Getting up at 5:15 is never very fun but the gift of an afternoon was enough to make my week.
I got home from work at 4:30. Finished my evening work (sans dinner blogging) around 5:30 and lounged on the couch for a good hour watching GLEE!! They played my song last 🙂
While I chilled, I chilled down a Green Superfood by Amazing Grass. Using up the pantry! I wasn’t very hungry but I was very thirsty and had a slight headache so I thought a beverage would work well. It did – my headache was gone in 20 minutes!!
Then Matt and I whipped up an easy dinner and I finished eating an hour earlier than usual. Which means I have LOTS of time to relax and read in bed!!
Tomorrow’s going to be busy – I’m going to a party with my work friends in the afternoon so I’m pulling another morning workout. This time up at 4:45 so I’ll have time to eat breakfast at home.
And on to our DELICIOUS quick + easy dinner: Mexican Scoop!
One of my very favorite easy dinners.
This was a base of sautéed mustard greens (bitter but chewy good!) with frozen okra, frozen corn, and canned kidney beans. Matt used a little Garlic Gold for seasoning.
Toppings
-Nutritional yeast sprinkle for a cheesy taste (more on nutritional yeast from Emily here!)
-Avocado!
-A plethora of hot sawce
Voskos original full-fat yogurt. Thick. Creamy. Did I say thick? SO perfect as "sour cream."
Food Should Taste Good Food Does Taste Good chips. Lime are my favorite!!
My hand had fun crawling in here…
Los Chips x2
Going to get in bed while the sun’s still shinin’!
Well, I might make a detour for a House Hunters first 😉
Hannah says
Nutritional yeast and hot sauce make everything better. Yummo! (Even though it’s winter where I am)
Bethany @ More Fruit Please says
I like the idea of subbing plain yogurt in for sour cream! Good luck getting up early in the morning!
Evan Thomas says
Chips and dip for dinner sounds delightful
Lisa @bakebikeblog says
YUM – what a great throw together meal!
Lindsay @ Summit Sandwiches says
What a great idea for a fast and easy weeknight meal! I have all the ingredients ready to roll in my freezer already.
Kristin @ Iowa Girl Eats says
I love, love LOVE FSTG chips – they are so insanely addicting! I almost ate an entire bag of the sweet potato ones in one sitting once! 😯
Enjoy your evening!
Sarena (The Non-Dairy Queen) says
My 9 year old was looking over my shoulder just now and saw your Mexican bowl and said, “Yum, that looks good”! I would have to agree. Sadly, I tried avocado again and did not like it. I feel like I should…oh well. Oh, have you been to 1900 Mexican Grill in South Park? I went there on Sunday with a group and it was really good! Their chips and salsa are dangerous! Enjoy your evening! I am going to sit with my boys now.
Kath says
I haven’t been there but I know what you’re talking about. Was it good? (Other than the chips 🙂 )
Sarena (The Non-Dairy Queen) says
The service was great and the food was very fresh and seasoned well! We had a huge group there and everything was perfect! It is always a good sign when all the food is hot, fresh and served at the same time when you have a large crowd! I mentioned the chips at first, because I never eat chips and salsa because they always seem greasy and gross. These were crisp, thick and not greasy at all. I would definitely recommend it!
Kath says
Oh good! We have few meals left here, but good to know!
Monique says
NO…. you don’t have a Big Papi Boston Red Sox hot sauce?!?!??! haha, I’m not sure I can read your blog anymore 🙂
Kidding, but how awesome is House Hunters?!?!??!?! Love that show!
Ally (Girl V Food) says
Nutritional Yeast is my SAVIOR. I just got diagnosed with lactose intolerance and it made me so sad whenever my parents pulled out the sprinkle cheese. No more!!!
Lisa says
What did you mix the Green Superfood with? I have a packet in my cupboard that I’d like to try; I’ve been thinking about adding some to a smoothie, but I’d like to hear your thoughts.
Kath says
Just water. And ice. They don’t taste GOOD but they’re not bad either!
Kath says
Although adding to a green smoothie would probably be more tolerable 🙂
Lisa says
I tried one in a fruit smoothie (banana, mango, and rice milk) this morning, and it just added a mild nutty flavor.
Stacy (StacyGrowsHealthy) says
I like the mexican scoop dinner. I tried food should taste good sweet potato flavor today. Delicious!
Gabriela @ Une Vie Saine says
Open evenings are my only motivation for getting in a 6am workout…it feels so good to be able to relax all evening! Hope you have a wonderful night!
AdiFey says
O.M.G.!!! I’m drooling over your dinner, that looks awesome!!!
Hey, I’ve been reading your blog for a few weeks, wanted to tell you I love it! I’m adding you to my blogroll, if you don’t mind. 🙂
Kath says
Thanks!

Jessica @ How Sweet It Is says
I love nutritional yeast. One of my favorite finds ever.
Stacey@http://stacey-healthylife.blogspot.com/ says
I’m having a similar dinner but a little heavier on the beans. I don’t know about that avocado, it’s looking a little over ripe. 🙂
Stacie @ Imperfectly Healthy says
I love House Hunters! I feel like I watch it every day!
I missed Glee last night and haven’t had time to watch it online yet, but I can’t wait!
Robyn @ Frugal 'n' Fit! says
Whenever I go to bed while the sun is still up, I feel like a little kid again! Not a bad feeling, really 🙂
“Mexican scoop” is why I read food blogs. Such great ideas!
Chelsea @ One Healthy Munchkin says
Kudos for having the motivation to get up so early for a workout! I be don’t even know if I’d be alert enough to direct myself to the gym at that hour! 😛
Wei-Wei says
Hot sauce makes everything better. It’s a proven fact that I probably consume too much hot sauce and kimchi everyday. (It sucks having kimchi in the fridge because it stinks and gives everything a nasty taste and smell. I put apples in the fridge and they tasted sooo gross!)
Wei-Wei
Joelle says
I agree with the bad kimchi smell! You should get a kimchi fridge. I’m in Korea right now and everyone has a one!
Sarah (OC2Seattle) says
Sounds like a perfect afternoon and night! I’m totally craving those chips now!
lynn (The Actors Diet) says
i wonder if i’ll ever like okra – but you do make it sound so good!
Cynthia (It All Changes) says
That’s how I feel when I blog earlier in the day. It leaves my evening free and I don’t know what to do with myself.
Lauren says
I love having earlier dinners. Leaves so many options for the evening! 🙂
Jessica @ The Process of Healing says
YUM!! I love love the addition of okra!! Such an underused veggie..
Sydney says
Mexican scoop! Lol this is so me. I do this at least once a week, but I’ve always referred to it as “mexican mess” since I’m not a big chip eater. I just throw together whatever veggies + beans + grains that I have on hand, and top with guac and salsa. Delish and quick!
Mary @ Bites and Bliss says
Mmmm looks good! All the Food Should Taste Good chip flavors are so interesting. I’ve only tried a few of them but sure want to try them all! Nutritional yeast is another must try. It’s just so hard to find!
Heather (Heather's Dish) says
oh my word, sign me up for mexican scoop! what a great idea, and it looks so absolutely incredible! i think i know what dinner will be friday 🙂
Amanda (The Coupon Clipping Nutritionist) says
So funny! I got Voskos in the mail too and have been using the full fat plain yogurt as sour cream for the past week too!
Nora@LifeLifeEatRight says
I always wake up early to have breakfast at home. There is something so calming about waking up and having a peaceful breakfast before getting into a rushed day. Have a good rest!! YOU DESERVE IT!
amanda says
Wow that looks delicious. I do the same thing with my greek yogurt and sub it for sour cream. delicious!
Janelle says
How do you cook frozen okra without it getting slimy? Every time I’ve tried the stuff, I end up with snot.
Kath says
It’s SUPPOSED to be slimy!!! That’s okra’s personality. Just roll with it!
Maya says
I read Caitlin’s post about the Great Harvest bread and how Matt suggests not putting it in the fridge. Could you write sometime about how best to store bread? That would be great!
Kath says
There are no secrets – just in a dark cabinet (not in direct sun) and not in the fridge.
Marilou @ Mostly Healthy says
Waking up BEFORE 5 am to work out? THAT is commitment … wow 🙂
Do you sleep any better since Caitlin’s husband treatment?
Kath says
Yes, but I’m also feeling less stressed. but perhaps the acupuncture is why!
Amber K says
Oh my gosh that looks absolutely fantastic! Soooo tasty! And I LOVE FSTG chips.
A Teenage Gourmet (Sami) says
Mmm, your dinner looks good. 🙂 I haven’t tried the lime chips, but they looks like something my mother would adore! And full-fat yogurt is really a treat. 😀
A Teenage Gourmet (Sami) says
I also really want to try that nutritional yeast because of you! I probably will. . . you tempt me every time Kath.
Michelle @ Give Me the Almond Butter says
Those are such good mix-ins! We have such similar diets.
Jenn (Jenn's Menu and Lifestyle Blog) says
Mexican scoop looks delish! Like eating a healthy, chunky dip for dinner. YUM! 😀
Jenn
maxinthegym says
I’ve never tried nutritional yeast. What do you use it for?
But your Mexican scoop looks simple yet totally delicious!
Freya @ Brit Chick Runs says
4.45am!!?? Oh my gosh Kath, how do you do it!? It hardly seems worth going to bed! You should just sleep at the gym 😛
Kath says
It’s worth going to bed if you sleep for 8 solid hours!! You just have to get in bed earlier.
Annie @ stronghealthyfit says
That dinner looks SO good. I love everything in it!
Emilie @ One Mom in Maine says
I went to bed last night when it was still light out too…. it was awesome.
Can you tell me where I can get the cup/ shaker thing that you drank your amazing grass in? I’ve seen then in other photos, and would like to get one. Thanks!
Kath says
It’s an Amazing Grass shaker 🙂 I got it at last year’s Healthy Living Summit
Lindsay @ The Ketchup Dairies says
I LOVE the idea of a scoopable dinner! I am on a quest to make cooking as easy as I can in the hot weather and this is just the kind of idea I needed before creating my shopping list! And, more importantly, thanks for pointing me in Emily’s direction. I’ve had nutritional yeast for a long time, but I don’t know what to do with it! Haha.
