YUM! I love squash but I’m not sure I realized you could eat the skin of a butternut…is that weird? Mmm, I have a butternut ready to go though so I’m going to have to figure out which to make first!

I have been a HUGE winter squash lover for the past five years and have tried so many varieties (thank you farmers market:)). My least favorite, ironically, is spaghetti squash, but my all time favorites are Kabocha (buttercup too) and Red Kuri. Must tries! In fact, last year at college, my roommates made fun of me when I had 6 different types of whole squash in the pantry (one of those was a 10 pounder but it wasn’t very good) Ha!

Definitely your spaghetti squash bolognese! It’s so simple and a perfect weeknight meal. But everything else is so, so tempting… I think I could eat squash 3 meals/day!
