Bah – I have carbon on the brain. I did well on the first quiz from Friday, but not as well on the homework (yes, it’s turned in a graded – ugh.) I spent this morning doing this Friday’s homework and studying for the quiz. Just the tip of today’s iceberg because I have lab this afternoon 🙁
Breakfast held me over beautifully! It was 12:30 before I started thinking about lunch (well, I thought about it before then, but the first time I decided it was time to really eat!).
Yesterday I packed up a number of goodies:
Salmon Salad .
1/2 a can of salmon (which I by at Costco), 1/3 a green bell pepper , minced, some leftover grilled eggplant and pepper (only about 1/3 a cup), some chopped raw broccoli, a tsp light mayo , a tbsp greek yogurt, capers , and the ever-lasting secret ingredient: red curry powder . I missed my usual carrots 🙁
Plus grapes –
Crackers –
And a TJ’s yogurt (new one to try) with some homemade granola . I was not a fan of this yogurt. It was all slimy and at second glance, pretty high in sugar (22g). I need to seek out Chobani again!

Kath…how do you stay so organized? You have such a heavy load this semester and you don’t even seem stressed. What are your secrets?
I have a binder for each class, I have a planner and lots of to-do lists but I still feel overwhelmed. I’m constantly writing things down b/c I’m scared I’m going to forget something. It’s only the 3rd week of school and I already feel really stressed.
Any advice from you or the readers would be appreciated. Thank you!

2 things I could not live without: Google Calendar (to keep track of all my assignments, personal life engagements, reminders of things to do one a certain day, meal plans, etc. AND TODOist.com, which is my life-saving, color-coded to-do list. I put when things are due in my calendar and then each week I add things to my to-do list to do that week. I know how much work I have and a reasonable amount of time to do it. If I didn’t know how much I had coming up THIS week, I wouldn’t have known that I needed to work all day Friday and Sunday to get it all done. So I guess the number one piece of advice is plan ahead. I have never pulled an all-nighter in my life because I have never waited that long to do something.
Oh yeah, and I swear by online tools because I change my lists at least once a day, sometimes like 10x a day and my calendar is constantly changing and I can’t handing having to cross things out in a planner or paper calendar! I print out my weekly calendar each week to carry with me in my binder. I also have one binder for ALL of my classes so I can work on anything at anytime because I’ll never be out without one of my subject’s stuff.

Your lunch looks fantastic! I agree with the organization. You always have it so “together,” I am impressed. And your pictures always look SO GOOD! I can’t get my pics to look so crisp and clean like that. Maybe it’s the camera? Anyway, great job…keep it up!

I agree-I could not keep my life organized without my google tools. The color coded calendar lets me distinguish between work appts, school stuff, personal appts, etc. I enter into my calendar when items (for school) are due and even what days I should be working on them. It helps a lot. Google is my lifesaver!

And so is Costco! I’ll have to look for canned salmon next time I’m there. I just discovered that my Costco sells big huge tubs of Fage 0% (the 4 cup size) for $7. I keep some in my fridge and I put some in another container that I leave at work – it’s perfect.

Hey Kath, do you get the canned salmon with the skin still on? That’s all I can find and it kinda weirds me out, maybe I just need to get over it and get it anyway…fish skin seems icky to me.

I’m definitely going to try that salmon salad…since I’m pregnant, I try to stay away from tuna. But this is a great (and healthy) alternative!

I need to give salmon another try, it looks so good!
My daughter got a chocolate yogurt at Trader Joe’s – only 120 calories (not sure what the grams of sugar are) but she said it tasted like chocolate pudding! And .99 each vs. the 1.99 Fage with honey that she likes (wish that wasn’t so expensive!)

Within the last week, someone had a recipe for a cookie on their blog that looked really good. I forgot to print it and now I can’t remember which blog it was! It was some sort of cookie with coconut in it, and I think the recipe only made a few cookies, like 10 or so. Anyone else see this? Oh, and for some reason I remember that they had used a silicone baking mat.

I miss trader joes so much! they don’t exist here in austin.. YET… I here talk that they will open one within the next couple of years though… thank goodness!

Mine doesn’t have skin or bones. Well, there may be some skin coloration, but it’s very, very minimal. I think on the label it usually says “no skin” if it doesn’t have it, so maybe you could try looking at a few brands?

Hi Kath, this recipe sound like one of a good idea. Not to mention one if the quickest and easier lunch to pack. However, may i ask if it would be ok to sub the yogurt for cottage cheese. And whether if the CC would spoil/ turn bad if left outside for afew hours- (when ready to eat as there arent any fridge to store my salad.)
