Gotta get to bed!! I missed my workout today and am determined to squeeze in a quickie in the morning!
This afternoon was nuts , as expected. I put my exams and assignments into Google calendar and then printed them out for my binder to take to class. I LOVE this method because I can see everything online and make all kinds of changes (because who’s calendar doesn’t change every other day, right?) and re-print it when I need to.
My Sports Nutr. assignment took longer than I thought it would (review a journal article on carbohydrates + exercise) and I looked up and it was 5:00! I had 10 minutes to get in my car if I wanted any time to eat dinner.
60 Second Dinner
Thank goodness for organization !! The prepared lentils came in handy, as did the stir-fry mix prepackaged veggies. Instant dinner!
Warm Lentil Salad
- 1 cup cooked lentils
- 2 cups stir-fry veggies (carrots, snow peas, broccoli)
- 1/4 cup greek yogurt
- 1 tsp dijon mustard
- Splash or 2 of hot sauce to taste, such as Sriratcha
- 2 tbsp grated Parmesan cheese
Steam the veggies in a microwave bowl with a little water on the bottom for 2-3 minutes. Drain. Add lentils. Heat for another minute or so until hot. Prepare dressing by combining yogurt, mustard, hot sauce. Pour over hot salad. Top with parmesan.
It was actually really good!
On the side I packed some Kashi crackers and pickled ginger to cleanse my palate before class!

Evening snack: Clif Nectar Bar (Dark Chocolate + Walnut) while I took a 60 second rest at a red light…..ahhhhhhhhhhh

Yay, you made it through the first day! And I’m sure it’ll only get easier for you from here.
Oh, and of course all the food today looked great, which makes the day go better 😉 I love the crinkled carrots!

WOW Kath, what a day!! But you made it:) I’m mentally preparing myself for coming September since I’d be on the go all day long. I’m glad your morning oatmeal turned out great! I wonder how different it tasted compared to “banana muesli”?

So I have really got thinking and I am interested in everyone’s thoughts on how they think and feel about food compared to their moms. Are you more restrictive, paranoid, obsessed, and conscious or are you more relaxed, passionate, informed and adventurous. What do you think?!

at least your going to be done soon! you were BUISY today. i feel like a spoiled brat actually having TIME to have my meals. but i gues your luckier in MY situation because you dont have time to binge!! i just wanted to tell you i got a new blog (and deleted my old ones, because i felt like a COMPLETE loser compared to your AMAZING blog) and if you have time could you go see if i could do anything to improve it!? i only have like 1 or 2 readers and feel completely pathetic. also im in new york (visiting from texas) and i went to trader joes and found AMAZING things (there is someting i found that you might like on occasion, their likes potato chips but their not fried OR baked their popped!) but im taking some goodies back to texas and i was wondering if u had a list for me so i dont miss out on goodies that my favorite blogger uses! 🙂

I just had that same flavor of Nectar bar the other day–it came in handy when I got hungry at a rehearsal dinner!

I love being all organized like that too, my friends think I’m a nutjob sometimes but it really does make your life 50x easier!
& I thought I was the only one that eats ginger as by itself!

WOW kath – you are rocking the schedule! i will be thinking of you the next four weeks — that is an INSANE amount of time to be working, not to mention fitting homework in. and that is coming from someone who is regularly working 80 hour weeks! if anyone can do it though — it’s you!

That’s fantastic that you are so on top of it when it comes to schedules/organization. You are a girl after my own heart! I use google calendar too – I couldn’t live without it. But i didn’t know you can print out the calendar!

Good question about moms. I think I eat more like my dad! We both have tendency to eat until we feel sick at buffets. We also both love vegetables (but I have not always loved them!) But I definitely have my mom’s love of cake and sweets (which onset later in my life, surprisingly. We went to Paris when I was in 10th grade and I didn’t care about sweets at all but now….put me at a dessert buffet…). My mom has a lot more cravings than I do and she also eats less volume too. But we can both compulsively down a bread basket in restaurants. I do think you copy your parents’ eating behaviors to an extent.
