I’m all mobile these days – my bike pedals carry me from one meeting to the next. Blogging is probably going to be a bit sporadic for the next few weeks. But we just got wifi at the bakery! Luckily Matt brought his computer with him, so I’m hogging it in Cville Coffee.
I went to Body Pump this morning. I missed it! It was good to be back. The class was extra hard – my muscles seemed to give out sooner than normal! After class I showered at the gym (I had packed a bag and a lunch) and biked on down to the bakery.
Countertop fronts!!
Love the metal!!
Oven is ALMOST done
And this disgusting insulation is everywhere…
We have a lot of cleaning to do!
Matt is coated in it and has grease behind his ears..
After an interview, we had a picnic lunch that I threw together this morning. There was nowhere to sit but the grass!
We had tempeh + jam + romaine sandwiches on Dakota
mmmm! Tempeh is better than any deli meat in the world! LOVE the texture!
On the side we had apples + carrots with Flying Squirrel Sneaky Cinnamon
I polished off the jar for dessert!
I have more meetings and interviews and am taking a quick break at Cville Coffee with a decaf iced coffee and a Honeybunch. MAN is this coffee good!! I might have to jump on the decaf bandwagon. The main reason I haven’t is because Matt won’t drink it (he likes caffeine) and I don’t want to have to make two separate pots everyday. That’s a bigger pain than just drinking decaf tea. But this guy is GOOD!
The Honey Bunch is a secret recipe and is basically an amazing honey oat coconut cookie!! Yum.
I’m much less stressed when I’m out and about being busy than sitting at my computer being busy, so today has been good. Excited for the weekend – although we’ll be over here at the bakery a lot! We’ve got 2 IKEA orders come sometime tomorrow.
Happy Friday!
Annette @ EnjoyYourHealthyLife says
Happy Friday is RIGHT!! Love wifi 🙂 Yes!! Your customers will love the Wifi too (p.s.).
Glad BodyPUMP was rockin”–I love me a good weights workout!
jamie hayworth-chin @ make-it-healthy.blogspot.com says
1) Happy Friday
2) Kinda jealous that you and your hubby get to work together
3) Any suggestions on yummy ways to prepare Tempeh…or you just eat it as is?
4) Used the Shaklee degreaser formula for the first time this morning…AMAZING! It got this crusty grease spot off in about 2 seconds that I’ve been trying to work on for weeks!
KathEats says
3) Sautee, sandwich, crumbled any way
4) AWESOME!!!
Parita @ myinnershakti says
I was going to ask the same question. Do you marinate it first?!
Claire @ Live and Love to Eat says
Thanks for sharing the updates… its exciting to watch it all come together!
Holly @ The Runny Egg says
That oven is gigantic!!! Wow. I love how the front counter looks — the orange and the metal look great!
Jenny @ Fitness Health and Food says
It’s so true that getting out and about can cut the stress and also help you focus. i really should be better about getting out from my apartment to do work. The only problem is finding a coffee shop with an open table!
That Honey bunch looks so yummy and the bakery is looking awesome! 🙂 Good luck with everything! 🙂
AShley says
Whoa. That cookie/muffin looking thing sounds awesome!! I’m currently OBsessed with honey! Also with tempeh. That nut butter sounds devine as well. Awesome eats. 🙂 The GH is looking GREAT and it looks HUGE!! Much bigger than any GH I’ve ever been in. So exciting!
lee says
I like the metal fronts of the countertops! Does Great Harvest provide guidelines/range of choices for the decorating, or do you and Matt get to choose from scratch?
KathEats says
We’ve done everything ourselves, although we got advice on paint colors because I tend to like cool colors, which are not recommended
Jane says
The bakery look so big!! The GH that I go to does not have much room, it feels kinda cramped. I don’t mind, I still get my samples and my lovely bread and Naturally Nutty! Good luck with everything!!
Meg says
Can I do some tanning in your oven?! 😉
Kidding kidding! Loving seeing all the progression kath!!! 🙂 Yay!!
Allie (Live Laugh Eat) says
Ahh it’s even dustier than you described/I imagined! Good thing Matt has a co-owner who loves to clean 🙂
KathEats says
Ahhh that’s not good to hear!! Haha
Becky says
I love the thought that when cleaning time does come the bakery will be toxin free because of all your awesome Get Clean products!
Katie says
I LOVE the metal fronts! You’re going to have the coolest looking bakery every! 🙂
And tempeh + jam sandwiches are my new favorite! YUM!!
Johanna B says
The honeybunch is to die for!! I want one stat.
Angela (Oh She Glows) says
That oven is huge! I would feel so overwhelmed building something like that. The dust and cleaning is never fun…my least favourite thing about doing renos.
The metal front to the counter is very sleek and modern…nice choice!
Lesley Lifting Life says
It’s coming along great, I love the metal look!!
Val @ Balancing Val says
I marinated some tempeh yesterday in tamari, garlic and apple juice. Sounds weird but turned out great!! 🙂
Do you plan to change your blogging schedule when you guys are working?
KathEats says
The next month will be unpredictable, but I hope to settle into an afternoon work schedule that shouldn’t affect my blogging at all
Katie says
The counters look great!
Do you eat tempeh just out of the package or cook it? I just bought some but don’t like it that much..for how much I love tofu I was expecting to really like it. Maybe I haven’t made it the right way?
KathEats says
Just outta the package. It’s a little earthy, but I love the texture
Sarena (The Non-Dairy Queen) says
I’m glad you got to enjoy some lunch and a break with Matt. The bakery looks great!

I am so glad to hear your glowing decaf iced coffee review! I really want to start drinking it biut didnt know if I would like it or not.
Angela @ Eat Spin Run Repeat says
I love tempeh, but I would have never though that it would taste good with jam!! You inspire me to try many new flavour combos Kath! Still not too keen on the cheese and jam, but I’m willing to try almost anything! Looks like you two are hard at work!
KathEats says
Everything tastes good with jam!
JenATX says
haha that comment reminds me of the episode of Friends where Joey eats all the jam Monica has made
Abby says
I love picnic lunches! 🙂 I need to have them more often.

Ellie @ The Mommyist says
Matt may be filthy but he sure does look happy! He has the look of someone whose dream is coming true. I love it!
Simply Life says
you should do half-caf!
Alison (Fueling for Fitness) says
Pardon my ignorance, but I’m from Canada and we don’t have any Great Harvest bakeries. I’m curious – will your bakery also be a restaurant style where people can come, stay and eat? Or just a place to pick up baked goods?
It’s really fun watching the progress – good luck with everything this weekend! 🙂
KathEats says
We’ll have 6 bistro tables for eating (because we’ll have sandwiches, possibly salads and muffins for breakfast), but it’s mostly a place to take out loaves of bread
Justeen @ Blissful Baking says
I haven’t had tempeh before, but you make it look so good!
kaila @ healthy helper! says
I LOVE the metal counter fronts! My aunt has a coffee shop that has a similar look to it! That oven is INTENSE….so big! It makes me want to bake dozens of loaves of bread! YUM!
And aren’t picnics the best??!!
Namaste Gurl says
You look so tan and sun- kissed- i’m beyond jealous!
What a lovely picnic you packed for the two of you– i’m sure Matt was STOKED 🙂
Mom says
Love the counter fronts. The bears will have fun following the squiggles with their paws.
KathEats says
You should make sure their paws are clean of sticky first!
Mom says
That’s hard to do. They constantly have their paws in the local honey pot.
faith says
Yep, coffee’s good. 😉
Sam says
HA. You can actually google & get the honey bunch recipes. One of my friends & I actually did that a while back so we could make them at home. They are really tasty now & I am looking forward to getting some at the market in the morning.
Jane says
Yum, thanks for the tip!
KathEats says
Oh really!? It was delicious!!
KathEats says
I can’t seem to find it – do you have it bookmarked?
Sam says
This is the recipe that we used the last time. They are not exactly the same but really close & I kind of like the addition of flax seed so I could pretend they were somewhat healthy.

We can hardly wait for Great Harvest to open! We have been spoiled as the one in Herndon, VA was just a short run from our house and we have missed it since moving here a few years ago. Our Cavalier, Gracie, is hoping you will also have some yummy dog treats:)
KathEats says
Yay! We hopefully will do some treats for Gracie soon!
Amy says
I can’t wait for you guys to open!
Question – did you say whether that peanut butter’s available anywhere? It looks SO GOOD.
KathEats says
Yeah, on their website they are – http://www.flyingsquirrelpeanutbutter.com/
Kat @ Cupcake Kat says
It looks like you had a perfectly romantic picnic lunch (even if Matt was a bit greasy)
Iced coffee and a honey bunch sounds like an awesome afternoon snack to me!
Chelsea says
That sandwich looks delicious!
Maybe you could just buy one of those mini coffee pots to use just for the decaf coffee? Or just make a really big batch of the decaf and store it in the fridge. 😀
Chelsea @ One Healthy Munchkin says
That’s so nice that you guys got to take a break for a picnic lunch! There’s something so calming about eating while sitting out on the lawn!
