I found a great jarred curry sauce at Trader Joe’s and as a result, I have been enjoying fast and healthy Indian food. For this particular meal, I included chick peas (which I had made from dried beans by soaking them over night), fresh kale and cauliflower. I steamed the cauliflower and kale for a few minutes, then drained out the excess water. I then prepared the curry sauce which is called "Curry Simmer Sauce". As it says on the jar, you pour the entire jar of the sauce and about half a jar of water into the pan. Then, I added the steamed kale and cauliflower and about a cup of chick peas. I simmered all the ingredients for about 20 minutes.
With the curry I heated up a piece of frozen Trader Joe’s Naan.
If you love Indian food, but often feel that it is a daunting task to make at home with all of the required spices, I highly recommend these products and this meal.

ooh, that looks really good! I wish I had a trader joes in my state! I wonder what might be a good substitute for that sauce??

I’m with Sarah–no Trader Joe’s or WF over here, but that looks like a meal right up my alley. Any simple suggestions for a substitute that isn’t laden with sodium (my biggest peeve with sauces)? I often make chickpea dishes with rice, veggies and spices on their own, but never a sauce…

Yum! We don’t live close to TJ’s but we make the 85 mile trip whenever we can. They have so many unique items that make it worth it.

I don’t think we have the simmer curry sauce here! But the TJ red curry sauce is fantastic.
