Super Salmon Salad
This salad is perfect for lunches or dinners on the go. Make a big bowl on the weekend and you've got dinner and lunch in a snap! Sub out wheatberries for rice or any other grain you have on hand, and go crazy with the veggie mixins!

Ingredients

dry wheatberries
simmered until tender

can wild Alaskan salmon
1
bell pepper
diced

tbsp
capers

cups
baby spinach
chopped

chopped pecans
Juice of 1 lemon

dijon mustard

tsp
olive oil

salt
Instructions
Toss in dressing.
Mix all together!
Enjoy immediately or chill until ready.
