Karen has been making this casserole for special occasions for years - it's a family favorite. It's also very sweet and decadent, but unlike any other sweet potato dish I've had.

Ingredients
Base
1/2stick buttersoftened
2cupssweet potatoespeel, boil, and mash potatoes
1/4cupmilk
2large eggs
1teaspoonvanilla
1cupsugar
Topping
1 8-ouncecan crushed pineappleundrained
1/4cupall-purpose flour
1/2cupsugar
1egg
1stick buttermelted
Instructions
Preheat oven to 350*
Mix base ingredients until smooth and pour into 8 x 11 casserole dish.
Mix topping ingredients and pour on top of sweet potato mixture.
