Strawberry Buckwheat Breakfast Pie

I like strawberries just plain, but my favorite way to eat them is when they are cooked. In a pie or cobbler..or buckwheat bake!
NOTE: I used a whole egg in this recipe, but microwave versions are best with flax eggs!! The egg took much longer to cook and created too much volume.

Ingredients

  • 1/4 cup buckwheat flour [ground buckwheat groats in a blender]
  • 1 tbsp buckwheat groats
  • 1 tbsp chia seeds
  • 1/4 tsp baking powder
  • 1 tsp vanilla
  • Flax egg [1 tbsp ground flax set in 2.5 tbsp warm water for 5 minutes]
  • Half banana mashed
  • 1/4 cup milk
  • Sprinkle cinnamon
  • Pinch salt
  • 1/3 cup strawberries

Instructions

  • Mix dry.
  • Add wet.
  • Stir to mix.
  • Add strawberries.
  • Pour into 10 oz / 1.25 cup ramekin
  • Microwave for 1 minute 35-45 seconds
