How does a dip in a pool sound to a hot 37+6 week pregnant woman? Excellllent!
My friend Lara and her two cute kiddos invited us (I just said us – not idea why – ahh!) over to her neighborhood pool this afternoon. I’ve been avoiding my bathing suit in public for some time (just some shyness about the bump), but I decided a dip sounded great. Luckily we were the only ones there!
Lara is a botanical artist and paints vegetables in beautiful detail! She gave me a set of notecards of her paintings at our low country boil party. I’ve been writing lots of thank you notes lately, and these are just stunning. She sells them in Etsy if any of you want to check them out!
Matt picked me up on his way home from the bakery and we walked together – being chased by a storm!! Luckily we made it home just in time. Although given that I was in a wet bathing suit and cover up, I don’t think a little rain would have hurt.
Speaking of storms, nesting has slowed down from a category 5 hurricane to a summer thunderstorm, but it’s still drizzling in. I bought this exciting piece of furniture for the nursery and assembled it myself today in 10 minutes time. LOVE it – more soon!
Matt also completed another project tonight while I made dinner. We have curtains for the living room now! I was itching for a bit more privacy for nighttime – especially if I’m going to be up all hours of the night. I’ll tell you more about them tomorrow. Very happy with final result!
In typical me style, I made a one-bowl dinner of Ricotta Pesto Pasta.
Whole wheat pasta, cooked, and tossed with cooked zucchini and tomatoes, about 1/2 a cup of delicious grass-fed ricotta cheese and about 1/3 cup homemade pesto. Walnuts and parm cheese on top!
Whole wheat pasta is so much heartier than regular.
Matt proclaimed before dinner was even finished that he wanted ice cream for dessert! It’s usually the other way around so he took me by surprise!
We went to Kohr Bros and both commented on the drive there “we should have just walked downtown!” But Kohr was worth the drive – I got a Snowstorm shake with vanilla custard and Resee’s. I purchased a small, but requested that she only serve me half – I really didn’t need a whole one! Worked out great.
I finished the dishes. Matt finished the curtains. He’s now finishing his baby canvas! Exciting times.

I have been on a carb frenzy lately and that pasta dish is looking so good!

Yum! Dinner & dessert look fantastic. I am craving ice cream. 🙂 I did however get my sweet in today. I baked, from scratch, carrot cake cupcakes to take into my DI today since we were in ‘clinical bootcamp’ for most of the day. Nothing helps keep you awake like sugar followed by a ‘tasting’ of oral supplements that we will give to patients!

We had pesto ricotta stuffed shells – great minds think alike! Can’t wait to see the curtains!
Lindsey @ Pas de Deux says
I had a very similar dinner tonight! Genius idea to ask for only half of the snowstorm… A whole is HUGE! Can’t wait to see all of the home improvement projects 🙂

Your dinner looks awesome! You are so great at incorporating so many veggies, flavors, and textures into your meals 🙂 Really like the idea of adding ricotta in addition to this–especially if you don’t have a lot of pesto on hand.
Averie @ Averie Cooks says
who cares what you look like 🙂
as long as you were cool & refreshed and a dip in the pool sounds perfect!

You and Matt lead such a full, exciting life together. Would love to hear about (er, ‘read about) your thoughts/feelings as you transition from your life as a hip, happening duo into a family of 3. I’m always curious what it’s like for first-time parents in those final weeks of pregnancy – I think I’ll be full of mixed emotions! 🙂

I love that green color in your living room!! I also like all the green in your pasta!

Lol Kath, you make me giggle! You probably look sooooooo much better in a swim suit at 37.6 weeks than I ever will at eight-years-old! Just get comfy! And enjoy your few last moments…:)
mary @ minutespermile says
oh man, i was thinking of making pasta this week – i am now convinced! also you should know i ate my first no bull burger last night. so good for a pre-made veggie burger!
Sonal says
Agreed wholewheat pasta is so much heartier 🙂 your dinner and ice cream look amazing! 🙂

Cards are lovely. I will order some!
Tara says
I always ask for smaller portions of ice cream than the “small” size. Ice cream portions (as with almost everything these days) are out of control! I honestly can’t see how people eat the “large.”
Spice Chicken says
Same here! I actually order a kiddie size at the frozen custard joint. It’s so good and so rich, one scoop does the trick.
Jennifer says
OMG that pasta looks delish! I’m not the best at just throwing things together so do you have a recipe for this?? I would love to make it!
KathEats says
I described the ingredient amounts and method as best I could in paragraph form. Let me know if anything isn’t clear!
Jennifer says
Just how you made your pesto sauce, and did you roast your veggies or saute them? Sorry I am really bad in the kitchen! :/
KathEats says
No problem – I sauteed them in a nonstick skillet with a little olive oil
KathEats says
And here’s a link to a basic basil walnut pesto – very similar to the one I used (except I left out the garlic!)

Asking for an extra-small is such a great idea!
Kath, I don’t mean to sound weird – this is meant to be a straightforward compliment, not a backhanded one or an insult in disguise! Some of your recent posts, here and at KERF, have seemed more thoughtful, more introspective, maybe like you’ve had more time to think about things or a little more time to write or something. I like your posts like these, that have more of what you’ve been thinking, or the ones where I can feel you walking wet and wrapped, ahead of a lovely summer storm, through the cicada song. It’s a lot more interesting than the ones where it seems like you’re in a little bit of a hurry and it’s just a factual list of what you ate. (not that what you ate shouldn’t be included! I don’t mean that.)
KathEats says
Thanks Emma. I think it’s just a reflection of my moods!
mary (sisters running the kitchen) says
Your dinner looks so delicious! Also, I love Kohr Bros. and you ordered my favorite thing! I never thought to request that they make only 1/2…because sometimes the small is just too much!
Diane says
I can’t believe your babe is almost here. It is amazing that you will have sooo many pictures and recordings of your thoughts be able to show your kid(s) one day.
MommyPage says
It sounds like you both had a fun night! The dinner that you made looks yummy and that’s a great idea to only order half of the ice cream.

We love the beautiful card we got today 🙂
