned, you can easily swap in salmon here. Or even used canned salmon to minimize cooking!
Next flake it in a bowl with delicious ponzu sauce!
Step 3: Prep the toppings
Step 4: Assemble bowls and serve!

I started cooking with Blue Apron during the pandemic, thanks to your influence, and thought I should let you know that I echo the sentiments you captured in this post! I enjoy cooking and I LOVE food, but I tire of coming up with what to make all the time. BA lets me enjoy cooking and discover new ways of putting food together that I otherwise wouldn’t think of, without having to think about what’s for dinner. I do often modify the meals, adding an extra veggie or two, doubling the rice, etc., but I like that I can put my own spin on it and use what I have in the fridge to beef it up (we are big eaters). We use BA maybe 1-2 times a month, so not every week, but I know when we do get it it’s going to be good and I won’t have to think about what to serve that week! In summary – partnering with Kath was a good idea, Blue Apron! It worked on me! 🙂
