On our way to Bald Head Island! It’s my mom’s 58th birthday weekend, and the Original Four are coming together for a celebration. Cake covered with buttercream is in the trunk!!!!
Kanz opted to stay home [although he sends his birthday wishes!], and Larbs’ Matt is in India on an MBA trip!
I left Cville early this morning and drove 3 hours to Hillsborough where I loaded into my parents’ Buick for the second 3 hours of driving. Love being in the back seat!!
We ate lunch on the road.
I made egg + cheese sandwiches for mom and me on Cville Crunch [Dad declined in lieu of fruit and yogurt] This is such an easy sandwich to make.
Apple side dish
And a diet Birch Beer – my parents always have a great selection of soft drinks, so I have one a few times I year when I visit. Love anything root beer related!
I’m finding myself hungry every 2 hours these days. I snacked on trail mix on the ride down and again just a little while ago. This kind – The Hedgehog – is another from the selection coming to OpenSky. I absolutely loved the dried figs and their crunchy seeds and the pistachios (that I didn’t have to crack open!) inside.
Plus grapes!
One more afternoon snack…lovin’ stringcheese these days
We’ve mostly been chatting the whole ride, which went by fast. I tried to do some reading, but didn’t get very far with constant questions from my mom : ) My friend Meredith lent me her favorite book, but I have to say it’s been hard to focus on the older writing style!
Three cheers for anyone who identifies the fabric of my bookmark!
We missed the 5pm ferry but had plenty of time for the 6 to lounge in rocking chairs. We’re so lucky with this nice weather!
Neverending hunger called for a snack box I brought from home [also from OpenSky!] Salted Caramel 479 popcorn!
Although that excited the birds!
And mom.
We’ve just arrived in time for a marsh walk, and Larbs should be arriving on the 7pm ferry before dinner.
Clare says
Hope I look like your Mom when I’m 58 🙂
Mom says
Thanks! And thanks everybody for the birthday wishes.
Ashley says
Did I miss it? Why do you call Matt Kanz?
KathEats says
It’s a college nickname after the bonobo Kanzi
Carol B says
Like the monkey?
KathEats says
Yeah! But it’s a bonobo not a monkey 🙂
Clare says
Does the bookmark fabric have Scarlet Pimpernels on it? Otherwise I’d guess Cath Kidston.
Zoe @ loseweightandgainhealth says
Is that egg and cheese sandwich a fried egg? A classic egg sandwich in England is boiled egg mashed up with mayonnaise and served with cress which are little green shoots with a peppery flavour. Really good – give it a go.
KathEats says
Yup. “fried” meaning cooking in a skillet
Elisabeth says
I love diet birch beer! I always get a can of that same brand every year when I go down to Amish Country (Holmes County in Ohio) 🙂
Heidi Bundles Of Hugs says
I think I know what I’m having for dinner. Simple and easy! I always know I can count on you for ideas 🙂 Wish we had that nice weather its been raining here for days, have fun and happy bday to your mom! I
Elizabeth says
Fabric looks a lot like an American Girl Doll fabric (blast from the past!)?? Egg sandwich looks delish, one of my favorites!
KathEats says
YOU WIN!!!
Which one!?
Allison K says
I’m guessing Kirsten!
Gwen says
Yes, it is the light medium blue dress of Kirsten’s that does with the bonnet and boots, the dress she comes with!
Gwen says
does= goes
Allison K says
I had Samantha, but Kirsten was my 2nd favorite.
Cathy says
My daughter had Samantha too. She was so pretty.
lindzjane115 says
WOW! I’m so impressed with Elizabeth’s eyes! Now that I know, I absolutely recognize Kirsten’s dress, but I don’t think I could have seen it!
Have a great weekend with your family, Kath.
Elizabeth says
I thought it was Kirstin, she was always my favorite!
KathEats says
You guys are goood!

Caroline @ After Dinner Dance says
My boyfriend loves birch beer. I just can’t do root beer though – something about the taste of it does not agree with me!
Kathi says
I laughed at the comment about your mom kept asking you questions. 😉 I do this to my daughter as well, and I realized that my mom does the same of me. Oh the cycle! Happy birthday to your mom! I am much closer to her age than yours but relate to both of you so well. Enjoy your weekend!
Sara says
hey kath,
you may have answered this question before, but what brand of String Cheese do you buy? Have you found a good one? I’ve tried a few of the lower-fat kind, and still looking for one that doesn’t taste rubbery! Thanks!
KathEats says
Just bought the whole foods brand for the first time this week. It’s good
TeenyLittleSuperChef says
I love how you put your food in random places like plants and bushes. Definitely makes string cheese look more fun and exciting than it actually is. I hope you have fun with your family. Sounds like a good time. Tell your mama happy birthday. She looks beautiful 🙂
Anne says
American Girl Kirsten’s dress!!
Angel7 says
I love birch root beer! I have been trying not to drink much pop, since I know it is not good for the baby in my belly. But it is a good switch from water every once and a while. I wish I had some of your bubbly water that Matt makes you 🙂

Angela @ Happy Fit Mama says
I love the background of your food pictures. So festive for St. Patrick’s Day!
I don’t drink much soda, but I can never turn down root beer. Mmmmm!
Kim @ Spoonful of Sass says
If you’re going to only occasionally have a soda…PA birch beer is the way to go, but I might be biased. 😉
Mandie says
Thats my favorite soda!!! I’m not a soda drinker but birch beer is soo good!
Jacqueline@digintobooks says
This looks like so much fun! And such a good lunch!!! Have an awesome time!
Sarah @ The Strength of Faith says
Diet soda question – I thought I read somewhere that artificial sweeteners weren’t recommended during pregnancy. Is that like anything else – okay in moderation? (I always thought caffeine was a no-no too but I guess that’s not either from what my friends tell me.)
KathEats says
I don’t think drinking diet soda is ideal, but I also don’t think there’s any harm in having one every now and then. Same with caffeine (200mg or less is considered safe)
Sarah @ The Strength of Faith says
How much is a cup of coffee? I have no concept (other than I probably drink too much) …
KathEats says
A cup of drip is 80mg on average, but i think Starbucks is more like 160mg?
Sarah @ The Strength of Faith says
Huh … I had no idea. Thanks!
Bizzle says
I had to laugh @Mom asking questions. It’s what parents do best. I can remember being sooo annoyed as a teen. Luckily, I got over myself and now cherish those questions.
Pamela says
Waving hi from Wilmington. Have a great weekend!
KathEats says
Hiii!
Lydia says
Looks like a wonderful place for a weekend celebration! Wishing we were headed on a fun retreat.
Have a great time!

Hi Kath! I am a regular reader of your blog – LOVE IT – I guess I just don’t comment too often, though. I love looking through your bakery pics as well…all that fresh bread looks absolutely divine! Congratulations on your pregnancy, too! I have read the Scarlet Pimpernel, many years ago, actually – when I was in college and really liked it. There is a movie of the book, made in the early 80’s with Anthony Andrews and Jane Seymour and it is fabulous. If you are bored one evening and enjoyed the story, you should watch it. It’s a good one!
Linnea says
You look especially lovely in these pictures – glowing, really! 😉
Meredith says
Hey, that looks familiar! 😉 I remember the beginning of the book being slow, but there’s a turning point after the ball (I think) and it gets more action-packed! Although what do I know about good books, I’m on an average of 1 every 6-ish months right now, haha. I just read The Help after Christmas (yeah, I’m behind the times) and really liked it. What do you recommend I read next?
P.S. Enjoy “some beach, somewhere” this weekend! 🙂
KathEats says
I might have to save it for a time when I can concentrate more 🙂 It’s not the most beachy read out there! It seems intriguing, but I’m having trouble keeping who’s who in my head!
Carin says
Hi Kath – greetings from a sunny and autumnal New Zealand!
LOVE this post – you all look happy and relaxed! The island looks beautiful too.
Hope you all have a wonderful weekend x

I love Bald Head Island! We used to run the annual Bald Head 5 & 10k Race every year when we lived in the Carolinas! I’ve almost missed the ferry there for those 7am races…almost every year 🙂
HAVE FUN and Happy Bday to your mom!

I love the pictures with the shamrocks as a backdrop!!

Aww how come Matt decided not to go?
Erin Shmidt says
My sisters and I loved that book! It’s so good…after the second chapter. I really wish they would make a movie version of it. Wait for the ending!
