Tomorrow is JUNE!!! That means July 1 is almost here. Wheeeeeeee!
I had trouble sleeping AGAIN last night – although this time it was on the nighttime end. My brain would not stop thinking of ways to pack our house up even when I was telling her to go to sleep.
I also may have been thinking about this:
And THIS!! I had a $1 off coupon and WOW. It’s the vanilla hemp milk experience all over again! Since Living Harvest changed their recipe, this is my replacement. Marshmallowy!!
Matt whipped up the oats today! My portion:
- 1/3 cup oats, coconut milk, water
- 1/4 a banana
- 1/4 cup cottage cheese, stirred in at end
- 1/4 cup blueberries, stirred in at end
- Nuttzo PF!!!
- Chopped almonds
- Chai granola
Xoxo my new Asheville bowl! (The 10Buddha and 15Ramen coupons expire today!)
The coconut milk didn’t curdle, but it didn’t emulsify either…?
His – all green!
We’re waiting on:
1) House counter offer
2) Bakery location response to our letter of intent
3) Email back from potential cute rental house (although this is just an inquiry – not anything set)
I’m also up in the Surgical/Trauma ICU for the first time.
Gonna be a big day!
Freya @ Brit Chick Runs says
Wowzers, surgical/trauma? That sounds exciting!!
Do you like vanilla hemp milk? I have some Hemp Bliss which I got given for free by the lady in the shop – apparently it’s so horrible, noone will buy it :s I’m scared to try!
Coconut milk on the other hand (the carton, not can, kind) is SO good! I’ve just finished my 1st carton 😀
Have a great day!
Kath says
I used to love the Living Harvest but they changed it. Now it’s like all the other hemp milks: earthy, mushroom.
Sarah (Running to Slow Things Down) says
I’ll bet you’ll see all kinds of new cases in the ICU. Hope you have many wonderful learning experiences today, Kath! 😀
And your breakfast looks yummy as always…I didn’t even know there *was* such a thing as coconut milk beverages. I’m looking out for that next time I’m at the store. 😀
Lindsay @ Summit Sandwiches says
I love So Delicious’s brand of coconut creamer for my coffee, so I can only imagine how amazing their coconut milk would be in oats! I’ll have to see if I can find this at my local WF! 🙂
Wei-Wei says
That bowl is delicious! I don’t know why the coconut milk wouldn’t dissolve or curdle in the coffee… did it taste coconuty, though? Hmm… coconut coffee… sounds intriguing!
I hope you have a great Monday! 🙂
Wei-Wei
Wei-Wei says
I wonder why I described the bowl as delicious. Maybe because I was too busy thinking about coconut milk? 😉
Estela @ Weekly Bite says
I hope the offer goes through!! How exciting!
Food Makes Fun Fuel says
I’ve never tried their coconut milk beverage. Is it much better than coconut milk?
Chelsea @ One Healthy Munchkin says
Yum I bet coconut milk in oats is so good! Is that carton basically the same type of coconut milk that you buy in cans to use in curries?
Kath says
No, it’s different. Thinner. Lighter.
Jessica @ How Sweet It Is says
That coconut milk sounds so good. I’d love to try some.
Vicky says
“sleep until 7:30”- seriously, it’s a Sunday- I couldn’t stop laughing at this, thinking at how happy I was to get up at 10:45 snuggled in my man’s arms.
Crazy Kath!
Vicky says
and for Kombucha… I bought a bottle once and forever regret the $3 I will never get back.
Veggielady4life says
Surgical/trauma unit should be interested. I always dreaded trauma call at the start of my M3 year, but I think it will be a much better experience from the nutrition end. Hope it goes well, and good luck with the rental!
Veggielady4life says
interesting 🙂
Anna @ Newlywed, Newly Veg says
Wow– you’ve got a big day on your hands!!! Good luck with everything!
I love your new bowl!! It was MADE for oats! 🙂
Liz, RD says
ICU/Trauma is scary but fascinating. It should be an interesting day!
Hannah says
I do love the buddha bowl, but the colour of your asheville bowl is exquisite! Chai granola… mmm…
Samantha Angela @ Bikini Birthday says
I’ve tried pure canned coconut milk in coffee and thought it was disgusting. How is that So Delicious stuff?
Kat says
Any chance of getting the Buddha coupon again sometime? They sold out so fast I didn’t get a chance to buy!
Kath says
They will be back! The reason they go out of stock so quickly is because they are handmade and we don’t want to overwhelm the artist. So we have to do small batches. But they’ll keep coming back and back so you’ll get one eventually!
CaSaundra says
I’ve been wanting to try the coconut milk–looks good!
Brittany says
My fingers are crossed that all goes well with the housing issues. Isaac and I are moving this summer too – only a couple blocks but still – the thought of packing keeps nagging me!!
Have a great day!
Lauren @ eater not a runner says
I’ve been dying to try that coconut milk but was nervous, does it have an aftertaste?? I might have to check it out!
Kath says
Not at all.
Sarena (The Non-Dairy Queen) says
I love the Coconut milk! It makes an incredible sorbet too! Glad you enjoyed your trip and that you got a cute bowl from it! Enjoy your day and good luck on all your waiting…that is always the hardest part!
Heather says
wow that is a big day, you have a lot going on, GL!
Mary @ Bites and Bliss says
Is that your new bowl you got on your vacation? Very cool! Good luck on all the news coming in!
Heather @ Health, Happiness, and Hope says
I just saw that coconut milk yesterday at Whole Foods. Guess this means I’ll have to pick it up next time! 🙂
Brittany @ A Healthy Slice of Life says
Good luck with the offer! I know first hand how stressful it is to try and sell a house in this market, but I have a feeling it will all work out for you 🙂
Happy Memorial Day!
Heather says
I don’t think I have ever seen that coconut milk – I will need to keep my eyes open for it (for my husband – I’m allergic to coconut).
Good luck on the counteroffer and hopefully you hear back from all of those places in Charlottesville!
Kalli@fitandfortysomething says
You two have so many new and exciting things on the horizon! Good luck with it all 🙂

I’ve never tried coconut milk because it’s always so expensive! If I do, I’ll try So Delicious. And have a great day – lots of exciting things in store for you!
christina cadden says
I keep wanting to try coconut milk. That looks good.
Michelle @ Give Me the Almond Butter says
Coconut milk in oatmeal is sooo good. It makes the oats ridiculously creamy 🙂 enjoy!
Kelly says
Holy cow! That’s a lot of major life changes you’re waiting on. I would be on pins and needles. Good luck! I hope everything turns out just as you hope it does!

I can’t believe how fast 2010 is going. Crazy!
Ashley says
Have you tried pacific brand hemp milk? Also, you MUST try Pacific’s Oat Milk. It literally tastes like liquid oats!! The nutrition is about the same as hemp milk. Also, Silk recently started making Almond Milk in a 1/2 gallon container that is insanely delicious, and soy free. It’s smooth and creamy, hands down the best AM I’ve had yet. Also [hehehe], So Delicious makes creamer that is pretty good and even comes in flavors! I used it for awhile but then switched back to organic half/half because really, nothing is quite the same 😉
Kath says
I have not! I will look for it 🙂
Noelle says
Totally rediscovered Great Harvest this week, thanks to your blog. Passed it by every day on my way to work, hadn’t been for a year since I moved/ got married. LowCarb Whole Wheat makes the best cinnamon french toast made w/ coconut milk and topped with warmed, smashed berries. Dakota is by far the best sandwich bread EVER. Now, why oh why do they not make the Flax Oat Bread out by me in NJ?!
Kath says
🙂
You have to tell them how badly you want it!
lainie says
Kath,
You have to stir the coconut “milk” for it too look all milky, or emulsify…I have been drinking it for awhile now and its a really great product: especially when you freeze it in ice cube trays and use it to make “icecream” in the vitamix! Try it; I promise you wont be disappointed!
Congrats on finishing your internship, or almost finishing it; I start mine in August.
Kath says
Oh cool!
Good luck wtih your internship!
Jenn (Jenn's Menu and Lifestyle Blog) says
I thought that you were saying 31 – 5 = 26 😀
Jenn
Kath says
Hahaha. Totally!!

A big day indeed, hope everything goes well for ya!
lynn (The Actors Diet) says
sounds like you’re waiting on a lot – no wonder you’re not sleeping! i have been having similar issues lately; i keep a pad by my bed so i can just write down what’s worrying me and then i’m not allowed to think about it again until morning!
Jackie (Peaces of Earth) says
That coconut milk is the BEST non-dairy milk by far. I love it!!! Good luck on your big day!
Heather says
Siggi’s Orange Ginger is one of the greatest creations in the world. I’m glad you enjoyed it!
Lauren says
Hey Kath- Check out that same brand’s coffee creamer. It will emulsify perfectly! They even have a hazelnut flavor! Yum!
