Two of my favorite ways to eat zucchini are cheezy zucchini chips (I have a fantastic recipe for them by using the dehydrator – it makes for the perfect summertime snack!), and chocolate zucchini loaf. Because… chocolate. 😀

Those recipes look fab. Back when zucchini wasn’t as popular, like when I was a kid, my family teased that my grandfather, Lou Kiehne (pronounced “key-knee,” was named for “zucchini”. Isn’t really that funny but we thought at the time that it was at least sort of clever.
