Mornin’ y’all!
I knew today would be 100% an oatmeal day and wanted to make a fabulous bowl of pumpkin fun.
My initials – Katherine Anne Younger. That is a Y on the end there, I promise!
The mix:
- 1/3 cup oats, milk, water, pinch salt
- Half banana
- ~1/3 cup pumpkin
- ~1/4 cup Daisy Cottage Cheese
- ~2 tbsp cooked wheatberries
- ~1 tbsp ground flax
- IKEA cookies
- 2 tsp of Costco PB, drizzled off the spoon by my finger, which was a very effective method to increase surface area!
Delicious coffee

I hit a road block with the Gmail videos – As predicted, you guys used up all the Bandwidth at Screencast.com in a matter of hours! I am working to upgrade my Jing account, convert the videos to MP4’s and upload them to YouTube. Should have video #2 at lunch!
In the meantime, here’s Episode I on You Tube if you missed it earlier this week:

Hi Kath,
Hope all is well. Just curious on the Costco PB. I’ve seen it and been tempted to buy it, I usually go crunchy, but the kids and hubby like creamy and I buy them Skippy Natural.
What flavor of PB would you equate the Costco one to? I noticed it only has roasted peanuts and no other ingredients like palm oil, so I was curious of the taste.
Thanks!
Jonna

LOL love the Y. I totally see it! 😉 Thank you so much for that video. I went straight and changed everything like you said the other day. I’m still fiddling with it to figure out the labels and inboxes, but I’m sure it’ll really help. I really like the fact that I change my signature so it shows up under my actual message (rather than at the very bottom) when I ‘Reply’!

I am going to break into my Pumpkin Stash this weekend! How nice to be going away for a few days. Enjoy your trip!

In elementary school my friends and I used to joke about what we could make our kids initials spell. We were always trying to figure out ways to spell stupid things like @$$ and poo. Ah, to be a kid again. 😉

Congrats on your nomination. I’m so happy to find your blog through the nominations. What an incredibly healthy way to eat! I will definitely have to take some of your lessons to heart and pack better meals for when I’m working long shifts at the restaurant.
Congrats on the well deserved praise.
Best,
Brooke

I love the idea of cookies with your breakfast. I always make my breakfast a little extra special when I have a long day ahead of me, but I usally perk up my oats with a little bit of nutella…I’ll have to try a cookie on top when its one of “those” days!!
BroccoliHut says
My last name starts with Y too, so I am quite familiar with the lack of “Y” cookies/crackers etc. Sheesh–no respect for those of us at the of the alphabet.

Jonna,
Have you had Trader joe’s PB before? It is very similar to that, but less runny. Does Skippy have sugar? This obvi. doesn’t so it’s not very sweet, but very roasty. It’s only about $6 for two HUGE jars so I would def. give it a try. You could always eat it yourself if they don’t like it 🙂
Brooke,
Thank you and welcome!
Kath
Lindsey says
Hey kath!
I’ve been mixing flax into my breakfast every morning (similar to what you did here) and was wondering if this was ok? Can you over-eat flax?
This looks delicious by the way!
Thanks, Lindsey
Kath says
Lindsey,
I think a daily dose of flax is great. A few tbsp a day is great. I wouldn’t eat it by the cup 🙂
Kath
Jonna says
Hi Kath,
Thanks for the info. Have not yet tried Trader Joe’s (just their almond butter) and I’m glad you told me the Costco one is not as runny. Skippy Natural has 3g of sugar per 2T, it’s not overly sweet. I will have to give the Costco one a try.
It’s amazing how many nut butters I have tried since reading your blog. I’ve even made some. I got some great fresh honey roasted PB at Whole Foods and just bought a bag of Trader Joe’s Honey Roasted assorted nuts and am going to try making some Honey Roasted nut butter with that.
Have a great trip!
Jonna
