It’s been an active weekend ’round here!! Friday fitness class, Saturday soccer, Sunday long run. Some weekends I spend watching Survivor, sometimes I go to beer festivals, but this one was particularly healthy and ac tive!
Saturday morning Mazen and I had a nice breakfast together. Matt was actually out of town visiting the Colorado Great Harvest bakeries, so M and I were solo all week. We are glad he is home now!
Eggs, toast, orange, coffee.
After breakfast I asked Mazen if he wanted to go for a walk or play outside. He said “Mommy I want to go on a walk with you.” So sweet! We went for a short stroller walk and then finished up in the sunshine playing outside.
Miss Pumpkin came over to say hi!
Lunch was a big salad with a No Bull Burger, tomatoes, homemade dressing, manchego cheese and everything crackers.
After lunch we both took naps – M in his room and me on the couch. I haven’t had a lazy Saturday in a while, and it was nice to snooze for a bit. I don’t sleep well with Matt out of town, so I needed the extra rest!
Plus I had to rest up for a soccer game that night!
First, some chicken noodle soup (Cook Smarts‘ slow cooker recipe) for a light dinner. It’s so hard to decide what to eat before a game, and I had this about 2 hours before start. I knew if I only had snack foods I would feel hungry before the game, so I chose something with heft but not too much fiber (like a salad). I actually did feel hungry before the game, but I keep dried apricots in my soccer bag and a few of those helped until I got home.
My friend Lynsie came over with her little boy to watch M for the 45 minute gap between me leaving for my game and Matt’s arrival home from the airport. THANK YOU Lyns!
Our game was fun, but due to a guest keeper getting a red card in the first 5 minutes, we had to play with only 4 people and that kind of sucked.
I spent my whole ride home debating what kind of snack to have. There were lots of healthy options running through my head, but since it was a Saturday night I decided on a marshmallow ice cream sandwich. Deeeelish!
Sunday morning Matt made us French toast. You can always tell the meal he prepares because the food is always arranged so artfully!
I went to the grocery store after that and then realized I was supposed to run 7 miles today. Gulp!!! Totally unprepared. However, someway, somehow I found the energy to run. I did two 3.5 mile loops around downtown and finished all 7 miles! I’m planning to write a little bit more about 10 miler training in a post soon, but let me just say I was very proud of this accomplishment today.
Post-run salad topped with rotisserie chicken, cheese, cinnamon pecans I picked up from WF and everything crackers. Hit the spot! I am now guzzling water in preparation for some drinks tonight. We are going to our neighbors’ house for chili and beer. Oh, and probably some football 😉

Cute kitty! <3

When I have a long run, i anticipate it all week and night, actually! I guess the spontaneity of it just popping up in your mind could be healthy in that way that you’re not a nervous wreck until it’s done.

Well done on the run!!! It’s been an AGE since I ran any distance! The most running I do now are a few sprint intervals in classes or on the treadmill to get me sweating!! Good call on the post soccer snack!

That salad looks so good!

“…and probably some football” sums up my superbowl experience perfectly, except that 3/6 of our friends (including my fiance) are Patriots fans. When Rich asked me what my favorite part of the game was, I promptly responded “the spinach and artichoke dip.”

Fun weekend! Those crackers look amazing. I’ve been on a big cracker kick lately. Where are they from?
KathEats says
They are Whole Foods’ Everything flatbreads. From the cheese section

I was just wondering about Pumpkin the other day as the kitty hadn’t made a blog appearance in awhile!

Love making healthy balanced breakfasts for my little man too. Starts the day off right! =) And so jealous of your nice weather. It is 8 degrees in Ohio and we are completely covered in snow. Boo!

I remember when I was training for a half, 7 miles would seem like nothing… now that I’m out of running shape 7 miles seems like an eternityyyy! so good job to you on getting it done! 🙂

Same! Haha

Maybe I’m focusing in on the wrong thing but I’m super curious why your keeper got a red card in the first 5 mins!!
KathEats says
Pushing another player. He wasn’t the teams keeper. ..they needed one and he volunteered.
Michele says
How sweet of Mazen to want to go on a walk with you! Is it weird that when I saw the picture of Pumpkin I said out loud “Pumpkin’s back!!” ? 🙂
KathEats says
Haha cute!
Heather c says
A red card in the first 5 minutes? Must have been pretty pumped for the game lol
KathEats says
He was! Pushing. ..

Your salads always look amazing! What kind of cheese did you use on the chicken salad? Also, I made turkey meatballs and don’t know what to pair them with for lunch – what would you do?
KathEats says
It’s manchego! cheese of the month around here. I’d put those meatballs on a salad : )

Funny how Miss Pumpkin turns on her belly pretty much like our pup Pixie. They seem to like doing that but I’m still not sure why. I love how you eat so healthy.
