Not shortage of pumpkin in this house!!
Although Matt has laid claim to 4 lbs of this for pumpkin beer brewing today. But that still leaves me with 2 lbs plus a whole second can…when I’m ready
I put it to good use in a smoothie today.
Pumpkin Pie Smoothie
Tasted JUST like mom’s pumpkin chiffon pie!
- 1/2 cup canned pumpkin
- 1 cup milk
- 1/4 cup plain yogurt
- 1 small or 1/2 large banana
- 4 cubes ice
- Pinch each of cinnamon, allspice, ground cloves and nutmeg (4 grinds on a grater)
- Cville Cluster + Biscoff on top!
Vanilla tea to round it out. So much pumpkin!!
Orange you glad it’s Hump Day!? I’m cycling, then to the bakery all day to relieve the CEO.
Allie@LiveLaughEat says
That smoothie is so fluffy it even looks like a pie! How does Bakesense compare to Libby’s?
KathEats says
Very similar to Libby’s but not quite as watery.
Are you going to come rob the bakery of a can!?
Lisa Fine says
Yum! I need canned pumpkin in my life, soon. And I really want to try to make something like this.
Can’t have too much of the autumn flavors!
Ashley @ Coffee Cake and Cardio says
How are you going to store the 2 lbs?
KathEats says
In a glass tupperware in the fridge
Lauren @ What Lauren Likes says
Looks amazing! I wish I had that much pumpkin to deal with 🙂
Kristin says
Wow the smoothie looks so thick! Did you use Xanthan gum to get it like that or is it just from the pumpkin/yogurt/milk? My smoothies have been so watered down lately and I can’t figure out what I’m doing differently!
KathEats says
I don’t use any gums. I think you are using too much liquid? Also, ice helps fluff it up
Stacey says
I use teaspoon of guar gum, def thickens it up!
L. says
you could also try chia seeds to thicken it…….
A Teenage Gourmet (Sami) says
I can’t wait to meet you today! 🙂
Lee says
Looks yummy and my favorite…PUMPKIN!!! A girl at work told me we’ve headed into a pumpkin shortage at the supermarket already. I sure hope not!!!
Brittany (A Healthy Slice of Life) says
Oh that smoothie is going to be made as soon as I get my hands on some pumpkin! It will go perfectly with the high of 72 this weekend 🙂
Angie @ Musings of a Violet Monkey says
That is deliciously orange… love it! I’ve been on *such* a pumpkin kick already. (Well, all winter squash to be honest… yesterday alone I ate pumpkin, butternut and spaghetti squash!).
I just acquired 12 cans of Libby’s… in addition to the 5 I already had stashed away. No pumpkin shortage in my house, either! 🙂
~
Molly @ RDexposed says
That last zinger doesn’t come around every day, good job on taking advantage of it! Last year the boyfriend brewed a pumpkin porter!
Hoppy brewing <—- Yay beer pun!
KathEats says
Ha!
Ashley @ My Food 'N' Fitness Diaries says
Holy moly, that’s a lot of pumpkin! 🙂 The Biscoff sounds like a perfect topping addition to the smoothie!!
Aine @ Something to Chew Over says
Oh wow this looks amazing! 🙂
Gina @ Running to the Kitchen says
That smoothie picture is gorgeous with the orange backdrop! Biscoff sounds like the perfect topping to pumpkin.
Annette @ EnjoyYourHealthyLife says
I LOVE pumpkin! I want a pumpkin pie smoothie now, thanks 🙂
Love the pics, esp today!
Lisa D says
That is a BIG can of pumpkin! And to think, I was nervous to open up my “big” can of Libby’s which is only 1 lb 13 oz. Are you going to try freezing any of it? I would imagine it would be ok especially for smoothie use.
KathEats says
I’m going to try eating it all first
Hilliary @ Happily Ever Healthy says
That smoothie looks delicious! I have been eating pumpkin pie oats every morning! I just love them, and love fall!
Cait's Plate says
I’m so jealous of your pumpkin! There’s definitely a shortage of it in my house (as in, none).
And I seriously thought that was a bowl of oats before you said you made a smoothie! It looks so thick and wonderful!
Emily @ the doodlebug says
Even though you call it a smoothie you eat it like oatmeal? It looks really really good and I may have to make it tomorrow! I really need something more substantial in the mornings, because I’m usually starving by 10!
KathEats says
Yup! Spoons are more fun.
Emily @ the doodlebug says
Yum! Going to the store tonight!
Lauri (Redheadrecipes.com) says
I made the EXACT same smoothie a few days ago! And I’ve been drinking them ever since because its SO yummy! http://redheadrecipes.com/?p=13520
Guess great minds think alike 😀
KathEats says
I’m sure my subconscious was thinking of you 🙂
Anna @ On Anna's Plate says
Can’t wait to see what you make with all that pumpkin!! I’m currently working on about 10 smaller cans in my pantry right now…I might have overbought just a *tad* last fall 🙂
kathleen @ the daily crumb says
mmmm that looks delicious! it has turned way too cold here in chicago for smoothies. makes me sad 🙁 but that just means more pumpkin oatmeal!
Angela @ Eat Spin Run Repeat says
Yummmm! What a perfect fall breakfast. There’s no shortage of pumpkin in my house either.. every time I go to the grocery store, I usually pick up a can, ya know, just in case there’s a shortage coming up that I don’t know about. You can never have too much! 🙂
Liz @ Tip Top Shape says
Um…I need some canned pumpkin now solely to make that smoothie!!
Averie @ Love Veggies and Yoga says
Pumpkin + biscoff spread…all in one beverage…oh, that sounds like a heck of a great deal 🙂
Enjoy that bike ride. And all that pumpkin. Woot!
Ericka Andersen says
I have some leftover pumpkin sitting in a plastic container and I was wondering what the heck to do with it this week. Guess I know what breakfast is tomorrow!
Kristina says
Haha 4 lbs of pumpkin…sounds like a dream come true. I’ve been putting pumpkin in EVERYthing this week (pancakes, oatmeal, soup…)…it’s that time of year.
Johanna B says
I had one of your classic Pumpkin SIAB’s yesterday. Love em.
hemp jogger says

all those crazy responses to ‘head down to legs’ about matt working and you being home…wow. just have to say you guys are so polite, professional, considerate, and smart, which is why i keep coming back. have a lovely cycle class and hump day 🙂

KathEats says
Thanks hemp 🙂
Jennifer says
Holy pumpkin! Your smoothie sounds delicious! Definitely makes you feel like fall.
Julia H. @ The Petite Spiel says
Send some of that pumpkin my way! My roommate went to buy some, but the store was all out…and now I’m craving that big smoothie you made!
April says
I just roasted two sugar pumpkins last week, so I’ve had a ton of pumpkin on my hands too! So far, I’ve made pumpkin pie, oatmeal, pancakes, bread and my favorite …. pumpkin soup. I like my soup with a little bit of apple, coconut milk and some fresh sage. It’s wonderful! And yes, you can freeze pumpkin! I do it all the time! Your new house looks wonderful! Congrats, again!
Khushboo says
Will the bakery be selling pumpkin pies as a holiday special?
KathEats says
We have pumpkin swirl bread, pumpkin ohs and pumpkin muffins!
Hope @ With A Side Of Hope says
That smoothie looks like the best one yet! It’s so fluffy and I love the orange color! Perfect for fall!
Nicole says
I went last night and stocked up on 8 more cans of Libby’s since there’s supposed to be another pumpkin shortage. First I went to Meijer where there were only 2 large dented cans, so I had to go to Kroger. The shelf was sparse, but I managed to snag some cans without totally clearing them out.
Felicia (Natural + Balanced) says
alright, so i’ve been on the depressed side with summer being over and haven’t really been craving fall foods like pumpkin and squash (which for me is weird because autumn is my favorite). then this morning every blog i read has pumpkin in it…getting more excited… but then as soon as i read your words of “pumpkin beer” i just got SUPER excited about fall. and pumpkin everything 🙂 so thanks ! hahaha
Becky @ Skinnyfat Girls says
So much PUMPKIN! I’m pretty sure I need 6 pounds of the stuff, myself. That smoothie looks so good and may be just the thing to transition myself from summer to fall. I’m having trouble letting go of my strawberry coconut smoothies, but now that strawberry prices are going up I’m thinking pumpkin may be an adequate replacement! It looks so FROTHY! Mmmmm…
Lynn @ the actor's diet says
Pumpkin! I may crack open a can today.
Kori says
I made a pumpkin pie smoothie this morning too!! Great minds must think alike. 😉
Sarah @ Sarah's Modern Bites says
That is SOOOO much pumpkin! hahaha I get nervous buying large cans like that because I just won’t go through it quickly… it’s too much of a commitment for me. How long do you think an open container like that lasts? Do you leave it in the can on transfer it to Tupperware??
KathEats says
You should always put it in a tupperware. I’d say safe for a week?
Sweet and Savvy says
wow! That’s a lot of pumpkin! That smoothie looks great. Ill definitely be mimicking. 🙂
Heather @ Better With Veggies says
Too funny – we brewed our pumpkin beer last night & I used some unused pumpkin to make maple-pumpkin smoothies this morning. Must be on the same wavelength. 🙂
Casey @ Pocket Full of Sunshine says
That’s a lot of pumpkin! 🙂 Do you like it as much as Libby’s? I’ve never liked any other kind as much!
KathEats says
Yup
VeggieGirl says
Mmm pumpkin beer brewing! I got my man a home brewing kit for his birthday,I hope he starts making seasonal brews soon!!
Emily@SavoryandSavage says
This is my favorite smoothie that you have made so far! Love the idea of having a pumpkin pie smoothie for breakfast.
Heather @ Get Healthy with Heather says
You must be in pumpkin heaven! I know I would be 🙂
Johanna B says
Small can of Libby’s was $1.89 and my local grocery yesterday. I’ll even pay that price because my stash is down to just 12 cans.
Sarah says
Pumpkin pie smoothie! <3 I remember seeing these in the blog world last year and thinking I needed to try it…I'm adding pumpkin to my grocery list this weekend!
Andrea @ The Skinny Chronicles says
Tis the season for pumpkin! I’ll have to bust out my pumpkin pancake recipe soon! I’m loving the photos of your new home. It’s coming along marvelously!
Mary @ Bites and Bliss says
I need to do the same! Last weekend, the shelves were totally empty. Hopefully it comes back so I can stock up. 🙁
Kate (What Kate is Cooking) says
I just stocked up on pumpkin too. I’m scared of another shortage!
Susan (Oliepants) says
I don’t think I’d know what to do with all that pumpkin after the idea of pumpkin bread, pumpkin oatmeal and pumpkin cookies run out. I’m sure of all people you could find many many uses!
Kelly says
Happy Wednesday! So jealous of your pumpkin stash 🙂
Lauren @ Oatmeal after Spinning says
Have you ever bought “Farmer’s Market” brand pumpkin? I’m sure I have photos of the can on my blog somewhere. It’s awesome- you can get it at Wegmans, My Organic Market (don’t know if you have those in Cville?) and other natural food stores. It tastes WAY better than Libby’s to me and is organic.
I just bought a bunch of cans at TJs but haven’t cracked one open yet. We’ll see how that compares!
KathEats says
i haven’t heard of that one! I generally prefer the non-organic though
jane says
so today is the feast day of Good King Wenceslaus- guess who he is the patron saint of???
Wenceslaus was said to have had a kindly, giving nature, and those aspects of his personality are memorialized in the story of his Christmas carol, when the good king wanders out into a freezing winter night, bringing gifts of food and warmth and wine to those with none, pressing into the snow footprints that radiated back the heat of his goodness. Wenceslaus is the patron saint of the Czech Republic and the brewers of beer, and it is said that he and an army of his knights sleep under the mountain Blaník, waiting to rise in the darkest of times, to save the Czech people from ruin.
KathEats says
I just know him from the Christmas carol!
Mom says
Kath’s grandma is nuts over Wenceslaus and wrote a Christmas play about him and put it on at our church forty years agao. Fun to read your comment!
Hillary says
I made a pumpkin pie smoothie for the first time a few weeks ago. Best decision ever.
J3nn (Jenn's Menu and Lifestyle Blog) says
Now that sounds good!!!
Allison says
Haha! And to think that I was elated to just buy a regular small sized can of pumpkin this weekend 😛 I’m totes jealous [of the can and of the future pumpkin beer]!

Cat @breakfast to bed says
Have you had the pumpkin pie shake at Sonic? It’s sinful!!!!
Christy says
Maybe it should be called the Super Smoothie! Sounds — and looks — great 🙂
Katie @ Peace Love and Oats says
that recipe went straight into my google docs, wish I had seen it before I made my smoothie this morning! Strawberry was good, but pumpkin would have been divine!
jk says
First of all your new home is looking fabulous. You could be a decorator in your spare time…
HA!!!!!!
Second, I picked up the October issue of Oxygen today and I found a recipe that seems like it
would be right down your alley….”Baked Ginger Pumpkin Oatmeal”. It also has cottage cheese
in it. I’m not a big pumpkin fan but in the photo it looks really good. I haven’t checked out
the website to see if the recipe is there or not. Just in case you are interested…
Always enjoy your posts.
KathEats says
YUM!
nancy says
Just read the post from last night. I also live very close to an IKEA and love an excuse to go there. I am happy to pick up something you need and ship it to you. 🙂
KathEats says
Hey Nancy,
Thanks so much for the offer. I’m visiting my grandmother next week and think I can just swing by then since I have to return things too. But if I don’t, I’ll email you! (PS. my grandmother’s name is Nancy Jane!)

Love the dollop of Biscoff on the top of the smoothie! The dollop looks like a whale (LOL)

I made the pumpkin pie smoothie for lunch, with the addition of some fresh ginger (I’m fighting off a cold and hoping it will boost my immunity) and molasses (just for the heck of it). Yum! Thanks for inspiring me!
