Howdy friends!! I am sitting in the Tea Bazaar sipping minty tea that is still warm 2 hours after finishing lunch. I have a handful of meals to recap over the past 2 days!
Starting with Monday breakfast – pancakes! Mazen, like his mama, LOVES breakfast. But I think pancakes are his all-time favorite.
Pancake taco = one that gets stuck mid-flip : ) We love the hearty Great Harvest pancake mix. It’s freshly ground whole grain and you just add egg + water (and maybe banana or pumpkin!) and cook.
Mazen also loves painting, which we did for a while on Monday. We made our friend a birthday card and another friend a get well card. {Note the photo of Sylvia watching and the piggies on the sidelines!}
We have so many leftovers in our fridge this week that I’m practicing FIFO – first in, first out. For lunch I used up a cup of quinoa, a black bean burger, some chicken, leftover sugar snaps and a drizzle of BBQ sauce.
And THIS coconut sparkling water! In the best way possible, it reminds me of sunscreen. I know that sounds gross, but I am addicted!
Monday dinner was cornmeal-baked flounder, broccoli slaw salad and chips. Chips because the tortillas for our fish tacos got eaten by mistake over the weekend! Plus, more coconut! The meal is loosely based on a Cook Smarts one – and the sauce on top is a greek yogurt-sriracha blend lightened up from the recommended mayo-based version.
{Enter lots of Bachelor watching here. It was a good episode and I’m glad with the results! Can’t say more or I’ll spoil it for my DVR friends : ) }
For our Bachelor viewing party I made not one but two of Kylie’s Single Serving Cookies – both cake batter flavor! The chocolate chip ones were baked and gooey but the no bake balls were our favorite – so battery! I also just discovered Kylie’s Cookie Dough e-book which I bought late last night. Can’t wait to try it! Her creations are genius. Both of these cookies are made with real food and are CHICKPEA based!
Tuesday morning is usually a quick breakfast so we can get to preschool on time. M had leftover pancakes and I made a yogurt bowl with Snowville yogurt, mango and cinnamon chip bread toast croutons. Walnut butter on top! Still loving the texture.
After dropping M off at school, I came home and actually made dinner! We had chilled chicken noodle salad on the menu (a version of Cook Smarts) and I morphed it into something a little different.
I sauteed broccoli slaw, jalapeno and red pepper with some garlic and leftover rotisserie chicken. Plus 6 ounces of soba noodles. Plus a sunflower butter sauce made in a jar with a quarter cup left. #newusesforoldthings! Other than sunflower butter, it has soy sauce, rice vinegar, honey, sriracha, and lime.
Dinner is ready and I’m pumped that the dishes are done!
And then I ran 5 miles. It’s still so cold for running (I have seen the photos of Boston – I feel for you!) and thus I was slow, but I was proud of my weekday accomplishment. It was not easy!
For lunch I met Amanda at Twisted Branch Tea Bazaar! She’s an RD who lives nearby, and we had a great time chatting.
The minty pot of tea I got was soooo good and is still going strong!
And the big salad with candied walnuts, feta, pear, smoked salmon, tomatoes, cuc and pita chips was SO GOOD! Tasted so healthy too. This is my new favorite lunch spot!
I have a bunch of computer work to catch up on (it’s babysitter day), and I’m going to work through some of the Blog School modules again this afternoon. {FYI, a new session of Blog School just opened and registration goes until Feb 15, so you can sign up now if you’re interested in growing, building or rejuvenating your blog!}

The BEST LaCroix flavor is apple-berry, which I believe is only available at Target (at least, that’s the only place I can find it). It’s amazing. trust me.

I like that sunbutter but I hate that they add sugar. It’s actually hard to find a sunbutter without sugar. We just made something similar last night using peanut butter 🙂

I am ADDICTED to LaCriox. At least it’s not “real” soda so I feel much less guilt about it. My current flavor is grapefruit. Citrus has a way of making winter feel kissed by the summer. I love it.

I was so excited to get sunbutter on sale the other day for under five dollars! I don’t always buy it since it usually runs around seven dollars, but I love it so I get it when I can. Those cookies look delish!
