This was not my best breakfast ever – lots of logistics went awry! The previously frozen pumpkin didn’t really stir in well enough to the ‘cake batter and I made quite a mess in the kitchen trying to think of something celebratory to do for breakfast!! I feel so disorganized today!

My Pumpkin Oh cake has gotten too dry to be delicious, but the icing was still good! So I plopped the icing into a piping bag and attempted to re-purpose it onto my pancakes. Unfortunately it was ice cold and too low in volume to really get a good pipe. But it still worked!

Despite the bumps in the road, these pancakes TASTED AMAZING!! Topped with tons of Biscoff spread (is there a better flavor on the earth?), pan-seared bananas, and cream cheese frosting, they were plump and doughy and oh-so-good with an episode of House Hunters.

I’m sad that Matt is really busy today and couldn’t stay home with me, but we’re meeting up in a bit for a mid-morning hike and lunch date and continuing the festivities with a fun dinner out tonight.

    Happy happy birthday! Last night when I was thinking about what I needed to do today I was thinking that my library books are due and that it was your birthday. The pancakes look delicious, I was just thinking this morning as I was making my pumpkin oats that Pumpkin Oh oatmeal would be wonderful. Sorry the breakfast didn’t quite go as well as desired, but it still looks delicious. Have a fun and relaxing birthday, you deserve it!

    It’s cute that you made yourself a birthday breakfast. On my 21st I made myself some special cake batter overnight oats with lots of sprinkles. 🙂

    Happy Birthday, Kath! I had my 2-9 (gulp) earlier this year and while it was great, your breakfast looks much tastier than my b-day start to the day was! By the way, have you ever tried fastachi nut butters? I know what a fan you are and saw your barney butter sale on opensky today, so I had to ask because I just discovered them this summer at my local farmers market. They’re based up here in MA but ship and their pecan and pistachio butters are my all-time favorite nut butters. Insanely delicious and hand-roasted in small batches! I’m eating some pistachio butter with an apple right now. mmmm.

    Fun birth story! What time did your parents arrive at the hospital? It looks like they had a little time to spare before you made your grand entrance into the world. My daughter may have been born in the car if that had happened to us! We were only at the hospital about 1 1/2 hours before she was born. The police officer was certainly in the right place at the right time, we are certainly lucky to have cell phones for emergencies. Do you have the rock in a very special place?

      We got there around four or so I think, so about five hours. But the contractions coming so close was what made the policeman nervous. We were pretty calm.

      Glad you were at the hospital! Wow.

      The rock is in a garden near the house. Birthday Rock is ready to move to Charlottesvile now though.

        Thanks for the response Kath’s mom. My daughter turns 6 on November 3. I was only dilated 1/2 cm when I got there and an hour later I was pushing without the doctor being there yet. I was apologizing about a year later when my son was born on November 15 because we were at the hospital twice as long (between 3 and 4 hours) before he was born. The rock should make the move soon and be put in a very prominent place. Kath hinted there was a project involving dirt. Maybe the rock could be incorporated? BTW, you deserve to celebrate today too, on the 29th anniversary of Kath’s “birth” day.

            My good friend who was my doula during both deliveries says that I was meant to have babies. I had two 12 months and 12 days apart and they will be 5 and 6 in November so I think we are done. I was lucky to have very easy pregnancies that allowed me to be very active and exercise up until the day I gave birth and I felt great after. We want them to grow up and be independent, yet it makes me sad that they aren’t little any longer. My kids are readers and I was remembering that you are an author, can you remind me of the titles you have written? Thanks!

    Happy Birthday Kath! I really enjoy reading your blog and discovering all kinds of wonderful recipes that are healthy. I discovered Kodiak Cakes and Biscoff at my local store, and let’s just say I’ve never eaten so many pancakes in my life..LOL! My 10 year old son tried the Biscoff and said, “it’s like heaven in a jar”. Thanks again for your hard work! Enjoy your special day!

          It should be a holiday celebrated worldwide so no one has to go to work! With a whole month of festivities leading up to it including oatmeal bowls with a spoonful of Biscoff spread for all!

    Happy 29th Birthday Kath! I’ve been reading for a while now and thought it might be a nice time to pluck up the courage to say hi, so Hi! 🙂 And I wanted to say how happy I am to learn you can get Biscoff in the States! It’s been my favourite way to sweeten my porridge since being introduced to it (although I know it as “Speculoos”) by my (Dutch) boyfriend. I’ve never seen it in the UK. He’s moving out to Baltimore tomorrow + I’m hoping to join him in the spring (successful PhD thesis writing + job search permitting :S), so it’s nice to know I’ll be able to get my favourite condiment out there 😀

    I’m guessing the 26 love is just because it is your birthday, but I’m curious, are you sad to be turning 29 or excited? I’m always curious because there is so much of society that makes it seem like as women it’s tragic to lose our youth, yet I find I am so much more confident and secure in my skin at 28 than I was at 21 or 18 or even 26. I’m actually really looking forward to being 29.

      Other than the fact that I think all ages ending in 9 are trashy 🙂 (19 is the worst!)

      I’m excited. I like being a mature adult. Every year of my life seems to get better (knock on wood!) as we become more established in our life’s path. So happy we were able to open a business and buy a house this year! Something we couldnt’ have done 10 years ago. And with a last name like Younger, I’ll always feel young!
