Gotta start every lunch with something healthy….
Leftover sesame kale salad with broc, green pepper, cuc, red pepper, raisins and Sabra.
Apple Kracker’s
And finally….a Biscoff apple.
Heavenly. Surely this apple combination a day will keep any doctor away. [Difficult when you’re working in a hospital!]
Little-a-this, little-a-that.
Wheeeeeeeee!
Freya @ Brit Chick Runs says
I’m a firm believer that an apple a day keeps the doc away 🙂 I don’t remember the last day I missed my apple!
Have a lovely afternoon 🙂
Melissa @ HerGreenLife says
Mmm, looking forward to apple season, which will be here before you know it. I used to be a faithful apple-a-day girl, but now I limit that to when apples are in-season locally. I picked up a regular grocery store apple at an event over the weekend, and there was just something missing! Fortunately, with all the different varieties that ripen at different times, and the fact that apples keep well, that still ends up being about half the year around these parts 🙂 I do add dried apples to my oatmeal some mornings, so they’re not completely absent from my current diet.
Beth @ Beth's Journey to Thin says
That lunch looks awesome! I love adding hummus to salads. I’ve never heard of that type of apple before. I loooove fujis year round and honeycrisps in the fall!
Heather (Heather's Dish) says

Lindsay @ Summit Sandwiches says
Where did you get that little nut butter container? It’s the perfect size! I can’t seem to find anything small enough for a tbsp of nut butter…and whenever I use a bigger container, it gets all over the place!
Kath says
It had a sample of mustard!
Wei-Wei says
Mmm… lovely lunch. 😀 I still can’t get over how delicious Biscoff sounds. Planning a giveaway anytime soon? 😉

I wanted to ask you if those oatmeal bowls were microwavable? I couldn’t tell if that is metal on the rim? They are really, really cute!
Kath says
They aren’t – they are metal, which is part of the charm but also a bummer for that reason.
Kristin (Salty Tooth) says
Yesterday, I purchased Biscoff if your honor. I had never had them before and they were great!

Kath says
I paid $10 for my bag of chia seeds and they were worth every penny?
ari says
oh HAHAHA all the chia seeds that i’ve seen online were like $50. but maybe that was for an insane amount.
SheZug says
Kath, thanks for being such a healthy eating blogger, it really makes me crave good ole fruits and veggies when I read ya. Now to put it into practice.
Danielle says
Hi Kath,
I love your blog and read it religiously but I have a question somewhat unrelated to it entirely…I am starting college in the fall as a dietetics major, with plans on becoming an RD some day. For our program we have certain required classes (intro to chem, intro to organic chem, etc.). Some teachers say that if we want to go to grad school we should take chem (not intro) a year of bio, physics, and calculus, I was planning on doing that but now other teachers are saying that it is not at all necessary to take those classes. I’ve tried to find info online at different grad schools w/internships included but it’s useless. I was wondering since you’ve gone through the system of applying for internships and all that if these classes are necessary? Is it really competitive in that I should be taking it? AH I’m stressing out and I haven’t even started school yet! Any help you could give would be great.
Thanks,
Danielle
Kath says
Danielle,
From my experience, you just need the DPD verification statement and as much practical experience as possible. My advice would be to take an easier class and go work part time as a diet tech!
Kath says
OH, and make as many A’s as you can 🙂
Michelle @ Find Your Balance says
I think it’s funny you refer to your hummus as Sabra! Are you a big fan of this particular brand? My friend works for them and is always crazy busy so they must be doing well 🙂
Kath says
Well this hummus WAS Sabra! That’s what I referred to the brand name! I don’t call all hummus sabra 🙂
Stacey@http://stacey-healthylife.blogspot.com/ says
You gotta get your Biscoff fix. 🙂
maxinthegym says
I love the idea of using hummus as salad dressing!
Hannah says

I haven’t had an apple since last fall! I can’t wait until they come back into season again… but first I’m more excited for the arrival of peach season (SO CLOSE!)
Carolyn @ lovinlosing says
