Sadly my to-do list has not made much progress! We did get in the grocery shopping though. And I caught up on some blog reading (I didn’t get ANY read while at BlogHer). And we had a conference call with Great Harvest!
We were scheduled to workout right before the call and then had to postpone, and then it was 1:30. We could have gone, but I knew I would want to rush it to come home for lunch so we decided to have lunch first, digest and then go. So we’re still stinky in workout clothes! Ew.
We had one piece of chicken tender left from last weeks grill out that I knew had to be eaten today or never, so I decided to incorporate that into lunch.
Then I thought about our new lettuce.
And decided to try out a Polly Chicken + AB Wrap!
I took two lettuce leaves and put in the shredded chicken with some hazelnut butter. Obviously anything with nut butter tastes delicious, but I have to say that the lettuce kind of diluted the flavors!! Still good though : )
I had some Dakota toast with Rhubarb Ginger Preserves on the side
And a plum
And a pickle

The AB + chicken + lettuce combo looks so different, I’m almost afraid to try it. I have to remember that a lot of my favorite dishes have some sort of nut combined with chicken, beef, or tofu. I’ll have to try this one soon 🙂

mmm, your lunch reminds me of my favorite thai dish – chicken sataay in lettuce cups. gym visits are always more productive when the stomach isn’t hungry 🙂

What a unique combination. I can definitely see the high water content of the lettuce overpowering the others. But it’s probably fairly filling!

I like how you basically had a deconstructed sandwhich for lunch. You could have had the lettuce and chicken on the bread, but instead you had two separate parts to the meal. You’re the volume-eating queen lol!

That looks so good, like a simplified (and healthier version) of asian lettuce wraps. Love this idea, kudos to Polly!
Try using butter lettuce next time, it has a more mild flavor and the leaves are smaller.

At first glace I’m scared of your chicken and nut butter combo. But then I remembered that I love chicken satay so maybe it wouldn’t be bad. I’m still a bit scared but I might have think about making a healthy version of some chicken satay soon.
Sorry to hear you haven’t gotten much done but at least you to the the important ones: groceries, exercise, and work.

However long it takes, which varies. Today I ate around 2 and we left around 3:15. But I ate lightly (as in not a huge salad) because I knew I”d be working out. And I definitely could not have gone running. I need 3-4 hours before I can run (unless it’s just a banana or toast).

Wow what an interesting combo! I have had nutty sauces on meat before (chicken/beef satay with peanut dipping suace), but have never thought to wrap it in a lettuce leaf! Thanks for the great idea
