Remember the other week when I said I wasn’t quite ready for pumpkin-flavored everything? Boy, a few days sure can change things! It only made sense for the October edition of 12 Months of Real Food to be the one and only pumpkin!!
Pumpkin is truly a nutrition powerhouse. It’s a fantastic source of beta carotene and fiber. Beta carotene is a precursor to Vitamin A, which is related to eye, skin, and immune health. Pumpkin is so versatile. It can be added to many recipes to boost nutrition without a lot of calories. Pumpkin can also be used as a substitution for fat in recipes. Personally, I love hiding it in unexpected recipes such as chili or meatloaf to up the fiber and nutrition.
