Wow, what a crazy afternoon! 👿 Chem Lab went until 5:00 – we were trying to finish our final project report this week so we wouldn’t have to come to lab next week. The bad news: we didn’t finish; The good news: we’re doing it by email so I DON’T HAVE LAB NEXT WEEK!!!!!!!!!
So then I had to go to EarthFare. In rush hour. Ugh. There are two here, and my choices were
1) Sit in bumper-to-bumper on 485 or
2) Navigate lights and go to the further one without the bumper-to-bumper.
I went with Option #2 and am not sure it was the best one!! It took me an hour and a half to get back to North Carolina and up to SouthPark, to the grocery store (which is never fast in EarthFare) and home.
THEN I had to get my hour-long dinner in the oven before I could tend to you guys!
I cannot believe it’s 7:00. Feels like 5 to me.
Lunch with Ally
We had a great time!! Ally is the blogger of Vegans Eat. I’ve been reading her blog for a few weeks now (she has GREAT photography!) and realized when she said she lives near enough to meet me for lunch at Cupps that she lives in Charlotte. And what do you know – only about 5 minutes from my house!!
Of course we talked about food and blogs almost the whole lunch. And it was hiliarious when we both pulled out our cameras and started taking photos!! One person can do it discretely, but the two of us probably looked really odd!
For lunch I had to get my favorite salad with the delicious herb dressing, goat cheese, almonds, veggies and red pepper hummus – (Ally seconded that this dressing/pesto is amazing). I ate all the salad, some of the herb part of the dressing and about 2/3 of the hummus –
I also got a cup of the chicken, barley and bean soup. It was good, but not wonderful. I guess because it wasn’t cream-based! I also had one of the pita chips. They were meh.
From above, with hot tea –
After lunch we went for a great 25-minute walk around campus in the beautiful 70* weather! It was nice to chat some more. Then I was off to 👿
See you guys for another post in …an hour!? I enjoyed reading all the comments today even though I was MIA!

Does anyone know how Kath can get a FORUM up and running on this blog??
The site is getting so huge it definitely needs some organization for the comments!
I find it is so hard to find time to go through them all. It would be so nice to have a forum where we could only click on the threads that appeal to our questions!
A couple website on how to build a forum I found:

Any tech savy people on here?

I like the comments how they are…..
Kath, luckily I had a crazy day too, or else I would have been refreshing like crazy with everyone else!
Amandamoo says
I too was refreshing the page all day… I wonder how many of those million page views are from me alone… hmmm…

To all you runners out there:
I’m wondering if anyone else has this problem, I love to run but I feel like its such a fantastic workout and lifts my mood so much that I have trouble cross training with other exercises. Elliptical and other workouts just don’t seem the same. Anyone else feel this way and maybe good alternatives to running that still are a great workout?
Amandamoo says
I run with my dog and he absolutely has to have one day off in between runs so I make myself do something else on the in between days when he needs a break anyway. it’s not that great for your joints to run EVERY DAY anyway so maybe just schedule your runs with days off in between where you do strength training or an alternate form of cardio.

I was talking to an instructor/trainer at my gym who was saying how important it is to change up your workouts, whether you’re running, doing the elliptical, cycling, or doing weights. I think it can be easy to slack off on the elliptical, making it seem like a less effective workout than say, running. I just have to remind myself to work hard. I like doing intervals on the ET…makes the time go faster, too.

I think a forum would be nice
Is there a hit counter on this blog?
eliza says
Rachie! Hi.. Yes I totally agree with you about running. Other workouts that still make me feel amazing after are: the stair master..especially that huge honkin one at the gym.
and BIKING!!
cross training is amazing..
also i know a bunch of running workouts that really work my heart!

Kath, thanks for meeting up with me for lunch! I had a blast 🙂
The herb dressing is amazing, too bad you can’t replicate it without wasting ingredients!
Thanks again!

Kelly T,
I keep forgetting!! Plus it’s hard when you don’t have someone to take the photo.
Ally,
Sorry we missed our photo op! I really enjoyed lunch – hope to see you again soon!! (PS. Black bean burgers look great!)
Rachie ,
I know what you mean about running, but I get the same lift from the STairmaster and Spinning classes – I think you just have to be more conscious of pushing yourself on the ET and stat bike.

I was thinking the other day that it would be nice to have a forum on here. I love the blog as it is but it would be great to be able to see the comments by topic. Either way – I’m in love with this blog – I’ve even started to check it at work 🙂
Kathryn says
SWIMMING is a great workout – similar cardiovascular benefits to running I think and it burns tons of calories.
Ally says
That’s weird, I’m Ally and I was just making lunch plans when I read this post!! haha. No questions, just wanted you to know I’m still addicted to you blog and it’s really helping me with mindful eating!
Kath says
Other Ally,
If you’re ever in Charlotte, we can have lunch too 😉
