I’m in the library surrounded by Encyclopedias! Nerd alert!! I’m trying to kill some time before our meeting at 5:30. It should be over at 7 and Christy and I decided that instead of eating at Subway or an “in case of emergency” food place, we’d rather just go home to make fresh foods. Works for me! I think we still have some navy beans left…..
Workout
Lunch today was SO rushed. I was bad and did not plan my morning well. We ended up getting to the gym at 10:00. I did 40 minutes on the ET followed by some push-ups, pull-ups and the shoulder press in an hour flat. I usually leave for class at 11, so I obviously was late. After a speedy shower, I left around 11:30, got to campus by 12:10 and had 20 minutes to eat!
Lunch
In my rush, I asked the husband to microwave my PB&J for 10 seconds to take the chill out of it. Well, in typical man fashion he did not listen and nuked it for 30 seconds – all the PB melted and the bread collapsed!! I was SO looking forward to it to 🙁 Oh well, I still love him 🙂
Carrot-Pineapple Salad! I made this by shredding 2 carrots in our Cuisinart (or you could do it by hand, or buy it pre-shredded) and added 5 oz of pineapple plus a tsp of maple syrup, a mini box of raisins, and 1/4 a lime squeezed. It was quite good! I gave the husband 1/4 of the recipe and I took the rest

Class + Snack
Classes were fun today. I did my presentation on The Omnivore’s Dilemma and it went well. I also managed to get a 107 on my first test!?!? Sweet! Christy and I did 35 minutes of walking around the indoor track (we walk every Tues/Thurs but I always forget to mention it!)
In the library I snuck my snack because I was actually pretty hungry around 3:30.
OH my gosh. If you like coffee – you will LOVE this flavor of Nectar bars!!!! SOOO good!!

On the subject of bars, I had a Cliff Mojo Peanut Butter Pretzle bar yesterday….soooo yum! It tasted soooo good! I had it post lifting and teaching spin (aka lots of kcal burn) and it held me from 4:30 until dinner at 7! And I could eat it slowly over 30 minutes which was especially helpful while studying Chem!

Kath, I was really hungry yesterday before dinner so I had an apple (already had snack earlier) and literally become 100 times more hungry. Any suggestions? I thought fruit is what you are supposed to eat in a situation like that.
Lol about man style- not married yet……but I can still say that’s so true. If I tell my dad to get anything at the grocery he will usually get the correct product wrong brand or correct brand wrong product.

i have the SAME problem with apples. its carrots for me, too. i have to avoid them unless i know i have room for another snack after that because they make me RAVENOUS–like i have an empty pit in my stomach! i’ve heard to eat them with some protein (PB/cheese/hummus). doesn’t work for me. i could eat them with an entire meal and i get that same hungry thing going on 🙂

I thin what is missing is protein. I would add a bit of peanut butter or almonds to go along with it.

Kath, this is off topic for the lunch post, but re: oatmeal pancakes…do you ONLY use the quick oats? I saw a note at some point that you let old fashioned oats soak longer, but don’t you soak the quick ones overnight already?

I’m not sure if anyone ever asked this before, but do you like Fage yogurt with just almonds in it? No “jam” or anything to help out the bland and almost sour taste? I guess everyone’s taste buds are different, but I haven’t been able to eat it without anything to add some sweetness. Thanks for the tips!

I make a similar carrot salad to yours, except I use cinnamon and nutmeg to season instead of maple syrup – judging from your past professed love for cinnamon, I would highly recommend it!!

The other day I mentioned how I was starving even with eating soup, cheese and pita, fruit, and cottage cheese. Faith mentioned that I should include more protein. I thought cottage cheese was protein. any advice for the future?

I love that you post the number of calories, fiber, and protein-which is everything i count! And i love that you tell exactly how you make your food..it gives me new ideas and recipies to try! I also have a question, how exactly did you find out how many calories a day you should be eating to maintain your weight? I too am trying to maintain my weight. I weigh about 118-120 and am 5’3. I have tried calculators everywhere and they all tell me something different..some even say 1400! I eat about 1700 now, but i was wondering if i should be eating along the lines of 2000?

Hey all you fruit lovers out there, i just wanted to share an incredible find i came across this weekend at the grocery store. It is a plastic pinapple corer and slicer in one. You stick it in the top of your pinapple and turn it like a screw, then the pinapple comes out cored in one curly strand that is a snap to cut up. Its really excited about this find because i LOVE pinapple but i hate to cut it and i find that i waste a lot of it, this little device gets out every last delicous bit!!! It was about 8 bucks and its white and plastic (can’t remember the exact name)

Susan…did you eat enough for breakfast? Or maybe did you eat too fast? It takes me almost an hour before I feel full after eating. So I usually drink tea and try to wait it out. I think Kath does this too.

I have definitely experienced the same thing with fruits by themselves. Most of what I’ve read recommends combining them with some protein or fat, so have a few nuts, some PB, cottage cheese, etc. Since fruits are a carbohydrate of mostly simple sugars, they are more quickly broken down and enter your bloodstream faster than proteins, fats, and fibers. By combining the fruit with one of these, you’ll slow the rate of everything down and will have a more steady trickle of glucose into your blood (in a nutshell!).

I think I have yet to achieve my greatest accomplishment in life (so I hope!) But I have quite a few accomplishments that I’m very proud of. I suppose thus far I am most proud of my academic success both in high school and at Davidson.

I used to swear by quick oats because they are smaller and absorb quicker, but we stopped buying them to save money so we could only by rolled oats in bulk, and the rolled work fine as long as you let them soak enough (at least 20 minutes, but overnight is best). The quick oats benefit from a good soak as well.

I’m pretty sure I wrote a response in the post. Any idea which post it was in? I didn’t have any luck searching. I think I recommended sitting down to lunch less hungry. I know when I am too hungry for a meal it takes a LONG time for my hunger to dissipate.

Sounds like your big pot will work just fine for soups. I believe a Dutch oven is just a big pot? It might be more specific than that, but you can certainly use any big pot you have.

Definitely the one that is a moving staircase. I think the pedal ones aren’t very hard at all. I think what I really use is called the StepMill, and it’s made by Stairmaster, the brand (so that is in bigger letters so that’s what I’ve always called it!)

Thanks! I feel like I’m always studying these days! I’ve had good study skills since I was young – I just know what it takes for me to memorize something. I’m a HUGE fan of flash cards. I also do lots of my work in advance so I’m never doing things at the last minute. Nothing stresses me out more than procrastination!
