I friendly kitty came by around 4:30 to remind me that I had not yet voted!
Hot-tailed it to the voting station, about a 10 minute bike ride away, with Matt.
Why-oh-why did we wait until rush hour to go!?!? But during the 30-minute wait we discussed our upcoming Sonoma trip. Wheee!
Did my part:
Can we get a hip-hip-hooray for Matt, who made dinner all by his lonesome while I packed and packed.
The meal plan for tonight was: "Something from the garden, combined with eggs or sardines or beans and something grainy."
He harvested a whole row of swiss chard from the garden and a zucchini (the zucchini plant was decimated in last night’s frost but the chard + lettuce seem to have survived).
Topped with an eggin and a side of toast = world’s easiest dinner!
To the dining room to dine!
Sipping tea and debating an early bedtime!
Jessica @ How Sweet It Is says
I love eggs for dinner. I even like them on greens. It helps me eat them!
Erin (Travel, Eat, Repeat) says
I need to remember to incorporate eggs into my savory, non-breakfast meals. I do love them!
Anna @ Newlywed, Newly Veg says
So jealous of your upcoming Sonoma trip! We were there for a wedding last fall…so pretty!
Estela @ Weekly Bite says
Eggs are my favorite for dinner 🙂 I like to sprinkle a little cheese on mine 🙂
Stephanie says
I LOVE serving an egg over greens!!! When I had my tonsils out back in February this was the first “real meal” I made for myself and I ate it for dayssssss. Spinach, mushrooms, Laughing Cow wedge topped w/ an egg was the combo of choice — so good! (http://cookinfanatic.wordpress.com/2010/02/25/egg-a-licious/)
Sarena (The Non-Dairy Queen) says
Eggs are the perfect dinner! That is what’s on the menu for us tomorrow night. Have a nice evening Kath!
Michele @ Healthy Cultivations says
Go for it with the early bedtime. There’s nothing better than a little extra sleep sometimes. I’ve been known to go to bed at 8:30pm before. Sometimes, my brother says I’m like I’m 80 years old or something. I just value sleep.
holly @ couchpotatoathlete says
I love making eggs for dinner — that is our go-to meal if we are in a rush or if we both get home late.
You get way better stickers – here in MN you get the plain red “I voted” stickers 🙁
Emily says
Way to vote!! I am loving the idea of an egg on a salad. I saw it on Allie’s blog earlier and its sounding really good to me 🙂

Ugh, I too managed to vote during rush hour. Fortunately, my Matt voted in the morning and had some serious dinner prep going on when I finally made it back home — delicious caprese salad sandwiches with our very late October tomato harvest.

Easy but super colourful and tasty, I bet! Well done you for voting, although here in Australia there’s no question of “forgetting”, because voting is compulsory so you’ll get fined if you forget!

Chard actually gets better after a frost – it brings out the sweetness. It should be okay for a long time.
Cathy B. @ Bright Bakes says
so the frost eventually comes even to you southern gardeners…I’ve been fighting jealousy over the fact that your garden is still bearing things such as zucchini! And believe it or not, I just harvested my last kale the other day and we’e clear up in Northern WI..
love,
cathy b. @ brightbakes
